Time and nature<br />
As long as we live, air, plants, time… all of this exists naturally<br />
around us at all times. They are utterly important to us, for our<br />
lives depend on them, and yet they are often neglected, for they<br />
are so omnipresent that we take them for granted.<br />
Closing our eyes, thinking about the countryside we grew<br />
up in as children. Green rice fields, dew drops glittering in<br />
the sunshine, waking from a slumber, stretching our limbs,<br />
breathing in the fresh and unpolluted air… At that time, we<br />
were so busy fantasizing about skyscrapers and urban sceneries<br />
that we never thought that these times would also end, the days<br />
and nights spent in untainted nature have turned into a far away<br />
memory.<br />
Nowadays, “organic” fruits and vegetables are becoming<br />
rare, “green” has become a synonym of high value, natural<br />
environments need to be protected to exist. Countrymen are<br />
moving into cities, rich men often travel the countryside. People<br />
strive and fight, time flies away, nature is being unnaturally<br />
transformed, and in the end, people exchange their place with<br />
each other through a “wall” but in the end nobody finds what<br />
they are looking for.<br />
“The grass is always greener on the other side”, we always<br />
cherish what we have only once we have lost it. As the Chinese<br />
saying goes: after losing a sheep, it’s not too late to repair the<br />
fence, better late than never. Is it really not too late? Even if it’s<br />
not too late, it’s still time for the human, what about the sheep?<br />
All the culture we threw away, the manners, everything we now<br />
despise: the serenity given by respecting divinity and accepting<br />
fate, the generosity of honoring earth and heaven, the humility<br />
of adoring the divine, and we ignore those whispered callings,<br />
hoping that people drifting in the flow of everyday life would<br />
stop, and listen.<br />
This issue of Taste of Life leads the reader to contemplate<br />
natural beauty and experience the mysteries of time. What the<br />
world has to show is still so rich and varied that it is easy to get<br />
lost. If we were spinning tops, why not decide by ourselves to<br />
rest for a while, and enjoy this moment of serenity to think<br />
about the future?<br />

『 他 鄉 月 兒 圓 』, 我 們 對 自 己 擁 有 的 總 是 逝 去 後 才<br />
知 珍 貴 。 亡 羊 補 牢 , 真 的 未 晚 嗎 ? 就 算 未 晚 也 是 對<br />
人 來 講 , 對 羊 呢 ? 我 們 那 些 被 拋 棄 了 的 珍 貴 文 化 ,<br />
人 文 禮 儀 , 那 份 被 歧 視 的 敬 天 知 命 之 坦 蕩 、 俯 仰 天<br />

的 意 義 就 這 麼 被 同 時 『 消 費 』 掉 了 。 其 實 , 又 哪 裏 能 怪 消 費 者 ,<br />
大 家 都 是 見 了 太 多 『 不 認 真 放 羊 的 孩 子 』、 聽 太 多 次 『 狼 來 了 』<br />

Nowadays, the term « luxury » has become a catch-phrase<br />
for marketing purposes and appears everywhere. This is<br />
why too often the standard of true luxury becomes diluted,<br />
while the literal sense has been lost to lower quality. In fact, this<br />
is no fault of the consumers, we have after all seen too many<br />
unreliable “shepherd boys” and heard too many false “cries for<br />

The company never turned away from its original values, the<br />
carefully researched material, the ancient craftsmanship and<br />
management spirit have been transmitted through six generations<br />
during the last few centuries. In the nineteenth century,<br />
the Loro Piana family from the little town of Trivero were already<br />
known for their business in wool fabric. In 1924, Pietro<br />
Loro Piana started his own business apart from the family,<br />
founding a brand new company that could keep up with the<br />
rapid changing times. It was based in Quarona, and to this day,<br />
it is still the headquarters of Loro Piana as we know it. In 1941,<br />
Franco Loro Piana, Pietro’s grandson took the leadership of the<br />
company. After WWII, he seized the fashion market to rapidly<br />
develop the brand and make Loro Piana the leader in wool fabrics<br />
for men and women. In the 70’s, the company was handed<br />
over to Sergio and Pier Luigi Loro Piana,<br />
the brothers – joint CEOs used<br />
to act alternately as chairman every<br />
three years. In 2013, the company<br />
joined the LVMH group, and after<br />
Sergio Loro Piana passed away, Pier<br />
Luigi Loro Piana became the deputy<br />
chairman, Antoine Arnault the<br />
President, and Matthieu Brisset the<br />
CEO.<br />

