Champagne DALLE GRANDI MAISON<br />
L’eccezionalità dello Champagne è dovuta sia a con<strong>di</strong>zioni<br />
del tutto particolari <strong>di</strong> natura ambientale, sia a meto<strong>di</strong> <strong>di</strong> lavorazione<br />
co<strong>di</strong>�cati dall’esperienza secolare e strettamente<br />
regolamentati da norme e leggi dello Stato francese.<br />
Gli unici vitigni utilizzabili in Champagne sono lo Chardonnay<br />
(uva bianca) e il Pinot nero e il Pinot Meunier (uve<br />
nere). È stabilita una severa limitazione <strong>di</strong> ren<strong>di</strong>mento alla<br />
torchiatura: da 160 Kg. d’uva si possono ottenere soltanto<br />
102 litri <strong>di</strong> mosto, che, date le per<strong>di</strong>te in fase <strong>di</strong> vini�cazione,<br />
corrispondono a 100 litri <strong>di</strong> vino.<br />
Da 4.000 Kg. d’uva, l’unità <strong>di</strong> misura tra<strong>di</strong>zionale della<br />
Champagne, che rappresentava la capacità del torchio più<br />
comunemente usato si possono ottenere 2.550 litri <strong>di</strong> mosto<br />
sud<strong>di</strong>visi in 2.050 litri <strong>di</strong> cuvée (ossia 10 pièces o botti da<br />
205 litri <strong>di</strong> mosto �ore o mosto <strong>di</strong> prima spremitura) e 500<br />
litri <strong>di</strong> taille (il mosto della seconda spremitura).<br />
