BELVOIR FARM 

Belvoir Farm lies deep in the 

Leicestershire countryside, tucked away 

among the wild hedgerows and unruly 

shrubs of the Vale of Belvoir. The 

amazing team of foodies and thinkers, 

tasters and sales folk, and packers are 

here – working together, with nature, to 

craft their range of premium soft drinks. 

The first bottle of Belvoir elderflower 

cordial was made in the Vale too – 

almost 40 years ago, in the farmhouse 

kitchen of owner, Peverel Manners. 

Wild elderflower spilled into Pev’s 

family garden and, together, they 

transformed it into cordial. Selling it to 

local farm shops was a simple business 

idea that took root and grew – and they 

use that original elderflower cordial 

recipe to this day. 

The premium range of soft drinks has 

now flourished, including cordials – to 

dilute – and lightly sparkling, which are

People drink beer with their eyes, and in the last couple of hundred 

years ultra-clear beers, which had been filtered removing yeast and small 

proteins, were the most popular due to appearance and familiarity. 

Unfiltered beer is quite simply beer that has not been filtered, nothing has 

been removed, allowing for a more complex flavour and aroma. Flavour 

molecules attach themselves to these proteins during fermentation, so 

leaving them in produces a greater roundness and mouthfeel, whilst still

At Sipsmith, we have always been positively fuelled by purpose. Initially, we were 

driven to bring gin back to the city where it earned its name, crafting our London Dry 

Gin with uncompromising quality and innovation. March 2009 will be forever etched 

in my mind as the month that saw the birth of craft gin and the first distillery to open 

in London for just shy of 200 years. And now too, May 2021; the month we secured 

B Corporation certification and committed to our sustainability strategy, formally 

setting in motion our sense of purpose beyond profit; our why. 

It has always been our mission to champion a better way of crafting gin and pioneer 

positive changes within our industry. Today sees us laying out even more ambitious 

plans for every single one of us to be part of crafting a better future. 

Our sustainability strategy ‘Crafting a Better Future’ focuses on five missions with

SIPSMITH'S ACTIONS TO 

SUSTAINABILITY 

· The installation of a new cooling system has reduced 

our water consumption on site by approx 40% 

· Our electricity comes from renewable sources, 

eliminating our Scope 2 emissions. 

· Standardisation of our range from 50cl to 70cl bottles, 

alongside selling fewer gift packs, saw a reduction in 

emissions associated with packaging. 

· For every litre of gin crafted at our distillery, we 

produced a third less general waste than in 2020. All of 

it is diverted from landfill to energy recovery. 

· We installed a drainage basket to capture our spent 

botanicals which we send for anaerobic digestion 

to produce green energy and peat-free compost. Since 

installation in 2019, we have collected 4.5 tonnes of 

food waste which has the potential to power a UK 

home for a year with green energy.

As we head towards British Summer 

Time, the core of the cider category 

continues to grow exponentially and 

our nation's sweet tooth is ever more 

eager for variety. When the ontrade 

reopened, cider outperformed 

categories such as wine and spirits with 

a great shift towards staying local and 

missing the experience of stopping for 

a pint. We can relate! 

Enjoying new ciders is a fun part of 

the experience for many drinkers, with 

a move towards draught and creating 

'the perfect serve' being a key selling 

point in this. Something which was 

altogether too difficult and costly to 

recreate in the comfort of our homes 

during lockdown. 

At Dayla, we're already seeing the 

demand for draught cider grow so be 

sure to pay close attention to this when 

considering your front of bar range.

We were farmers before diversifying into 

cidermaking back in 2013 after a “Sliding Doors” 

moment when someone wrote asking if we had any 

apple trees as they would like to buy the fruit to 

make into juice. We decided to plant some trees in 

order to sell him the apples. It was while planning 

the new orchard that the thought occurred to us to 

have a go at trying to make our own cider. 