discovered by Loro Piana are priceless treasures, like vicuna<br />
from Peru and Argentina, cashmere and baby cashmere from<br />
Mongolia and China, merino wool from Australia and New<br />
Zealand, etc.<br />
Vicuna is considered the queen of the Andes, its hair is qualified<br />
as fibers from the gods, once used as royal tributes by the Incas.<br />
It has an average thickness of 12.5 to 13 microns. Each year, an<br />
adult vicuna can only produce 120g fiber usable for weaving. For<br />
but they are sheared every two years – 250 gr gross every two<br />
years – 125 gross yearly, this species nearly went extinct: consistent<br />
poaching left less than 5000 individuals. In order to continue<br />
protecting this wildlife, in 2008 Loro Piana also built a private<br />
natural reserve in Peru, succeeding in preserving them to reproduce<br />
and quietly live on. Today, local vicunas are over 180 000.<br />

Baby cashmere is obtained from the underfleece of the<br />
Hircus goat foals, with an average thickness of 13 to 13.5<br />
microns, light and soft. It can only be harvested on a goat<br />
combed between 3 and 12 months old, which cannot supply<br />
more than 30 to 40 g. After 10 years of efforts, Loro Piana<br />
has convinced Mongolian and Chinese farmers not to mix<br />
baby goats’ highly valuable wool with the rest of the hairs<br />
from adults, thus granting the world with a unique chance<br />
to enjoy this rare and precious material.<br />
Australia and New Zealand are well-known for their Merino<br />
wool. Each year, the productions of both countries are carefully<br />
sorted and sold at auction. Each time, Loro Piana purchases the<br />
finest lots, especially the topmost quality 1PP and the 30 to 50<br />
best bales among the 3 million for sale. One bale among the<br />
finest is rewarded with the title of “World Record Bale” for its<br />
exceptional fineness. Loro Piana regularly purchases this bale.<br />
Working together with Australian and New Zealand farmers<br />
for a long time, establishing trading partnerships, giving<br />
positive feedback and supporting their work, Loro Piana<br />
encourages them to keep producing the finest Merino<br />

with neutral scarves and elegant jumpers, presenting<br />
the true connoisseurs with a unique gift. The Gift of Kings®<br />

version of the Ballon Bleu de Cartier watch adapts<br />
this ingenious invisible system which brings precious<br />
stones to life and makes the diamonds gleam and<br />
pulsate like the beating of a heart. It carries calibre<br />

Created in 1935, Cadenas is a symbol of sentimental attachment. The watch is<br />
said to have been inspired – like the Zip necklace – by the Duchess of Windsor.<br />
In <strong>2015</strong>, Van Cleef & Arpels reveals a new treasure of Cadenas watches – true<br />
icons among the jewels of the Maison. Adorned in sumptuous finery, the Cadenas<br />
Pavée watch sparkles with diamonds in serti neige style. Its clasp offers increased<br />
security. Two small ceramic beads inside the clasp provide a more resistant fastening.<br />
The hidden, polished side of the clasp lends itself to a discrete personalized<br />
engraving. The upper surface of the case is adorned with princess-cut diamonds,<br />
while round diamonds – in serti neige style setting – illuminate the case, clasp<br />

