Welcome to our first of the summer 

issues 2023 and what a packed edition 

we have in store for you! Now that the 

apples have ripened, been picked and 

processed we can officially say it’s 

cider season…wahey! To help you soak 

up all this time of year has to offer, we 

have collated our favourite makers and 

some handy tips on why you should be 

stocking traditional ciders behind your 

bars. With only 20 litres per box (35 

pints) it’s well worth a try. 

The perfect way to dip your toes in 

the world of trad cider this summer 

is with a festival. If you’re wondering 

where to start with such an event, we’ve 

summarized everything you need to 

consider on page 50 so be sure to have 

a look and give us a shout if we can help 

in any way with our superb range of 

beers and ciders. 

Here at Dayla, we’re incredibly proud 

of the relationships we’ve built over our 

many years in the trade and we thought 

it was about time we shouted about 

some of the people and businesses we 

are lucky enough to work with. Our new 

feature, Friends of Dayla, kicks off with 

local family establishment The Works 

who have brought premium gelato and 

all round fun times to Bucks. Page 42

Myrtle Farm is the home of Thatchers, in the heart of the Somerset countryside. Caring for the environment is in 

their blood. The vision at Thatchers is to create a world-famous cider making business that works in harmony 

with the natural world, not against it. 

REDUCE OUR CARBON FOOTPRINT 

Thatchers are actively finding innovative ways to reduce the use of natural resources and increase use of renewable energies. 

PROTECT OUR BIODIVERSITY 

The orchards are not just the source of their raw ingredients. They’re a haven for wildlife and an important contributor to 

the local ecosystem. Insects and invertebrates, birds of prey, bats, pheasant, rabbits and hares all make their home there. 

TURNING WASTE INTO GREEN ENERGY 

All of the apple pomace after pressing is used for animal feed, or produces clean energy through anaerobic digestion. 

Energy is also harnessed from solar panels and the wood pruning from trees are used in their biomass boiler, 

which provides energy across the farm. 

PLANTING TREES FOR A GREENER FUTURE 

Thatchers have planted over 158,000 trees in the last decade and are planting more every year. There are hives 

throughout the orchards and bees are encouraged to thrive with the planting of wild flowers.

Foundation supports the local communities that shape us and the Thatchers Apprenticeship Programme recruits

ELIMINATING PLASTIC 

Thatchers were one of the first to remove plastic rings and replace with recyclable cardboard in 2016. They strive 

to eliminate plastic from everything they do. All cardboard packaging is from sustainable sources - card outers are 

PEFC certified and bottle cardboard is FSC certified board.

Family business, Thatchers, have been crafting cider for four generations at their home, Myrtle Farm. 

We caught up with Head Cider Maker, Richard Johnson, to find out about what it takes to create the perfect cider.

What does a day at Thatchers 

look like? 

Every day is different, and that’s one of the great joys 

of being a cider maker. From walking through the 

orchards where we grow our apples; making our cider; 

to researching and innovating with the creation of 

new styles.

What are the aspirations for 

Thatchers future? 

We just love making cider, and seeing our customers 

enjoy our range - whether that’s a new fruit cider, a 

traditional apple cider or indeed alcohol-free Zero. 

So we’ll always be keeping our eye on new trends, on 

what consumers are asking for, and importantly using 

our expertise gained over four generations to keep on 

doing what we do, and that’s creating really good tasting 

ciders.

than other cider brands? 

It’s, without doubt, the dedication to taste and to 

quality of each and every cider that is made at Myrtle 

Farm. No cider leaves the farm until it is perfect - from 

our flagship Thatchers Gold, our cloudy Haze, to our 

brand new Blood Orange, it’s important that we create 

ciders that people enjoy, and want to drink.

Thatchers to continue creating and 

inventing excellent drinks? 

The Thatchers family has been making cider here at 

Myrtle Farm since 1904- that’s four generations, and, in 

fact, our fifth generation are now working in the business 

too. And to think that the family has been perfecting its 

craft here, at the very same Somerset farm, over all that 

time, is so inspiring.

24 BIB Cider Season 

The clocks have gone forward, which in turn 

brings us longer and brighter days, but also 

means something else is on the horizon...beer 

and cider festival season! 

