– they beat Nelson 30-26 in the<br />

master Mike Drury said taking<br />
on Nelson had become the<br />
biggest game on the calendar in<br />

Youth Hub gets $300k boost from Rotary<br />

the country’s first purpose-built<br />
youth hub has been boosted with<br />
a $300,000 donation from the<br />
Riccarton Rotary Youth Trust.<br />
Youth Hub Christchurch is<br />
under construction in at 109<br />
Salisbury St, with a focus on<br />
providing services young people<br />
need to improve and maintain<br />
their mental health.<br />
Construction of the $21 million<br />
stage one – which includes a<br />
supported housing wing with 23<br />
bedrooms, a wraparound services<br />
block for youth providers to work<br />
from and an outdoor activities<br />
courtyard – is expected to be<br />
completed in July.<br />
The Youth Hub Trust<br />
will then spend the rest<br />
of the year fitting out the<br />
facility before opening it<br />
progressively from late<br />
<strong>2024</strong>.<br />

Ōtākaro Avon River Corridor<br />
– yellow flag iris – but it’s better<br />
we know it’s there so we can deal<br />
with it.”<br />
“It was especially great to see<br />
the senior class from South New<br />
Brighton School join the bioblitz<br />
and take a closer look at what’s<br />
living all around them, hidden in<br />
plain sight.”<br />
“The team did a great job organising<br />
events this year and will<br />

Caring for the biggest mother of all<br />
A MAMMOTH effort was<br />
undertaken over the weekend to<br />
remove rubbish from the Avon-<br />
Heathcote Estuary and Lyttelton<br />
Harbour.<br />
More than 50 groups took part<br />
in the Mother of All Clean Ups,<br />
held annually on the Saturday<br />
before Mother’s Day.<br />
From 10am to noon, volunteers<br />
from schools, community groups<br />
and workplaces were busy<br />
chatting and picking up litter.<br />
The final weigh in was 2.06<br />
tons. Last year it was 2.37 tons.<br />

“Normally there will be a<br />
single person that has played two<br />
years previously, but to have the<br />
three third-year players this year<br />
does give a lot of experience,”<br />
said Drury.<br />
“Having those boys in the<br />
team with that experience,<br />
leading the other lads, will be<br />
important.”<br />
Drury said a lot rests on the<br />
shoulders of Haig, a talented<br />
first-five-eighth who has<br />
represented Canterbury in touch<br />
and was in the Crusaders junior<br />
camp last year.<br />
“He’s vastly experienced, one<br />
of our third-year players.<br />
“We’re expecting a lot from<br />
him to steer the team around the<br />
park.”<br />

“Jonty Leary, he’s our blindside<br />
flanker, he’s come up from the<br />
under-15s last year.<br />

use of crunchy nuts for added<br />
texture and flavour<br />
Pistachio and lemon cake<br />
Serves 8-10<br />
Ingredients<br />
250g butter<br />
250g caster sugar<br />
100g shelled pistachios<br />
1 lemon<br />
3 eggs<br />
100g ground almonds<br />
1 tsp rosewater<br />
75g plain flour<br />
To decorate<br />
150g icing sugar<br />
2 Tbsp lemon juice<br />
2 Tbsp, chopped pistachios<br />
2 Tbsp crushed crystalised rose petals<br />
A few dried roses (optional)<br />
Method<br />
• Preheat the oven to 150°C fan. Line a<br />
20cm loose-bottomed cake tin with baking<br />
parchment.<br />
• Cream the butter and sugar in a food<br />
mixer until very light and fluffy.<br />
• Process the pistachios to coarse<br />
crumbs using a food processor (you can<br />
chop them by hand if you like). Finely<br />
grate the zest of the lemon.<br />
• Break the eggs into a small bowl.<br />
Beat them with a fork, then add to the<br />
butter and sugar a little at a time with the<br />
mixer still beating. If there is any sign of<br />
curdling, add a little of the flour. Add the<br />
pistachios, ground almonds, lemon zest<br />
and rosewater. Lastly, mix in the flour.<br />
• Transfer the batter into the cake tin,<br />
then bake in the preheated oven for about<br />
45-50 minutes until springy to the touch.<br />
Remove from the oven, leave to settle for<br />
5 minutes then, using a palette knife, ease<br />
the cake from its tin and place on a cooling<br />
rack.<br />
• To make the icing, sieve the icing<br />
sugar into a bowl, stir in the lemon juice<br />
until you have an icing thick enough to<br />
cover the cake and drip down the sides.<br />
Spoon the icing over the cake then scatter<br />
with the pistachios and crystalised<br />
rose petals and, if you wish, a few dried<br />
rosebuds.<br />