形 態 呢 ? 甚 至 讓 我 們 大 膽 猜 測 , 若 有 情<br />
感 可 視 的 六 維 空 間 , 那 裏 就 會 有 幸 福 的<br />
時 光 , 它 們 顏 色 明 快 、 觸 感 細 膩 、 質 地<br />
輕 然 ; 莊 重 的 時 光 則 表 现 現 出 色 澤 深 沈 、<br />
觸 感 凜 冽 、 質 地 硬 朗 。 精 神 與 物 質 生 為<br />
一 體 , 生 命 的 承 繼 與 歷 史 的 興 衰 不 再 僅<br />
止 於 口 耳 相 傳 , 記 憶 可 以 被 隨 心 截 取 、<br />
贈 予 ...... 當 然 那 裡 是 沒 有 鐘 錶 這 種 東 西<br />
的 , 所 以 它 們 便 成 為 了 我 們 這 四 維 空 間<br />
不 能 驾 駕 馭 時 間 之 生 命 的 『 特 產 』。 這 樣<br />
想 想 , 不 免 覺 得 『 四 維 特 產 』 與 『 時 間<br />
織 物 』 的 相 遇 突 然 變 得 有 趣 起 來 , 就 讓<br />
我 們 一 起 來 做 個 異 想 天 開 的 影 像 實 驗<br />
吧 。<br />
In the movie "Interstellar", Nolan depicts a five<br />
dimension world where time can be controlled. "Time"<br />
takes the shape of huge book cases or gigantic looms, it<br />
can be searched, skimmed through or shifted. This kind<br />
of imagination, as much as it gives viewers great visual<br />
effect, also holds a part of specualtion. In theory, the<br />
life forms in that world are close to gods for humans,<br />
so they also should have a greater expectation for the<br />
beauty around them.<br />
When time can cris-cross until it becomes a visible<br />
network, then maybe it can be woven into a variety of<br />
shapes? We could even wildly guess, if a six dimension<br />
world could be perceived by our senses, there could be a<br />
time of happiness, with bright colours, delicate textures<br />
and light material. Times of gravity would bear dark<br />
colours, sharp textures, and strong material. Spirit and<br />
matter are born as one, the continuation of life and<br />
the prosperity and downfall of history no longer only<br />
rely on oral transmission, memory can be transported<br />
or given at will... Of course, there are no such thing as<br />
watches there, so they have become a “heirloom” of our<br />
four dimension world, with beings unable to influence<br />
time. Thinking thus, we can’t help but feel that the<br />
meeting of a “Four dimension heirloom” and “ Time<br />
loom” has suddenly become interesting. So let’s have<br />
this imaginary experience!<br />

If there was one place in the outskirts of Paris that deserves<br />
a visit, it is Chantilly. There, fragrances come<br />
from the grass, the trees and the flowers, the air is fresh,<br />
the environment calm and natural. The castle is located<br />
in the north of Paris, first built in the Middle-Ages on<br />
a large rock in the middle of the marshes. The Marshal<br />
at the time of Francois I, the Duke Anne de Montmorency<br />
renovated the medieval castle into Renaissance style.<br />
After his granddaughter married the Prince de Condé, it<br />
also became the stronghold of the renowned Condé family.<br />
The Princes of Condé are the closest kinsmen of the royal<br />
family (Prince de sang). The most famous of them is “le<br />
Grand Condé “, cousin of Louis XIV, his image can be seen<br />
everywhere in the castle. In spite of his numerous martial<br />
victories, because of his betrayal during the Fronde, Louis<br />
XIV banished him away from Versailles to settle in Chantilly.<br />
Later, to make amends to the king, he invited him and 3000<br />
court members from Versailles for a party that lasted for<br />
three days. In preparation for the banquet, the maître d’hôtel<br />
Vatel did not sleep for twelve days running. For the last<br />
day of the feast, on a Friday where Christian tradition dictated<br />
that fish must be served, the fish delivery had still not<br />
arrived. Unable to stand the pressure of failing the Prince,<br />
Vatel committed suicide with his own sword. However, the<br />
fish arrived an hour later, which is why future generations<br />
consider: until the last moment there is still hope! As the<br />
result of this banquet, the two cousins buried the hatchet<br />
and rebuilt kind relations.<br />
The galery of the castle holds a gigantic painting, ordered after<br />
Grand Condé’s death by his son. It is entitled “Repentance” (Le<br />
repentir), representing “Grand Condé”, stopping with one hand<br />
Pheme (goddess symbolizing fame and renown) from proclaiming<br />
his rebellious actions against the King, with the other hand he<br />
urges another Pheme to express his repentance. On the bottom<br />
left, the muse of History tore shameful pages off his book, sitting<br />
on the back of Saturn, god of Time.<br />
After the French Revolution in 1799, the extension of the<br />
castle has been razed to the ground, the family collection has<br />
been confiscated. The last descendant of the Condé family was<br />
killed by Napoleon, leaving no heir, thus the heritage has been<br />
passed to the Prince’s nephew and godson Henri d’Orléans,<br />
Duc d’Aumale, who was only eight years old when he<br />

gave the determining vote for the death of Louis<br />
XVI. So, this family has issues with Napoleon supporters,<br />
republicans, and royalists.<br />
In 1848, another revolution started, the Duc d’Aumale<br />
with his Royal father and the whole family fled to England.<br />
While overseas, he bought back a great part of the family’s<br />
collections. Twenty-three years later (1871), after his wife<br />
and children died in England, the Duc d’Aumale returned<br />
to France alone, and reconstructed Chantilly castle. Since<br />
he had no direct descendants, and because he had personally<br />
experienced the many changes in the country and in<br />
his family, he donated everything to the Institut de France<br />
prior to his death. The only condition was that they are not<br />
to make any changes in the interior display and never lend<br />
anything of the collection, so people can only look at it in<br />
site. The castle we can visit today is in the exact state of origin.<br />
Here is the most well-furnished private library, with a<br />
collection of eighteen thousand books, dating back as far as<br />
the tenth century. The Condé museum also owns the most<br />
important collection of classical paintings in France after<br />