Bag In Box (BIB) ciders in particular are very popular at this 

time of year as the simplicity of their dispense system and 

array of flavours and styles can provide plenty of choice 

for your back bar or beer festival. We’re pretty lucky here 

at Dayla to be able to work with some of the finest cider 

producers this country has to offer, and we wanted to shout 

about some of our favourites. Firstly though, what is BIB 

Cider, and why is it so popular? 

Bag-in-box cider, also known as cask or BIB cider, is a type 

of cider that is packaged in a box-shaped container, typically 

made of cardboard. The container has a plastic bag inside 

that holds the cider, and a tap or spout is attached to the front 

for dispensing the cider. You can either dispense directly from 

the tap into the glass, or the tap can be connected to your real 

ale hand pull system and dispensed through there. 

CIDER 

BIB cider packaging is generally less expensive than bottles or 

cans, which can help to reduce production costs and increase 

profit margins. The bag-in-box method of packaging cider 

is very popular in bars, pubs, and restaurants because it is 

easy for the outlet to handle, store, and dispense the liquid 

(particularly if you are dispensing directly form the tap into 

the glass). BIB packaging can be more space-efficient than 

bottles or cans, and it may require less handling and clean-up 

than traditional draft systems, especially if you’re dispensing 

directly from the box. The container can hold a large volume 

of cider, up to 20 litres or more, and once opened, the cider 

stays fresh for several weeks. The fact that it so easy to store, 

transport and handle makes it very popular for outside events 

and festivals also.

BIB Cider Season 25 

BIB cider can be filled directly from the fermentation 

vessel without undergoing additional processing or 

packaging, which can help to preserve its freshness 

and flavour. Additionally, BIB packaging can provide 

protection from light and oxygen, which can degrade 

the quality of cider over time. The cider inside a 

bag-in-box container is typically a still, uncarbonated 

cider, although some ciders may be carbonated. The 

taste of bag-in-box cider can vary depending on the 

style and ingredients used. Generally, bag-in-box 

cider is a traditional cider made from cider apple 

varieties, which can result in a dry, tart, and complex 

flavour profile. However, there are also sweet and 

fruit-flavoured bag-in-box ciders available. Finally, BIB 

packaging can be eye-catching and distinctive, making 

a real impression on your back bar. Additionally, 

cider made by locally produced, British and authentic 

cideries, may be marketed as a premium or artisanal 

product, which can command higher prices and 

increase profitability.

The variety of styles and flavours of cider can vary, so here is a handy guide to a 

range of styles available across the board: 

DRY CIDER: This type of cider is fermented until all the natural sugars are consumed, resulting in a crisp, tart, 

and dry flavour profile. It's typically made from traditional cider apple varieties and pairs well with savoury dishes. 

SWEET CIDER: Sweet cider is made by stopping the fermentation process before all the natural sugars 

are consumed, resulting in a sweet taste. It's often made from dessert apples and has a fruity and refreshing flavour. 

MEDIUM-DRY CIDER: As the name suggests, this type of cider falls somewhere between dry and 

sweet. It has a slightly sweet taste with a crisp, tart finish. 

HOPPED CIDER: This style of cider is made by adding hops to the cider during the brewing process, resulting 

in a unique and complex flavour. Hopped ciders can range from dry to sweet and have a hoppy bitterness that pairs 

well with spicy foods. 

BARREL-AGED CIDER: Barrel-aged cider is aged in wooden barrels, typically oak, which adds a depth of 

flavour and complexity to the cider. The oak imparts a rich, vanilla flavour that pairs well with hearty dishes. 

FRUIT CIDER: Fruit ciders are made by adding fruit to the cider during the brewing process. Popular fruits used 

in fruit ciders include berries, peaches, and cherries. The fruit adds a sweet and tart flavour that pairs well with lighter 

dishes. 

SPICED CIDER: Spiced cider is made by adding spices such as cinnamon, nutmeg, and cloves to the cider 

during the brewing process. The spices add a warm and cosy flavour to the cider, making it a popular choice during the 

fall and winter months.

Our Story So Far… 

Sitting round the dining table was always our favourite time of the day, it meant it was time for family and food. We would 

sometimes sit for hours; exchanging stories, often eating wonderful food (but not always!) and spending quality time as a 

family. 

