Industrial applications of high power<br />

ultrasonic<br />

Since the change of the mill<strong>en</strong>nium, high power ultrasound<br />

has become an alternative food processing technology,<br />

applicable to large-scale commercial applications, such as<br />

emulsification, homog<strong>en</strong>ization, extraction, crystallization,<br />

dewatering, low temperature pasteurization, degassing,<br />

defoaming, activation and inactivation of <strong>en</strong>zymes, particle<br />

size reduction, extrusion and viscosity alteration. This can be<br />

attributed to significant improvem<strong>en</strong>ts in equipm<strong>en</strong>t design<br />

and effici<strong>en</strong>cy during the late nineties. Like most innovative<br />

food processing technologies, high power ultrasonics is not<br />

an off-the-shelf technology and requires careful developm<strong>en</strong>t<br />

and scale-up for each and every application. The objective of<br />

this pres<strong>en</strong>tation is to share examples of ultrasonic applications<br />

that have made it to the commercialization stage, its<br />

advantages and limitations, as well as some key learning's,<br />

involving scale up of an innovative food technology in g<strong>en</strong>eral.<br />

Dr. Alex Patist received his BS, MS (Eindhov<strong>en</strong>,<br />

Netherlands) and Ph.D (Florida, USA) in chemical <strong>en</strong>gineering.<br />

In 1999, Dr. Patist joined Cargill Research in<br />

Minneapolis, where he is curr<strong>en</strong>tly a principal research <strong>en</strong>gineer,<br />

leading multiple research- and <strong>en</strong>gineering teams<br />

across the US, Europe, Asia, and Australia. His main responsibility<br />

is creating distinctive value by<br />

taking innovative processing technologies<br />

from concept to commercialization.<br />

industries, with a significant focus<br />

Royal Society of Chemists in the UK and a member of the<br />

European Society of Sonochemistry.