The visitors often wonder why so many paintings are hung so closely all over the<br />
wall, and whether it is by lack of room. In fact, in the 19th century, paintings<br />
were exposed in this way inside one’s house. Therefore, what you can see there, is<br />

The Chantilly four-star hotel near Mont Royal,<br />

The gallery La Tribune gathers Renaissance works by masters like Botticelli, Bellucci,<br />
Fra Angelico, Titian, by 17th and 18th century painters Nicolas Poussin<br />
and Pierre Mignard, French neoclassical painter Jean-Auguste-Dominique Ingres,<br />
by nineteenth century romantics like Delacroix, Delaroche, Scheffer, etc.<br />
The precious collection covers all of the five walls, telling the complete history<br />
of Western classical art. The museum’s greatest treasures are three paintings by<br />
Raphael, one of them was only discovered in 1976. In fact, it has been in the museum<br />
for a long time, but has been considered as one of the 200 copies.<br />

Chantilly?<br />
Speaking of Segway electric vehicles, with its 20 kilometers<br />

Hotel Royal Saint-Honoré, a four-star hotel built in 1924, is called a “Boutique Hotel”, its predecessor<br />

shopping area, near the Opera and the Louvre, the majority of the guests are foreign, mostly Americans<br />
and Japanese. There are not many children, so it is very quiet.<br />

the night before and those of the day to come. For example, the previous day’s revenue, he makes<br />
sure that the old guests are well placed in the room they are accustomed to, etc. Then he follows by a<br />
commercial meeting about the hotel’s situation.<br />
Once the meeting is over, he would proceed to check the hygiene of the rooms. He very carefully<br />
inspects every details of the room, his requirement about cleanliness is almost obsessive, especially<br />
for the bathrooms. Even the slightest dust between tiles would make him call the cleaning staff to<br />
clean up again.Before knowing the guest’s tastes, the room must not leave any kind of smell, be it<br />
cigarette smoke or perfume. Some people may be overly sensitive about some smells, no perfume<br />
would be sprayed in the room, nor any trace of smoke left.<br />
Like every day, everything is going normally, in an orderly manner and in a way he is satisfied with.<br />
This hotel is under his supervision, clean, with excellent services, greeting old guests coming back<br />

一 、 以 信 為 本<br />
誠 信 經 營 , 是 每 一 個 成 功 「 儒 商 」 的 不 二 法 則 。 中 國<br />
近 代 著 名 的 「 紅 頂 商 人 」 胡 雪 巖 曾 說 :「 信 用 是 人 的 第 二<br />
生 命 。」 那 他 又 是 如 何 以 信 用 成 就 了 自 己 富 甲 天 下 的 商 業<br />
帝 國 ? 所 有 商 家 都 知 曉 的 誠 信 道 理 , 在 他 手 中 又 煥 發 出 了<br />
怎 樣 不 同 尋 常 的 力 量 呢 ?<br />
胡 雪 巖 的 「 阜 康 錢 莊 」 剛 開 業 不 久 時 , 來 了 一 位 特 殊<br />
的 客 人 。 這 位 軍 官 名 叫 羅 尚 德 , 在 戰 場 上 拚 殺 了 十 三 年 ,<br />
辛 辛 苦 苦 存 下 來 一 萬 二 千 兩 銀 子 的 俸 銀 。 最 近 , 他 接 到 命<br />

entrepreneur. But cases abound through Chinese<br />
history of Confucian businessmen, who built vast<br />
commercial empires relying on those ideas.<br />
Take the case of Hu Xueyan, a banker who went out of<br />
his way to be fair and to make good on a commitment,<br />
contrary to the conventions of the time.<br />

“Credibility is the second life of a man,” Hu once<br />

Fookang Bank. During the Qing dynasty, a man named<br />
Luo Shangde, who was often called to battle, needed<br />