We would often talk about one day opening a restaurant, it always seemed to be a passion that we shared between us. Some 

of us worked in restaurants, some of us managed restaurants, some of us had run chains of restaurants and some of us 

loved eating in restaurants! Even with varying degrees of experience, we all knew that we wanted to create somewhere for 

friends and families to celebrate, to laugh and to share an experience which was different to other high street restaurants. 

Back in November 2014 after planning, building, painting, training, laughing and crying (with a trip to Italy squeezed in to 

learn how to make gelato) our distant dream finally came a reality. We had a restaurant. The opening months were a real 

shock to the system; long days, little sleep and all the normal issues that you encounter as a young business. In those opening 

few years, we tried tirelessly to become a part of the community and share our family values as far and wide as possible. 

Before we knew it, 2 years had flown by and our hunt for a second restaurant had begun. We stumbled across an old Bakers 

Oven in High Wycombe, and it all seemed to fit. We transformed the space to make it ‘Worksy’ and in November 2016 

we opened the doors. We knew we wanted to continue to make gelato in both sites, fresh, every day, so we invested in the 

necessary equipment and our production team grew. 

Just before the dreaded ‘C-Word’, we started to gain some interest from other business owners who wanted to place our 

gelato on to their menus. What an honour. The decision was easy, of course we wanted to develop flavours for other people 

and use our knowledge of gelato to enhance other people’s menus, but how do we make that a reality? 

Last year, we were very proud to launch ‘The Works Gelato’. A business-to-business operation that spreads our love for small 

batch, hand crafted gelato. We have now developed over 50 flavours of gelato and sorbet, from Vanilla Pod to Bakewell Tart 

- there really is something for everyone! 

The Works Gelato strives to be an innovator in the gelato world, creating new, different, and exciting flavours that the 

market hasn’t seen before. These products are always on-trend but pushing the boundaries of what people have done before 

us. Whatever the ‘flavour of the month’ may be, our product is never compromised in quality. We will always use 

high-quality, fresh, and where possible, local ingredients to max out flavours that deliver the wow factor.

When searching for suppliers and contractors, our philosophy from the very start was to ensure we surrounded ourselves with 

people that shared the same values and philosophies as we did. At the heart of a family business is a core of understanding, 

support, challenge and celebration. We have been very lucky to find several suppliers that embraced the brief and have helped 

us along our journey. 

Our partnership with Dayla goes back a lot further than the start of The Works, about 20 years in fact, starting on the side-lines 

of a football pitch. Kevin Saw (Ex Operations Director, Dayla), was always involved in the Sunday football our boys played in, playing 

a starring role in refereeing (and trust me, no favouritism was shown!!) In the bar after one of the games, we were explaining to Kevin 

some of our crazy ideas for the restaurant. He did not hesitate to jump in and promise to support with any of our drink needs, and 

the partnership had started. 

The most impressive part of our relationship over the years has been the standard of service we 

get. Never dropped from day one and to be honest gets better every year. Whether that’s needing 

advice on new products from our account manager or, the cheery delivery guys or, the reaction 

times to maintenance issues, they always seem to be there when we need them. The record was 

broken recently when we called about a problem with our post mix system. I think it was just 

under 14 minutes form the call to when it was fixed!! 

Finally we have also been proud to support their annual staff party with our ice cream bike, serving our homemade gelato 

to a well deserving team letting their hair down!

Ahh, Beer Festival Season us upon us. It’s the perfect time to showcase some of your favourite 

brews, or to deviate from your regular offering to stage an extended beer and cider option 

for your guests. Setting up the perfect beer festival requires careful planning and attention to 

detail. Here are some steps you can follow to ensure that your beer festival is a success:

Before you start planning, it's important to have a clear idea of what you want to achieve with the festival. 

Do you want to showcase local craft breweries? Do you want to raise money for a charity? Do you want to promote 

a certain type of beer? Setting out your goals and objectives will help you make decisions throughout the planning 

process. 

