JAMES PETTIT 

Now I do understand that the wine world is vast with hundreds 

of regions and even more grape varieties and the specific 

vineyards and winemakers to boot this can feel quite daunting. 

When you start to consider that there are so many processes that 

come into play when trying to understand the style of the wine 

then wow, where do you start? 

I want and need a thriving on-trade and want to help you get 

the correct wine offering in place. We cannot all have a wine list 

that offers hundreds of different bins, but we can offer a list that 

covers the wines in vogue and then bolstered with an offering 

that is bespoke to you and that delivers.

day”. It is with this insight that I take to heart when I think of my predecessors back in 

1737 who wanted to bring quality wines & spirits into the region. As with all things with

and feel pure frustration when I head out for dinner and see 

nothing but generic or even worse a wine offering that has 

not been thought through and where the quality is dismal.

the thought process and effort that goes into the food 

offering only to be let down on the drinks side. It can really 

niggle you, so with today’s consumer living in the digital 

world and talking about their experiences... 

This new era within which we now operate with the 

standard wine costs having jumped post covid and then 

compounded by the effects of global warming, think 

droughts, storms, floods etc and then the effect on 

the new taxation we now have to live with. Add to 

this the new ways consumers are imbibing. Drinking 

less, looking for real value but still willing to spend. 

So, our new offering needs to think deeply about 

what wines we run with, where they are positioned 

in our list as this will heavily impact profit, 

understanding how the wine categories are changing 

in both the off and on-trade.

I've been a wine enthusiast since my first sip on family vacations in Europe, and the 

magic of fermented grapes has always captivated me. It's a sensory time machine, 

transporting me back to cherished moments with friends and family. 

My professional journey in the world of wine began in 2000 at a wine call centre, 

and now, as a wine consultant, I assist businesses in developing commercial lists to 

delight their customers. What I love about the on-trade is the freedom from a desk, 

allowing me to engage with customers, and, of course, I have a scarf for every 

occasion! Salud!

STEVE CHIPPER 

MIGUEL FERNANDEZ 

My love for wine traces back to childhood, spent on family holidays in Galicia, 

Spain. Fond memories involve helping my grandparents tend to the vines in 

anticipation of the harvest. The simple yet magical process of making wine 

brought the entire family together around the dinner table, with wine always taking 

centre stage. That experience hooked me on wine for life. 

After a stint in the design world, I discovered my true calling in the wine industry. 

I spent 15 years at Majestic, working in both retail and the On-Trade Commercial 

teams before joining James Pettit. I find immense joy in discovering something 

special, curating the perfect wine selection for you and your customers. 

While it's challenging to pinpoint one favourite wine, there's something unbeatable 

about enjoying a high-quality Albarino in the sunshine, paired with a fresh seafood 

platter...

Favourite region: Rias Baixas, Galicia 

Reflecting on my 30 years in the wine industry, it feels surreal to consider the wealth 

of knowledge gained since those early days. The continuous learning journey has 

only deepened my love and passion for everything related to the on-trade. The travel 

opportunities afforded by the wine trade have taken me to numerous producers and 

regions worldwide. When not exploring vineyards, I cherish building relationships with 

customers, ensuring they have the perfect wine range. 

The satisfaction lies in knowing that each day, I work with customers who share a passion 

for wine, putting my years of experience to great use. While it's always challenging to 

pinpoint a favourite wine due to the abundance of choices, at the moment, I'm indulging 

in Gouguenheim Reserve Malbec in front of a cozy fire. Delicious!

It often appears contradictory when our wine selection primarily features the least expensive options by 

the glass. The introductory wines, despite being sourced at the lowest possible cost, yield minimal margins. 

Perhaps a more strategic choice would be to position these wines as a bottle to share rather than a glass 

option. Read on to uncover the benefits of building (or re-thinking) your 'by the glass' programme. 

An effectively curated selection of mid to high-end wines available by the glass can provide a distinctive experience, simultaneously 

boosting revenue and reducing wastage. This strategy not only aims to enhance margins and ensure a positive customer experience, 

but also enables a broader exploration of your entire wine list. 

This approach presents guests with the chance to indulge in luxurious pours they might not typically have access to, fostering an 

exploration of new brands and wine regions. It's an opportunity to open their eyes to a world of high-quality offerings and elevate 

their overall wine experience. 

Careful consideration of pricing is crucial. To address potential price shock 

among customers, especially as we adapt to the evolving costs of wines, it's 

essential to think strategically about the glass sizes we highlight. 

When patrons encounter the label "250ml", they often perceive it 

simply as a glass of wine. However, it's important to emphasize that 

this measure represents a third of the bottle. 

175ml can read as an approachable price point 

It's also key to maintain the commercial backbone of your business 

by offering familiar options by the glass. However, I am proposing 

that you run a programme that showcases unique and diverse wines, 

spanning various varieties and styles from different global regions. 

This application will keep the wine selection dynamic and engaging, 

potentially through features like a "Wine of the Week" or "Wine of 

the Month." 

James Pettit offers you the flexibility to 

purchase by the bottle without committing 

to a case allowing you to explore without 

hesitation, creating an enticing opportunity to 

try new and exciting selections at minimal risk. 