毫 不 猶 豫 地 將 連 本 帶 息 共 一 萬 五 千 兩 銀 子 , 一 分 不 少 地 付 給 了<br />
兩 人 。 這 事 情 很 快 在 軍 隊 中 不 脛 而 走 , 官 兵 們 紛 紛 將 錢 存 入 「<br />
阜 康 錢 莊 」, 錢 莊 得 以 飛 速 發 展 , 很 快 成 為 分 號 遍 佈 大 江 南 北<br />
的 , 最 具 實 力 的 錢 莊 。<br />
此 事 後 來 流 傳 甚 廣 , 被 認 為 是 胡 雪 巖 日 後 成 為 商 業 巨 賈 的<br />
關 鍵 點 之 一 。 胡 雪 巖 不 因 顧 客 的 變 故 而 違 背 自 己 的 承 諾 , 他 由<br />

儒 商 中 晉 商 的 代 表 人 物 喬 致 庸 , 資 產 曾 達 到 數 千 萬 兩 白<br />
銀 。 清 朝 末 年 , 他 名 下 的 票 號 、 錢 莊 、 商 埠 、 碼 頭 遍 佈 全<br />
國 。 後 修 建 了 規 模 龐 大 的 「 喬 家 大 院 」 做 為 家 宅 , 至 今 保 存<br />
完 好 , 是 著 名 的 山 西 民 居 代 表 建 築 。 作 為 成 功 的 儒 商 , 喬 致<br />
庸 的 經 商 理 念 是 一 信 、 二 義 、 三 利 , 即 以 信 譽 徠 客 , 以 義 待<br />
人 , 利 取 正 途 。 而 他 取 得 成 功 的 另 一 個 要 素 , 是 特 別 善 於 用<br />

來 到 喬 家 , 閻 維 藩 受 到 喬 致 庸 的 盛 情 款 待 。 喬 致 庸 見 閻<br />
維 藩 只 有 三 十 六 歲 , 卻 舉 止 有 度 、 精 明 穩 健 、 精 通 業 務 , 心<br />
中 更 是 喜 愛 讚 歎 。 當 即 提 出 聘 請 閻 維 藩 出 任 喬 家 「 大 德 恆 票<br />
號 」 經 理 。 此 時 , 對 比 在 「 蔚 長 厚 票 號 」 的 遭 遇 , 閻 維 藩 深<br />

Since ancient times, Chinese people have used different<br />
combinations of foods to treat various illnesses. This<br />
delicious medicinal dessert heralds the dawn of spring.<br />
White jelly mushroom reduces facial age spots, making<br />
it a much-sought-after ingredient for beauty care. During<br />
the Qing Dynasty, it was hailed as a must-eat delicacy for<br />
the highest-ranking imperial concubines. It nourishes yin,<br />
reduces inner fire, strengthens kidneys, and prevents hypertension<br />
and arteriosclerosis.<br />
The mildly sweet lotus seeds benefit qi and can heal<br />
most common ailments, while goji berries are a panacea<br />
for kidneys, liver, and eye ailments. Also known as a longevity<br />
fruit, this superfood can calm nerves.<br />
As winter thaws into spring, these three ingredients<br />
— cooked with jiuniang and quail eggs — can alleviate<br />
restlessness caused by seasonal changes. This delicacy<br />
soothes frayed nerves, eases inner fire, and relieves<br />
sleeplessness.<br />
Ingredients (serves 2):<br />
3 cups water (700ml)<br />
⅓ cup lotus seeds (40g)<br />
0.35 oz (dry) white jelly mushroom (10g), or 1 cup (wet)<br />
1 Tbsp goji berries (6g)<br />
1 cup jiuniang (250g)<br />
8 quail eggs, hard-boiled<br />
Crystal or rock sugar<br />
Directions:<br />
1.Soak jelly mushroom in water for 20 minutes. Discard<br />
water and soak again.<br />
2.Remove stalk and cut into pieces.<br />
3.Boil water, add jelly mushroom and washed lotus seeds.<br />
4.Simmer for 30 minutes.<br />
5.Add goji berries, jiuniang, and eggs.<br />
6.Remove from heat after all ingredients are cooked.<br />
7.Add sugar to taste.<br />
Tips:<br />
Don’t pre-soak lotus seeds; soaked seeds cannot be<br />
cooked soft. Add sugar last; it also prevents seeds from<br />
being cooked soft.<br />

