Die <strong>Histidase</strong> katalysiert die Eingangsreaktion im Hauptabbauweg des Histidins, nämlich die<br />
nicht – oxidative Desaminierung von L- Histidin zu trans-Urocaninsäure.<br />
Bei dieser Reaktion wird NH3 unter Ausbildung einer Doppelbindung eliminiert.<br />
Die <strong>Histidase</strong> ist demnach auch eine Ammoniak- Lyase.<br />