Make sure the space you want to host the festival is easily accessible and has plenty of space for the number of 

attendees you expect. If possible, ensure that you have covered area in case of bad weather, as we all know good 

ol’ Blighty can throw us a meteorological curveball from time to time! Consider factors such as parking, additional 

toilet facilities and electricity supply. 

Choose the right date: Timing is important when it comes to a beer festival. Try to avoid scheduling your festival 

on a date that conflicts with other major events in your area. Consider the weather conditions for the time of year 

you plan to hold the festival, as well. 

Select the breweries: One of the most important aspects of a beer festival is the selection of breweries. Look for a 

mix of local and regional breweries, and consider including a few well-known breweries to draw in a larger crowd. 

Whilst the majority of people want to come to a beer festival to explore and discover new brewers and styles, some 

drinkers like to stick to their staple classics. Make sure you have a good mix of beer styles, including IPAs, stouts, 

lagers, and more. 

Plan the logistics: Will attendees be given a glass for sampling? How will beer tokens be sold? What food options 

will be available? Will there be live music or other entertainment? Make sure you have a plan in place for each of 

these details. 

Advertise the festival: Once you have all the details in place, it's time to start advertising the festival. Use social 

media to spread the word, and consider placing ads in local newspapers or on radio stations. Offer early bird or 

group discounts to encourage people to buy tickets early and in bulk. 

Manage the event: On the day of the festival, make sure you have enough staff to manage the event. Have 

volunteers on hand to pour beer, sell tokens, and answer questions. Make sure there is plenty of signage so 

attendees can find their way to and around the festival.

Beer Styles 

We’ve touched briefly already on the styles you should consider for a festival. 

Again, here are a few things to consider

Offer a variety of styles: It's important to have a diverse selection of beer styles available at a beer festival to 

appeal to a wide range of tastes and demographics. Consider offering a mix of light and dark beers, hoppy 

IPAs, malty stouts, crisp lagers, refreshing wheat beers and a few funky sour beers for good measure. 

Include local breweries: If you want to showcase the local beer scene, be sure to include a selection of local 

breweries in your festival line-up. This can be a great way to promote local businesses and give attendees a taste 

of what the region has to offer. Also local brewers might be on hand to help promote your festival, be in person 

or through their social media channels.

Consider seasonal beers: Depending on the time of year, you may want to include seasonal beers in your festival 

lineup. For example, in the Autumn, you could offer Green Hop or Oktoberfest beers, while in the summer, you 

could feature refreshing fruit-infused beers.

Balance popular beers with unique offerings: While it's important to include popular beer styles that are sure to 

be crowd-pleasers, consider also offering some unique, lesser-known beers that will give attendees a chance to 

try something new and different.

Provide a range of alcohol levels: It's important to provide a range of alcohol levels to accommodate all types of 

beer drinkers. Consider offering beers with a range of ABV (alcohol by volume) levels, from light session beers 

to higher-alcohol imperial stouts.

Equipment

When it comes to equipment for a beer festival, there are a number of items 

you will need to ensure a successful event. Here are some of the key pieces of 

equipment you may need: 

Draft Systems: You will need a draft system to serve beer keg on tap. This may include kegs, tap handles, beer 

lines, regulators, CO2 tanks, and other related equipment such as a Lindr Machine, which can dispense chilled 

beer from a keg without the use of gas for a period of a day or so (although we would recommend attaching 

gas to help preserve the beer for longer periods) Make sure you have enough equipment to serve the number of 

beers you plan to have on tap.

The majority of Beer Festivals will generally dispense Cask and BIB Cider directly from the container without 

the need for dispense equipment. You may need to source cooling equipment though for cask ales such as ice 

blankets and cooling ribs, particularly if you’re planning to hold your event in the summer. You will also need 

things like racking to store the casks and taps and spiles in order to dispense and vent the beer. Speak to us if 

you need any advise on these! 

three. 

BIB ciders are nice and easy to dispense, as they have a tap directly attached to the bag within the box. So place 

it where you need to serve it from and away you go! 

four. 

Glassware: You will need appropriate glassware for serving beer to attendees. This may include pint glasses, 

tasting glasses, or other specialty glassware. Consider offering different types of glasses for different beer styles. 

You could also offer enhanced priced tickets that offer upgraded or specialist glassware also. 

five. 