TOL: What is your state of mind when you make<br />
patisseries?<br />

different inspirations, it can come from an exhibition that<br />
I saw, someone I met or a landscape, actually all my cakes<br />
show the way I see life. It is very direct in the taste. This is<br />

TOL: DO you mean that one can easily identify<br />
the ingredients when tasting the cake?<br />
C.D: Not necessarily. I have two ways of working the ingredients.<br />
One way is the essence, for example, for the<br />
cake “Absolute lemon”, I wanted to work the essence<br />
of the lemon. To do that, we worked on the lemon, the<br />
juice, the zest, we were working a lot on the cooking.<br />
That is the first way. The otherway can be an overall<br />
work. For instance, one of the iconic creations of the<br />
house is the dessert “Kashmir”, it has this global note,<br />
like a perfume, the saffron is blended with dates, oranges,<br />
and vanilla, but what is interesting is the overall<br />

TOL: What is the source of your inspiration for the<br />
decorations and toppings?<br />
CD: I’ve always thought decoration as the last step.<br />
My inspiration comes from life. For example for the<br />
Green Absinthe cake, in spring in the morning near my<br />
grandparents and my great-grand parents’house, to go<br />
to the stream below the domain, there is a path where<br />
the scent of wild mint and many wild plants emerges. In<br />
addition to all of that, I wanted to transcribe the sounds<br />
and colors on it, to deliver fullness and appeasement. I<br />
also added angelica, because it comes from my home.<br />
When you bite in and taste it, it will make a sound,<br />
which is very similar to the sound of someone walking<br />
on grass. So, the design comes naturally: the color, the<br />
taste and the sound. It’s something very simple: a few<br />
chunks of angelica, some elder flowers, because there<br />
are also many elders in my region! What I like is the<br />
elegance of things, and not the overload.<br />
TOL: What are the criteria of elegance according<br />
to you?<br />
CD: Simplicity, no unnecessary ado, beautiful curves, beautiful<br />
colors. Something quite pure, something that needs to be<br />
appetizing though.<br />
TOL :In your cakes, we can see a lot of colors and it<br />
is full of serenity.<br />
C.D: Really? Actually, it was involuntary at first. One<br />
morning at the end of January, with my team, we were<br />
putting cakes on the shelves, then we took a step back<br />
to see how it looked, there was an almost monochromatic<br />
range: yellow, orange, darker orange, lighter orange,<br />
bolder orange, it was still a uniform color range, so at the<br />
beginning I thought it was a problem. I returned to the office<br />
and I thought, this is not possible. Why do I have the<br />
same color range there? Since I do not work the appearance<br />
first, it was not a willing effect. Then I realized that it is<br />
because I respected the seasons, so in January and February,<br />
we have lemons, oranges, grape fruits, saffron, then<br />
exotic fruits like mango, passion fruit, pineapple, all these<br />
fruits are yellow or orange. I finally told myself this is not<br />
so bad, we will accentuate it, we will keep working on these<br />
monochrome ideas. In fact, people need sun in winter, so<br />
nature provides us fruits that have the color of the sun, like<br />
yellow, orange, they are incredibly lively! I’ve realized that<br />
it is very coherent throughout the year. It means that in<br />
spring, it is very energetic, that’s when the first wild mints<br />
arrive, the rhubarb, angelica, lime. So nature brings atone<br />
to spring: green.<br />
Nowadays, everybody wants answers immediately, and<br />
nature stops us, there is a rhythm of season, there is a<br />
rhythm of nature, there is nothing to do about it!<br />
To make an apple chausson (pie), it takes 7 days. Not because<br />
there are days of rest, it really needs 7 days during<br />
which the dough is spread, extended, folded, swept,<br />
turned, everyday there is a fully manual operation in order<br />
to get this extremely layered and crispy dough. I don’t<br />
know how others make it, at least this is the way I work.<br />
The true luxury is the beauty of the things and the time we<br />
take to make them.<br />
TOL : In your shop, I saw an uncommon French<br />
toast.<br />
C.D: I like things that are a little more gourmet, so I make<br />
it differently. I cut brioche into cubes, then soak them in<br />