After visiting the West of England and taking some 

advice from expert cidermakers down there. We 

tried out the first batch of cider on a home made 

press using apples from neighbouring gardens 

and scrumped from nearby trees…it took a bit 

of practice but we had got the bug and the first 

orchard was planted with a blend of cider apples 

and dessert fruit it was lovely! We still use this blend 

today. The business has continued to grow since 

then and we still use apples from the farm (we now 

have two orchards and have got room to expand) 

as well as some from a neighbour and some from 

Herefordshire. 

Why the pig logo? - As well as being a natural 

accompaniment to cider and apples. It is also part 

of our heritage as our family used to have a business 

selling pork pies and sausages which traded for over 

100 years but sadly closed in 2008 and the pig logo is 

my memento to those days. (interesting fact: our pork 

pies were a favourite of actor Roger Moore who used 

to eat them on the set of James Bond movies). 

Our ethos is to produce quality, authentic cider using 

fruit from English trees embracing both old and modern 

techniques for a flavour that can be enjoyed by everyone. 

Cider doesn’t have to be large production line bland or be 

too niche for the masses. Quality Cider, made on the farm, 

for all!

Tucked away in the Swedish countryside, in the small town 

of Kopparberg, you’ll find the Kopparberg “Bryggeri.” 

Kopparberg Cider is named after the Swedish town in which 

the brewery is located.

INTRODUCING... 

the pink gin pioneer 

Founder Stephen Marsh set up Pinkster back in 2013 after 

realising that wine and beer no longer agreed with him. 

A keen forager and maker of sloe liqueurs, he turned his 

attention to gin and started experimenting at home. He 

wasn’t intentionally creating a pink drink but after working 

his way through an entire fruit bowl, he discovered that 

raspberry delivered the best flavour. 

The raspberries are grown locally to our rural 

Cambridgeshire HQ and we only produce Pinkster gin 

during the cropping season. The raspberries are picked in 

the morning and in our tanks in the afternoon. 

Thanks to these plump beauties, the gin is deliciously dry 

with a hint of fruit and an exceptionally smooth finish. 

SUSTAINABILITY 

Sustainability has long been our guiding principle and 

we recycle the inebriated fruit as a range of natural byproducts. 

There’s minimal wastage with every last drop of 

delicious goodness squeezed from every single raspberry. 

We’ve also now launched our stylish and sustainable bagin-box. 

Equivalent to just over four regular bottles, this 

holds over 100 serves. 

THE PINKSTER FAMILY 

Pinkster Royale, our reduced alcohol Spritz drinks and our 

Cocktail Mixes are all created from the leftover raspberries. 

This fervour for fresh fruit marks us out from the industry 

and is a major plus point for ethically minded, discerning 

drinkers who are happy to pay more for quality ingredients. 

And now, in a nod to traditional gin styles, the family has 

just expanded thanks to the launch of our triple juniper 

base spirit as Naked Pinkster. Juniper really is the star and 

there’s no escaping that charismatic peppery bite of a 

classic London Dry.

In a nod to traditional gin styles, we’ve launched our triple 

juniper base gin as Naked Pinkster. This is the core spirit we 

make Pinkster with before adding the fresh raspberries. 

If you like an old school gin, you’ll love this as it’s made 

with heaps of juniper, the all-important botanical for gin.

We spent five years perfecting the Pinkster recipe and 

another ten enjoying this deliciously dry G&T. Placing a 

sprig of well-spanked, fresh mint on the surface seriously 

elevates the whole tasting experience as the minty aromas 

hit your senses before the first sip.

THE PERFECT 

With reduced alcohol, our spritz base is a light refreshing 

drink. The Elderflower and Raspberry version is crafted 

with wild elderflower foraged from East Anglian hedgerows 

whilst Hibiscus and Raspberry is infused with exotic 

hibiscus flowers. Serve with soda, especially Fever-Tree’s 

Mexican Lime Soda if you can lay your hands on a bottle. 

Best of all, a regular 25ml measure has a third of the calories 

of your average glass of wine.
