which leads to <strong>the</strong> loss <strong>of</strong> liver function. cirrhosis is<br />

most commonly caused by alcoholism, hepatitis B<br />

<strong>and</strong> c, <strong>and</strong> fatty liver disease, but it has many o<strong>the</strong>r<br />

possible causes. Scar tissue replaces healthy liver<br />

tissue—partially block<strong>in</strong>g <strong>the</strong> flow <strong>of</strong> blood through<br />

<strong>the</strong> liver—<strong>and</strong> impairs <strong>the</strong> liver’s ability to control<br />

<strong>in</strong>fections; remove bacteria <strong>and</strong> tox<strong>in</strong>s from <strong>the</strong> blood;<br />

process nutrients, hormones, <strong>and</strong> drugs; make prote<strong>in</strong>s<br />

that regulate blood clott<strong>in</strong>g; <strong>and</strong> produce bile to help<br />

absorb fats—<strong>in</strong>clud<strong>in</strong>g cholesterol—<strong>and</strong> fat-soluble<br />

vitam<strong>in</strong>s.<br />

fumonis<strong>in</strong> A mycotox<strong>in</strong> derived by <strong>the</strong> Fusarium verticillioides <strong>and</strong><br />

Fusarium moniliforme. it occurs as fumonis<strong>in</strong> B 1 <strong>and</strong><br />

fumonis<strong>in</strong> B 2 . fumonis<strong>in</strong> B 1 occurs ma<strong>in</strong>ly <strong>in</strong> maize<br />

(corn), wheat <strong>and</strong> o<strong>the</strong>r cereals. human exposure is<br />

greatest <strong>in</strong> regions where maize products are <strong>the</strong> dietary<br />

staple. fumonis<strong>in</strong> B 1 causes <strong>in</strong>creased apoptosis <strong>in</strong> <strong>the</strong><br />

liver or kidney <strong>of</strong> fumonis<strong>in</strong>-treated animals followed<br />

by regenerative cell proliferation. While <strong>the</strong> acute<br />

toxicity <strong>of</strong> fumonis<strong>in</strong> is low, it is <strong>the</strong> known cause <strong>of</strong><br />

two diseases which occur <strong>in</strong> domestic animals with<br />

rapid onset: equ<strong>in</strong>e leukoencephalomalacia <strong>and</strong><br />

porc<strong>in</strong>e pulmonary oedema syndrome. fumonis<strong>in</strong><br />

B 2 is more toxic than fumonis<strong>in</strong> B 1 <strong>and</strong> frequently<br />

contam<strong>in</strong>ates maize <strong>and</strong> o<strong>the</strong>r crops.<br />

Mycotox<strong>in</strong> it is a toxic secondary metabolite produced by<br />

organisms <strong>of</strong> <strong>the</strong> fungus k<strong>in</strong>gdom, commonly known<br />

as molds. <strong>the</strong> term “mycotox<strong>in</strong>” is usually reserved<br />

for <strong>the</strong> toxic chemical products produced by fungi<br />

that readily colonize crops. one mold species may<br />

produce many different mycotox<strong>in</strong>s <strong>and</strong>/or <strong>the</strong> same<br />

mycotox<strong>in</strong> as ano<strong>the</strong>r species. <strong>the</strong> six major groups<br />

<strong>of</strong> mycotox<strong>in</strong>s <strong>in</strong>clude aflatox<strong>in</strong>s, pautil<strong>in</strong>s, fusariums,<br />

ochratox<strong>in</strong>s, citr<strong>in</strong><strong>in</strong>s, <strong>and</strong> ergot alkaloids.<br />

toxigenic Someth<strong>in</strong>g that produces poison or tox<strong>in</strong>; conversely,<br />

non-toxigenic is someth<strong>in</strong>g that is not able to produce<br />

poison.
