Welcome to our September & October 

edition of Cooper's Choice! What a 

summer we've just had, and certainly 

no sign of things slowing down in 

our industry. Autumn brings change 

and plenty of opportunity to increase 

sales with the likes of Cask Ale Week, 

Halloween and even National Curry 

Week from 3rd - 9th October. 

One particular event which seems 

to be growing year on year is Sober 

October and we've got a superb range 

across beer, wine, spirits and cider 

to ensure you have options to keep 

your alcohol free customers coming 

back and also increase margins in 

this category (page 114) Check out

Strawberry Espresso Martini 

A summery take on the modern classic. Like our classic Espresso 

Martini, this strawberry variation is made with just three ingredients 

and a good shake! 

Ingredients 

- 50ml Black Cow & English Strawberries 

- 40ml Fresh, cooled coffee 

- 15ml Maple syrup 

Step by Step 

- Put all three ingredients in a cocktail shaker, and a handful of ice. 

- Shake. But don’t just shake a little; shake a lot.

WHO ARE CORNISH ORCHARDS? 

Andy Atkinson arrived at Westnorth Manor Farm with his herd of dairy cattle in the spring 

of 1992. The farm is part of the Duchy of Cornwall Estate. 

Drawing motivation from Cornwall Council’s project to save, rejuvenate and replant 

traditional apple orchards, and wanting to encourage birds and wildlife, Andy planted three 

orchards on the farm. Soon, he had one of the largest collections of Cornish apple varieties 

in the county, creating the perfect wildlife habitat. 

Enthused by his new crop full of exciting, intriguing flavours, Andy juiced and blended, then 

hand labelled his first Cornish apple juices. With this success and the introduction of his first 

Cornish Orchards cider, Andy took the leap to diversify from dairy farming to juice and 

cider making and threw his wellies away! 

Today they are a passionate team of over 25 local staff, working hard to create full-of-flavour, 

whole fruit drinks and award-winning ciders, to serve both locally, nationally and even 

internationally. 

Cornish Orchards also continue to be relentless innovators. Their goal is to produce 

premium ciders and fruit juices using the best methods and ingredients possible. Constantly 

striving to bring products to consumers that can be appreciated for their outstanding flavour 

and quality, as well as caring for the surrounding environment in the process. Find out about

10 Sustainability Spotlight 

SUSTAINABILITY 

A holistic, no waste approach to making cider 

· All -waste -water processed on site (with a combination of a biological 

water treatment plant and a natural wetland) and clean -water is returned 

to our local water course. 

· The farm is Soil Association certified organic. 

· We recently planted a 5,000 tree (1.5 hectare traditional woodland to 

help with carbon capture and to support habitat development. 

· We have recently installed electricity and water meters across the site 

and have set targets for reduction across both. 

· Local apple scheme - For one month a year we ask Cornish residents 

to bring us their unused apples, to avoid them going to waste - in 2019 

the scheme saved 70 tonnes of fruit. 

· All electricity from renewable sources, and diesel Fork Lift Trucks 

replaced with electric - changes which have more than halved our 

carbon emissions 

· Zero waste to landfill. 

· All our fermentation is done naturally - without temperature control 

which saves a huge amount of electricity. 

· Cardboard outer packaging is made from recycled materials and 

is biodegradable. Plastic eliminated from all primary and secondary 

packaging. 

· Apple Waste - All apple waste (known as pomace) either goes to animal 

feed or to a green energy company.

"Historically, we've never made things easy for ourselves. We started life back in 1994 in the cellar of a pub 

in Brighton with a brew kit marginally bigger that that used by an enthusiastic home brewer. Our love of 

American hops has shaped the beers we've become known for, started when one of our founders returned 

from a business trip across the pond with a suitcase full of hops - he did well to get through customs 

frankly. We're a bit bigger than that now and use a few more hops, but our free spirited and experimental

“In 2014, we started Verdant to make beers that 

we love. Nothing’s changed. It’s still about taste, 

quality, and all ’round deliciousness. Think juicy, 

hoppy, unfiltered, hazy beers that are always 

vegan! That’s us. We also love to explore from time 

to time, brewing lagers, stouts, cask ales... We’re 

independent, and always will be — that way we can 

continue to push boundaries and make beer we love, 

and hopefully, you will love them too.” 

When you think of the UK Craft Beer Scene, it is neigh 

on impossible to overlook Verdant. The Cornish Maestros 

have, personally, produced some of my favourite beers 

ever. I could wax lyrical about Even Sharks Need Water 

(6.5% IPA) Putty (8% DIPA) or Headband (5.5% Pale Ale) 

for pages and pages, but I have been informed that there 

is indeed a character limit for this article. 

But, to get us started before I waffle on, who better to 

shine a light on the brewery than Billy, their Head of 

Sales, to explain a bit more about the origins of Verdant: 

“Adam and James were homebrewers who loved hopforward 

beers. They weren’t easy to find locally so in 

2014 they started Verdant to make their own. Rich joined 

in 2016. With a little help from other craft brewers and 

friends, out poured juicy, hoppy, unfiltered hazy Pales, 

IPAs and DIPAs, and the brewery thrived thanks to likeminded 

drinkers everywhere. Being independent enables 

Verdant to stay ethical, sustainable, and keep pushing the 

boundaries of taste and quality. 

After a successful crowdfund campaign in 2018, we were 

able to expand into our new site in Penryn and expand 

our horizons with significantly increased production 

as well as a bespoke taproom on site at the brewery. 

The focus has always been the same here at Verdant; 

consistency, quality, community. These values run 

through every aspect of our little corner of Cornwall.” 

