Chefs Michel Duo « à La Pirogue » / personnalité True comrades-in-arms, Michel Rostang and Michel Chabran must have fallen at a tender age into their respective family soup pots, one in Isère and the other in the Drôme, destined as they were to become star chefs. La Pirogue has been their favourite exotic haunt for over twenty years. In between shooting guineafowl in Wolmar and offering advice on how to cook them in the kitchen, our famous master chefs submit to our menu of questions. Véritables compères, Michel Rostang et Michel Chabran ont mijoté petits dans les marmites familiales, respectivement en Isère et dans la Drôme, avant de devenir chefs étoilés. La Pirogue est leur terroir exotique favori depuis plus de 20 ans. Entre la chasse aux pintades à Wolmar et les conseils en cuisine pour les préparer, nos célèbres maîtres queux se prêtent au menu des questions. What are the words that tickle your tastebuds? The love of good food, curiosity, sharing, palmheart salad with crabmeat and the gratin de chouchou served at the hotel. (They eat this nearly everyday.) What annoys you? Eating “seasonal” produce out of season. Pretentious cooking. You can’t mess about with the classics! Should an appetizer keep you quiet or get you talking? M. Chabran: It should be where conversation begins. M. Rostang: It shuts you up if it’s no good! Is it acceptable to order two entrées? Certainly! Especially here where we get up late: a fine salad followed by smoked marlin. Truffles are overrated and for snobs, are they not? (Pure provocation as both chefs admit to an almost religious devotion to the truffles of their home regions.) M. Rostang: Well, yes. Having them on the menu all year round amounts to a sort of heresy. To appreciate the truffle you must wait for it and eat it fresh from December to February. We serve 200 kilos of them during that period! M. Chabran: Worst of all are the synthetic truffle oils – an abomination! Your favourite sandwich? M. Rostang: Truffle! Toasted slices of leavened bread generously spread with salted Noirmoutier butter and filled with truffles sliced to just the right thickness. You let them rest in cling film for the bread to absorb the flavours. Just before serving, toast on both sides and eat them warm accompanied by a salad dressed with truffle vinaigrette. M. Chabran: Michel’s sandwich. In fact we always invite him to our picnics during the season for just that reason! Television, the media, chefs themselves – are they dictators of taste? M. Rostang: Chefs must not be superstars. And above all it is stupid to pretend that anyone can become a good chef in a matter of months! M. Chabran: I enjoy the theatrical side of the job. After all, what we do is a show, a production, a feast for the senses. La gourmandise, la curiosité, le partage, la salade de palmiste au crabe et le gratin de chouchou servi à l’hôtel. (Ils en mangent presque tous les jours.) Ce qui vous exaspère ? Manger des produits « de saison » hors saison. La cuisine prétentieuse… On ne badine pas avec les classiques ! Une mise en bouche, ça doit faire taire ou faire parler ? M. Chabran : C’est le début de la conversation. M. Rostang : Ça vous fait taire si ce n’est pas bon ! C’est acceptable de prendre deux entrées ? Bien sûr ! Surtout ici où nous nous levons tard : une belle salade suivie d’un marlin fumé. Les truffes, c’est snob et surfait, non ? (Pure provocation, car ces deux chefs vouent une passion quasi religieuse à la truffe de leur région.) M. Rostang : Après tout, oui. C’est même une hérésie lorsque c’est proposé en toute saison. La truffe, il faut savoir l’attendre pour l’apprécier, fraîche, de décembre à février. Nous en servons 200 kg pendant cette période ! M. Chabran : Le pire ce sont les huiles de truffes synthétiques : une abomination. Votre meilleure tartine M. Rostang : Le sandwich aux truffes. Tranches de pain au levain grillées, généreusement tartinées au beurre salé de Noirmoutier et garnie de truffes émincées de belle épaisseur. On met à reposer dans un film plastique pour que le pain s’imbibe des parfums. Au moment de servir, on le grille recto-verso puis on le déguste tiède avec une petite salade à la vinaigrette de truffe. M. Chabran : Le sandwich de Michel. D’ailleurs nous l’invitons à nos pique-niques en saison rien que pour ça ! 11