Ingredients<br />
500g plain flour<br />
1½ tsp fast-acting yeast<br />
½ tsp sea salt<br />
200g natural yoghurt<br />
3 Tbsp olive oil<br />
100ml warm water<br />
250g green olives, stoned<br />
5 bushy sprigs thyme<br />
3 Tbsp pine nuts<br />
To finish<br />
2 Tbsp olive oil<br />

Method<br />
• You will need a deep-sided baking tin<br />
measuring 20cm x 20cm with a piece of<br />
baking parchment.<br />
• In a large, warm mixing bowl, mix<br />
the flour, yeast and salt. Put the yoghurt<br />
in a jug, whisk briefly to break it up, pour<br />
in the olive oil and the warm water, and<br />
stir well.<br />
• Combine the yoghurt mixture with<br />
the flour and yeast using your hands or a<br />
wooden spoon. You should end up with a<br />
somewhat sticky dough.<br />
• Roughly chop the olives. Chop the<br />
thyme leaves and add to the olives. In a<br />
dry pan, toast the pine nuts until golden.<br />
(Keep a close watch on them as they start<br />
slowly then burn rather quickly.)<br />
• If you are making the dough by hand,<br />
tip on to a floured board and knead the<br />
olives, thyme and pine nuts into it. If<br />
you prefer, use a food mixer fitted with a<br />
dough hook.<br />
• Continue kneading for a couple of<br />
minutes, adding a little more flour to stop<br />
the dough sticking if necessary, then put<br />
it back in its bowl, cover with a clean,<br />
warm cloth and put it in a warm place.<br />
Leave the dough in peace until it has<br />
risen to almost twice its original size.<br />
• Cut it into 6-8 equal pieces (depending<br />
on how large you like your buns),<br />
then shape each one into a round. Place<br />
them in the baking tin, one in the middle<br />
and the rest round the edge, then return<br />
to the warm place, cover with the cloth<br />
and leave for about 30 minutes, until<br />
nicely risen and nudging one another.<br />
• To finish, mix together the olive oil,<br />
chopped thyme leaves and pine nuts.<br />
• Set the oven at 210°C fan. Bake the<br />
buns for about 20 minutes, until well<br />
risen and lightly golden brown.<br />
• Spoon the pine-nut mixture over<br />
the buns and return to the oven for five<br />
minutes.<br />

Stylish Yaris Cross SUV shades its sibling<br />
TOYOTA’S decision to create<br />
an SUV version of the Yaris, its<br />
smallest car, has been a master<br />
stroke, although naming it the<br />
‘Cross’ less so, but even that hasn’t<br />
stopped it becoming one of the<br />
company’s best selling small<br />
vehicles.<br />
It shares the same well-proven<br />
and engineered chassis, suspension<br />
and powertrain from the<br />
fourth generation Yaris.<br />
The end result is a highly<br />
competent, functional, and stylish<br />
vehicle packed with a full suite of<br />
safety and driver assist technologies.<br />
Practicality, more room and<br />
style make even its higher price a<br />
more desirable vehicle for many<br />
compared to the diminutive fivedoor<br />
Yaris.<br />

There is a sizeable difference<br />
between the Yaris hatch and it’s in<br />
favour of the Cross sibling.<br />
Overall, it’s 240mm longer, has<br />

doable and the test vehicle was<br />
comfortable enough on a 200-kilometre<br />
roadie. A direct shift CVT<br />
(continuously variable transmission)<br />
is purpose-built to deliver<br />
on its claimed 3.5L/100km fuel<br />
economy.<br />
The cabin has a sophisticated<br />
and comfortable feel and its<br />
390-litre luggage capacity is good,<br />
but not class leading.<br />
While larger than the Yaris<br />
hatch, the cabin still feels snug and<br />
taller back seat passengers will<br />
lament the lack of rear legroom as<br />
they rest their chin on their knees.<br />
This is tolerable for short<br />
around town trips, which to be fair<br />
is what the vehicle is built for, but<br />
it’s not a fun place for the longerlegged<br />
on long journeys.<br />
This is another Toyota model<br />
that benefits from the company’s<br />
acclaimed Safety Sense systems<br />
and advanced driver assistance<br />
functions. They help those behind<br />
the wheel avoid a wide range of<br />
common crash risks using driver<br />
information, early warnings, and,<br />
if needed, automatic braking and<br />
steering intervention.<br />
The ride and handling exemplify<br />
this, proving neat and tidy, hardly<br />
putting a foot out of place. The<br />
suspension is balanced and nimble<br />
and answered the big questions<br />
asked of it over twisty terrain.<br />
The extra height and ground<br />
clearance means more body roll<br />
if you quicken the pace through<br />
tight corners, and is an area where<br />
the lower slung Yaris hatch has a<br />
distinct edge.<br />
The steering could do with more<br />
road feel, although the weighting<br />
is right on point making the test<br />
vehicle easy to park in even the<br />
most confined parking spaces.<br />
