<strong>in</strong>tRoDUction<br />

<strong>Aflatox<strong>in</strong></strong>, a potent, naturally occurr<strong>in</strong>g microbial carc<strong>in</strong>ogen, is produced<br />

primarily by A. flavus <strong>and</strong> Aspergillus parasiticus (A. parasiticus) <strong>and</strong><br />

constitutes a group <strong>of</strong> approximately 20 related types <strong>of</strong> fungus. figure 2<br />

shows yellow mold, caused by A. flavus <strong>and</strong> A. parasiticus, which commonly<br />

produces aflatox<strong>in</strong>. Although <strong>the</strong> presence <strong>of</strong> o<strong>the</strong>r molds on foods can denote<br />

contam<strong>in</strong>ation, aflatox<strong>in</strong>, <strong>and</strong> <strong>the</strong> molds <strong>and</strong> fungi that produce it, is not visible<br />

<strong>in</strong> contam<strong>in</strong>ated foods.<br />

<strong>the</strong>re are four primary naturally produced aflatox<strong>in</strong> stra<strong>in</strong>s known as B 1 , B 2 ,<br />

G 1 , <strong>and</strong> G 2. two additional stra<strong>in</strong>s, M 1 <strong>and</strong> M 2 are <strong>the</strong> metabolic products <strong>of</strong><br />

contam<strong>in</strong>ated food or feed <strong>and</strong> are found <strong>in</strong> milk <strong>and</strong> o<strong>the</strong>r dairy products. <strong>the</strong><br />

most toxic stra<strong>in</strong>, aflatox<strong>in</strong> B 1 , has been directly l<strong>in</strong>ked to adverse health effects<br />

such as liver cancer.<br />

humans are exposed to aflatox<strong>in</strong> primarily through <strong>the</strong> consumption <strong>of</strong><br />

contam<strong>in</strong>ated agricultural or animal products. o<strong>the</strong>r modes <strong>of</strong> exposure <strong>in</strong>clude<br />

<strong>the</strong> <strong>in</strong>halation <strong>of</strong> tox<strong>in</strong>s through occupational exposure. 6 human exposure to<br />

aflatox<strong>in</strong> has a negative impact on health. exposure can lead to acute or<br />

chronic aflatoxicosis, based on <strong>the</strong> duration <strong>and</strong> amount <strong>of</strong> exposure, <strong>and</strong> can<br />

compound exist<strong>in</strong>g health issues or <strong>the</strong> risk <strong>of</strong> disease transmission.<br />