a crème brûlée mixture, with cream and vanilla, then I shape<br />
them and cook them for about forty minutes to get them well<br />
colored and very soft. Children love it. It’s funny, because I<br />
think it’s a taste that will remain in their memory, our French<br />
toasts might be to them like the madeleine was to Proust.<br />
TOL: For you, what is the quality that makes a good<br />
patisserie chef?<br />
C.D: Sincerity! This is the first thing. It is doing this job<br />
with a lot of heart, and a willingness to share a pleasure. In<br />
other words, doing with generosity, benevolence and care!<br />
Without sincerity there is no soul, in the professions of arts<br />
and craft, it is this additional soul that always makes the<br />
difference.<br />
Recently, I got this wooden ball. It is a beautiful object, a<br />
game called “Boulingrin” that my mother gave me. It reminds<br />
me that “life is a game”. I also would like to have<br />
this “vanitas” painting, it’s a skull on a table, (for example<br />
in the Vanitas by Philippe de Champaigne). Everything is<br />
vain, whatever happens, we know the end. We do a lot of<br />
things out of vanity, it is what often guides us. So for me,<br />
it is a call to order: be careful, all is vanity, you must keepyour<br />
safe-control.<br />

hot chocolate at Jean-Paul Hévin’s. When the oyster hot chocolate is<br />
served, neither a little spoon nor any sugar are provided. Indeed, once you<br />
take a sip, you understand that nothing more is needed. Oysters are frozen<br />
and fragmented at high-speed, then reduced to a creamy mixture according<br />
to a secret recipe, poured in the hot chocolate, in short, the result is<br />
indescribably delicious, very delicate, a hint of sea flavor, the flavors of<br />
chocolate and oysters enhance each other, with just the right combination<br />
of salty and sweet flavours, warm yet very refreshing, leaving a fragrant<br />
after-taste.<br />
The store also sells a box of four kinds of cheese-filled chocolate, recommended<br />
to serve with Jura wine as appetizers. The first bite gives an unexpected<br />
feeling, a hint of cheese, no choking smell, but is very gently melted<br />

see warm orange cakes. The owner Claire Damon said that the color was not a deliberate choice, but<br />

Art Paris Art Fair <strong>2015</strong> as usual, is held from March 26th to 29th at the Grand<br />
Palais. This exhibition features 140 galleries from more than 20 participating<br />
countries and is headed by Mr. Guillaume Piens. The show introduces modern<br />
and contemporary art, design work, photography and more.<br />
In the field of art, Art Paris fair is the pioneer of exploration. After China last<br />
year, this year’s guests of honor will be Southeast Asia and Singapore. Among<br />
the works presented in the exhibition, 51% are foreign works; many of them<br />
will be shown for the first time in France. Visitors will then feel the diversity and<br />
vitality of the arts.<br />
A part of the artworks has been selected by the specialist of Southeast Asia Ms.<br />
Lola Lenzi, her distinctive style will let the visitors explore unfamiliar realms of<br />
art. Southeast Asian works will be placed in the main hall. The Partners such as<br />
Art Seasons Gallery, Chan Hampe Galleries, and Element Art Space will together<br />
represent Singapore area. Visitors will feel like being transported in Casablanca,<br />
Bangkok, Zurich, Singapore… and other places. Unlike previous editions, Art<br />
Paris Art Fair <strong>2015</strong> also includes up to 30 solo exhibitions, reaching a world record.<br />
This will allow the visitors to savor the depth and consistency of the artists’<br />
work in better conditions.<br />
The exhibition is divided into a number of galleries: the main exhibition area, the<br />
“Promises” exhibition, the Artdesign district, the “Spring in Paris” VIP pavilion.<br />
The participation of the Boisserée, German modern art gallery, and Plutschow,<br />
modern artist from Zurich, give a new skin to the main exhibition. The “Promises”<br />
exhibition is designed to stimulate a new generation of artists around the<br />
world, introduced in 2013, it is a highly anticipated space, 12 galleries under five<br />
years old will be set up for the first time. Regarding Artdesign district, this one<br />
is to navigate at the uncertain boundary between design and modern art, for<br />
the 4th year of the district’s creation, there will be a dozen galleries and editors<br />
such as Sleek Design magazine. As for “Spring in Paris”, it will be devoted to local<br />
artists, such as “Les clefs d’une passion” by Louis Vuitton Foundation.<br />
Each year new ideas and new work visions are revealed thanks to a rigorous work<br />
selection made by the fair. Although the exhibition is only held only a few days,<br />
the Grand Palais is always a hotbed of activities, the art spirit of this exhibit is<br />
more and more influential.<br />