Refrigeration: If you do not have outside cooling available you will need refrigeration to keep beer cold and 

fresh. This may include refrigerators or coolers to store kegs and ice to keep them chilled. Or, just serve your 

beer from your existing cellar or bar. 

six. 

Tables and chairs: You will need tables and chairs for attendees to sit and enjoy their beer. Consider providing 

both indoor and outdoor seating options. 

seven. 

Rubbish and recycling receptacles: Make sure you have plenty of rubbish and recycling receptacles available 

throughout the festival to keep the area clean and tidy. COVID has of course changed the way we think about 

re-using glassware, but if you have appropriate sanitation and sanitising equipment you could encourage people 

to re-use their glasses to keep waste and washing up down to a minimum. 

Food Offering: depending on whatever culinary delights you currently offer you could look at creating a special 

menu for the festival that emphasises quick, delicious service for group and family friendly foods. Pizzas, burgers 

and BBQs always go down a treat, but maybe think about offering a more eclectic range of cuisines from father 

flung corners of the globe to generate interest in your local area. Spicy foods will pair beautifully with hoppy 

ales; lagers are always a go to smoked meats and a robust stout can always enhance a hearty pie. If your kitchen 

options are limited (or you fancy giving the chef a weekend off) why don’t you look into outsourcing your food 

options to a local food vendor, perhaps someone who offers a style of food you don’t normally serve. They can 

rock up with their food van, keep your guests fed while you can concentrate on keeping them watered. Plus, 

they can do the washing up… result! Well fed guests will always need a beer or two to help them wash their 

food down after all, so it’s a match made in heaven.

78 Burnt Mill Brewery 

Say hello to Burnt Mill. A Suffolk based brewery focused on producing fresh, unfiltered 

and flavourful beers of the highest quality available in keg, can and cask. 

Taking its name from a local landmark, the Burnt Mill in the nearby village of Little Saxham, the brewery was started in 2017 

and quickly grew a reputation for producing easy drinking pales and IPAs. Founded by Charles O’Reilly, who has a wealth 

of experience in the industry, they have gone from strength to strength. Speaking about the early days of Burnt Mill, Charles 

has said: “In the years that followed we picked up best new brewery in England at the Ratebeer awards and went on to pour 

our beers around the world, learning, collaborating and making friends across the industry. Over the last six years we built a 

dedicated team of brewers, distribution and sales all with the aim of making and supplying the best beers we can.” 

With a focus on hop-forward beers, often using experimental varieties and modern brewing techniques, they have gained a 

strong following across these shores and abroad. They are known for their hazy and juicy New England-style IPAs, as well as 

their flavourful pale ales, stouts, and sour beers.

It all started with the first beer they 

brewed, which was their flagship beer, 

Pintle, which has remained a constant 

ever since. Its hoppy character and easy 

sessionability has made it a mainstay 

across the many a bar and pub up and 

down the country. 

Charles added: “Over the years we 

have explored many different styles 

and ingredients, always with the aim of 

improving the beers we make. Today 

we have a varied core range and many 

specials and seasonal beers from highly 

hopped Pilsners to New England IPAs

A grist of pale, wheat, and oats give us a 

lean malt profile. Hopped in the whirlpool 

with Citra & Centennial. Dry hopped with 

Citra, Centennial, Idaho 7 & Simcoe for 

bright tangerine and grapefruit aromas with

Mill Pils is a clean and crisp Pilsner, 

hopped with Ahtanum and Meridian to 

give some gentle grassy and floral notes 

with overtones of fresh fruit. Mill Pils

PINTLE PALE ALE 4.3% 

Pale ale brewed with wheat, oats and 

flaked barley in the grist to smooth out 

the body. Whirlpooled and dry hopped 

with Cascade, Citra and a touch of 

Kazbek. Its restrained bitterness and 

dry finish help maintain Pintle's all day 

crushability. Also available in cask.

Wine tasting is an art that requires practice, patience, and a keen sense of observation. But it’s loads 

of fun at whatever stage you are at. Whether you are a novice or an expert, there are always ways to 

enhance your wine-tasting experience and discover new flavours in each glass of wine. Here are some tips 

and tricks to help you become a better wine taster and appreciate the beauty of wine. 