There's often little need to actively promote well-known varieties 

like Pinot Grigio or Sauvignon Blanc to customers, as they are likely 

to order them independently. Instead, it might be more beneficial to 

shift the focus and promotional efforts toward the other, less familiar, 

lines in your selection. This approach allows you to draw attention to 

the unique and distinctive offerings, encouraging patrons to explore 

and discover new and exciting wines beyond the more commonly 

ordered options. 

Implementing a small menu talker that seamlessly integrates with 

your current menu and designating these wines as time-limited 

creates a sense of urgency, prompting guests to make decisions

with you how we came across, our new zero alcohol wine range, Thomson & Scotts 

Noughty Wine brand. 

I was driving to a client visit one day and I usually have 

podcasts, Radio 6 or Radio 4 blasting from the speakers. That 

day I was listening to Gap Finders a series about entrepreneurs 

who find a gap in a particular market and create a product to 

exploit this, people like Julian Richer of Richer Sounds has 

featured in this series before. On this day I had the pleasure of 

listening to Amanda Thompson share her passion and how 

she launched game-changing Noughty - the first top-quality 

organic, vegan, halal non-alcoholic, low sugar 

sparkling wine in 2019. 

Amanda was raised on a plant-based, no sugar diet by her health-conscious mother, she moved 

her young family to Paris and studied for her Diploma in Wine at the renowned Le Cordon Bleu 

School where she was crowned Entrepreneur of the Year 2017 and an EY Winning Woman. 

As if running your own wine business isn’t enough! Amanda is also a founding board member 

of ANBA, the Non-Alcoholic Beverage Association in the US and Vice Chair of the Trade

Wowed by the passion shown on the show, I reached out and spoke with Charlotte one of 

the sommeliers at Thomson and Scott, we both have a background of working for Diageo 

in London, however, I’m very envious of her time managing tasting rooms in the Okanagan 

valley in Canada – one of the wine worlds best kept secrets. We tried the wines together, 

they really stood out compared to the rest of the low n no wine range as it was markedly 

drier than the others, tasted like wine and had a lovely acidity that helps give it that 

structure which is so familiar to the wines we know and love.

25ml Fresh Watermelon Juice or 4-5 Fresh Watermelon Chunks

Combine all ingredients into a tin shaker, and muddle

Sometimes labelled as “silver” or “plata,” blanco tequila is typically unaged, though some versions of the style can 

be aged for up to two months. Because most blancos do not spend time aging in oak, connoisseur’s tout it as agave’s 

most undiluted expression; straight from the earth to the bottle.

Despite its colour, gold tequila is rarely aged. In fact, you might call gold tequila an impostor, a marketing gimmick even. 

In many cases, gold tequila is the result of caramel colouring added to agave juices before fermentation to give the spirit a 

more “refined” look. 

Gold tequila is often used for shots. The smoother, slightly sweet taste (a result of additives or brief aging) is less harsh than 

fresh tequila. Because of the hint of sweetness, many bartenders will use gold tequila in margaritas to complement the

presents a great tasting quality Tequila using only natural, fresh ingredients. El Sueño 

Tequila Gold is rested for 2 months in bourbon barrels to give it a beautiful golden 

colour with a hint of sweet caramel and vanilla notes. 

SUSTAINABILITY FOCUS 

Produced in partnership with Casa Maestri Distillery in Jalisco, Mexico, using traditional 

methods to deliver exceptional quality and taste. Agave plants are harvested at 9 years, 

which allows them to fully mature, maintain crop levels and support the local wildlife 

ecosystem. Our Agave is then cooked in traditional hornos (clay ovens) and autoclaves, 

delivering a vibrant taste profile with a clean, freshness on the finish. Water is sourced 

from a natural volcanic spring at the distillery and all spent materials are composted, 

donated to local farmers for agriculture and used to cultivate new Agave plants.

TEQUILA FLAVOURED 

Some things are better with age, and añejo fans would add tequila to that list: The expression, which translates to “old,” 

must be aged in an oak barrel for between one and three years. The barrel size is limited to 600 litres, maximizing 

interaction between the wood and the tequila and yielding a dark amber colour, a smooth mouthfeel, and a complex flavour 

with oak-forward notes of vanilla, caramel, baking spices, and dried fruit. Thanks to its richer flavours, añejo is typically 

consumed as a sipping tequila, but it also makes a good stand-in for whiskey in cocktails such as the Añejo Old Fashioned. 

The majority of these bottles can be described as tequila based liqueurs. They are fantastic to drink neat but also make a 

great base for cocktails. We love using the El Sueno range as a twist on your classic Margarita!

MEZCAL 

Mezcal is commonly referred to as tequila's smoky cousin. Not all mezcals are tequilas, but all tequilas are mezcals. Tequila is 

created from a unique kind of agave called blue weber agave. Mezcal, however, may be manufactured from a variety of agave 

plants, several of which are native to Oaxaca. Because of the piña's (heart of the plant) cooking method, mezcal has a stronger 

taste than tequila. Some tequilas are so silky and delicate that they can stand in for vodka in any drink. But mezcal is more 

distinct and is used in cocktails or as a substitute for a powerful spirit like whiskey.
