Rum<br />

Rum is a destilled alcoholic drink made by fermenting and<br />

distilling sugarcane molasses or sugarcane juice. The distillate,<br />

a clear liquid, is usually aged in oak barrels. Most rums are<br />

produced in the Caribbean and American countries, but also<br />

in other sugar producing countries, such as the Philippines and<br />

India.<br />

The history of rum dates back to the 17th century, when<br />

Caribbean sugar farmers had a serious industrial waste problem.<br />

These planters produced sugar by crushing sugar cane, boiling<br />

the resulting juices, and then leaving the boiled syrup to cure in<br />

clay pots. A viscous liquid would seep out of the pots and sugar<br />

would be left behind. That liquid was molasses. Luckily for the<br />

planters, someone eventually figured out a use for this molasses.<br />

By mixing it with the liquid skimmed off of cane juice during its<br />

initial boiling and fermenting, a serviceable starting point for<br />

destillation was created. And although the exact etymology is<br />

still murky, the liquor this process yielded became known as rum.<br />

Rums are produced in various grades. Golden and dark rums<br />

were historically consumed straight (neat) or with ice (on the<br />

rocks) and also used for cooking. Nowadays, both darker and<br />

lighter rums are still great for cooking and also commonly used in<br />

cocktails with mixers. However, premium grade ones are still best<br />

neat or on the rocks.
