Recipes ASPARAGUS AND KLAPPERTJIE QUICHE CREAMY GREEN VEGETABLE SOUP ICE-COLD WATERMELON SPRITZERS ASPARAGUS AND KLAPPERTJIE QUICHE Serves: 6 Preparation: 40 minutes Baking time: 35-40 minutes SHORTCRUST PASTRY 280 g cake flour 2 ml salt 125 g cold butter, cubed 125 ml ice water FILLING 200 g fresh asparagus 125 ml cream 2 eggs, whisked 45 ml parmesan cheese 125 ml klappertjies, finely chopped 1 For the pastry: Preheat the oven to 200°C. Sift together the flour and salt. Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs. Add the water and mix until a firm dough forms. Cover with plastic wrap and cool for 30 minutes. 2 Roll the dough out on a floured surface. Spray a square, loose-base cake pan (22 x 22 cm) with cooking spray and line the pastry in the pan. Blind bake for 10 minutes. Remove the baking paper and beans and bake for another 5 minutes. Lower the oven temperature to 180°C. 3 For the filling: Cook or steam the asparagus until al dente. Allow to cool and arrange in the tart crust. Sprinkle the klappertjies on top. 4 Whisk together the cream and eggs and season with salt, black pepper and parmesan. Pour into the crust and bake for 35-40 minutes, until set. Garnish with extra klappertjie flowers and serve. CREAMY GREEN VEGETABLE SOUP Serves: 4 as starter Preparation: 15 minutes Cooking time: 20 minutes 200 g young asparagus, cut into 3 cm pieces 200 g baby marrows, thinly sliced 750 ml chicken stock pinch of nutmeg 1 can butter beans, drained 250 ml cream 50 g watercress, washed and finely chopped Deep fried zucchini flowers, to serve (recipe on page 55) 1 Fry the vegetables in 5 ml of oil until glossy. Add the stock and beans, season with salt, pepper and a pinch of nutmeg. Simmer for 10 minutes. 2 Pour half of the soup into a blender and blend. Pour the blended soup back into the pot, stir in the cream and watercress and heat until just warm. Serve with deep-fried zucchini flowers. ICE-COLD WATERMELON SPRITZERS Makes 1,5 litres Preparation: 25 minutes, plus freezing time 1 bottle (750 ml) dry rosé 750 g watermelon flesh, cubed and pits removed 250 g strawberries, washed and halved 60 ml gin or vodka (optional) 30 ml lime juice 60 ml rose syrup handful of fragrant rose petals from the garden (red or pink) 1 Carefully pour the rosé into ice trays and freeze. 2 Add the watermelon and strawberries to a bag and freeze. Keep extra slices or balls of watermelon in the fridge for garnishing. 3 Add the rosé ice blocks and the frozen watermelon and strawberries to a juicer or blender that can crush ice. Pour in the gin or vodka (if using), lime juice and rose syrup. Blend until smooth. 4 Pour the spritzer into glasses and garnish with the watermelon pieces or balls and rose petals. > 51 SPRING 2022 | AA Traveller