Use Your Senses: Wine tasting is not just about the taste, but also about the smell and 

appearance of the wine. Take a moment to examine the colour of the wine, its clarity, 

and the thickness of the liquid - its viscosity (is it watery or like ink?). Swirl the wine in 

the glass and observe how it clings to the sides of the glass. Then, take a deep sniff and 

try to identify the aromas of the wine. Finally, take a sip and let the flavours and textures 

of the wine linger in your mouth. 

Take Notes: if you want to take the fun further, make it a bit more structured by

which is held on this day because it is said to be the first date 

on which a cocktail was officially defined. 

In 1806, New York newspaper ‘The Balance and Columbian Repository’ received a 

letter asking what a cocktail was. 

Responding in the outlet’s 13 May edition, editor Harry Croswell described one as: “A 

stimulating liquor, composed of spirits of any kind, sugar, water and bitters.”

Add the flesh of 2 passionfruits. Lemon juice and sugar syrup 

to a cocktail shaker. Shake until frothy, add ice and the orange 

and passionfruit fusion, shake again. Strain into a martini glass 

and top with Sicilian lemonade sparkler. Garnish with half a 

passionfruit.

Despite its colour, gold tequila is rarely aged. In fact, you might call gold tequila an impostor, a marketing gimmick even. 

In many cases, gold tequila is the result of caramel colouring added to agave juices before fermentation to give the spirit a 

more “refined” look. 

Gold tequila is often used for shots. The smoother, slightly sweet taste (a result of additives or brief aging) is less harsh than 

fresh tequila. Because of the hint of sweetness, many bartenders will use gold tequila in margaritas to complement the 

mixed drinks fruity flavours.

presents a great tasting quality Tequila using only natural, fresh ingredients. El Sueño 

Tequila Gold is rested for 2 months in bourbon barrels to give it a beautiful golden 

colour with a hint of sweet caramel and vanilla notes. 

SUSTAINABILITY FOCUS 

Produced in partnership with Casa Maestri Distillery in Jalisco, Mexico, using traditional 

methods to deliver exceptional quality and taste. Agave plants are harvested at 9 years, 

which allows them to fully mature, maintain crop levels and support the local wildlife 

ecosystem. Our Agave is then cooked in traditional hornos (clay ovens) and autoclaves, 

delivering a vibrant taste profile with a clean, freshness on the finish. Water is sourced 

from a natural volcanic spring at the distillery and all spent materials are composted, 

donated to local farmers for agriculture and used to cultivate new Agave plants.

TEQUILA ANEJO 

Some things are better with age, and añejo fans would add tequila to that list: The expression, which translates to “old,” 

must be aged in an oak barrel for between one and three years. The barrel size is limited to 600 litres, maximizing 

interaction between the wood and the tequila and yielding a dark amber colour, a smooth mouthfeel, and a complex flavour 

with oak-forward notes of vanilla, caramel, baking spices, and dried fruit. Thanks to its richer flavours, añejo is typically 

consumed as a sipping tequila, but it also makes a good stand-in for whiskey in cocktails such as the Añejo Old Fashioned.

MEZCAL 

Mezcal is commonly referred to as tequila's smoky cousin. Not all mezcals are tequilas, but all tequilas are mezcals. Tequila is 

created from a unique kind of agave called blue weber agave. Mezcal, however, may be manufactured from a variety of agave 

plants, several of which are native to Oaxaca. Because of the piña's (heart of the plant) cooking method, mezcal has a stronger

Our little distillery is tucked away among the houses 

on the corner of Linton Street and Mary Street. It is 

here that our gin is handcrafted in small batches using 

traditional methods in our beautiful 140-litre copper 

still, which stands proud for all to see in The Hanbury, 

Islington. 

Hanbury is a premium London Gin inspired by 

London's rich gin history and the heritage and 

character of Islington. 

Hanbury Gin was born with one hope: to develop a 

new London Gin with greater flavour, character, and 

quality. As a result, Islington's newest distillery opened 

in 2021. 

We take great pride in the quality of our gins. Every 

batch of our gin is tasted by an expert panel to ensure 

that there are no compromises or shortcuts. Our gin