Forever hitting the upper echelons of Ratebeer and 

Untappd ratings over the past few years, the Brewery have 

amassed a strong and ever growing fan base, made up 

of a contingent of hop mad beer lovers who are forever 

craving their next dank and hazy hit from the Cornish 

Crew. You can definitely count us here at Dayla as part of 

that fan base, having drunk their beers long before they 

were on our list (when we could get our hands on them!)

IPA – just a hint of bitterness, and a balance of sharper citrus fruits to stop the tropical aroma being too sweet.

A sub 4% soft and sluggable pale that has oodles of Citra and Mosaic seeping from all directions. It drinks way above

CHACABUCO 

Seductive & vibrant aromas of plum, 

damson and black cherry fruit on the nose 

lead to a deliciously smooth, mediumweight 

palate with soft tannins, lashings 

of ripe dark-berried fruits and warm spice 

on the finish. Unoaked. 

MALBICHO 

Aromas of red fruits and plums alongside 

floral and subtle, toasty vanilla notes; mediumbodied 

in the mouth, the style here is soft, juicy 

and very well-balanced with delicious red and 

dark-berried fruits to the fore. 50% aged in 

French oak barrels for three months. 

TRUENO 

Complex aromas of red and black fruits on the 

nose such as cherries, plums and raspberries 

are complemented by notes of raisins, chocolate, 

and coffee. Smooth and well-balanced on the 

palate offering ripe, sweet tannins, purity of fruit 

and a lingering finish. Aged in 60% American and 

40% French oak for six months. 

For something a little different we head 

to some of the highest altitude vineyards 

in the world. Agustín Lanús specialises 

in extreme altitude micro-terroirs and 

this wonderful Malbec comes from 

the Calchaqui Valley, Salta utilising 

vineyards at 2,400 m.a.s.l. 

SUNAL ILLOGICO 

Very intense dark violet colour with aromas of black olives, 

rose hips, thyme, black fruits and a delicate finish of cedar 

and oak. The tannins are muscular but very well-integrated 

with a nice natural acidity that gives freshness and elegance.

From grapes grown in the extreme climate 

of Yecla, north of Murcia and inland 

from Alicante; very cold winters and hot 

summers; from vineyards delivering low 

yields but fantastic quality grapes. Pablo 

Cortes and Karel Eissner are the dynamic 

couple responsible for the rise of this iconic 

name. Pablo is an agricultural engineer 

with over 15 years’ experience operating 

as a winemaker at a number of Spanish 

bodegas. He is the driving force behind 

the oenology of Demuerte, overseeing 

the entire process from planting vines 

to bottling wines. Karel, meanwhile, is 

a specialist in architecture, design and 

photography, and is the creative director 

who has pioneered the bold and colourful 

design of the labels, with artwork based 

on a Mexican death mask. Starting with a 

modest 3,000 bottles in 2015, they are now 

producing 150,000 bottles annually and are 

present in 22 countries.

Gosset is the oldest wine house in Champagne. It was founded in Aÿ in 1584 by Pierre Gosset an alderman and 

wine-grower who made mostly red wines. At that time the region’s still wines competed for pride of place on the 

best tables of France with the wines of Beaune which were made from the same grape varieties as they are today. 

In the 18th century Gosset joined their neighbours and began to make the sparkling wines for the first time. It 

was at this time that the house adopted the unique antique flask-shaped bottle that is still used today. 

Gosset’s wines are characterised by their purity and expressiveness. Grapes come mainly from premier and 

grand cru vineyards surrounding Epernay and their winemaking style is characterised by minimal intervention, 

extended ageing and no malolactic fermentation. Pinot Noir and Chardonnay are the house’s focus. 

Since 1993 Gosset has been owned by the Renaud Cointreau family who have sought to protect the quality and 

character of their wines. This has led them to keep production levels moderate and to respect the history of the

Some things are better with age, and añejo fans would add tequila to that list: The expression, which translates

and a complex flavour with oak-forward notes of vanilla, caramel, baking spices, and dried fruit. Thanks to its richer

Despite its colour, gold tequila is rarely aged. In fact, you might call gold tequila an impostor, a marketing gimmick 

even. In many cases, gold tequila is the result of caramel colouring added to agave juices before fermentation to

Gold tequila is often used for shots. The smoother, slightly sweet taste (a result of additives or brief aging) is less 

harsh than fresh tequila. Because of the hint of sweetness, many bartenders will use gold tequila in margaritas to

Mezcal is commonly referred to as tequila's smoky cousin. Not all mezcals are tequilas, but all tequilas are mezcals. 

Tequila is created from a unique kind of agave called blue weber agave. Mezcal, however, may be manufactured from a 

variety of agave plants, several of which are native to Oaxaca. Because of the piña's (heart of the plant) cooking method, 

mezcal has a stronger taste than tequila. Some tequilas are so silky and delicate that they can stand in for vodka in any 

drink. But mezcal is more distinct and is used in cocktails or as a substitute for a powerful spirit like whiskey.

Sober October began in 2014 as a fundraising campaign for Macmillan Cancer Support, a U.K.-based 

charity that provides support to people living with cancer. This campaign’s primary goal is raising

half at the end of the 12 month period, granted they meet MPC and still have the tap on the bar. BBG also expects the 

outlet to do its best to ensure proper execution. Listing fees will be paid per tap for up to 70 HL per tap over a 12 month 

not be considered incremental taps and will not be eligible for the listing fee. A written confirmation must be provided to 

the outlet's respective account manager confirming the outlets intention to participate in the incentive program.
