<strong>Cashew</strong> Nut Pie<br />

By Kairaba Beach Hotel, <strong>The</strong> Gambia<br />

This simple recipe takes a lot less time to cook than other deserts.<br />

Served hot or cold, this is delicious with vanilla ice cream<br />

Ingredients<br />

Serves 6<br />

1. 250g cashew nut<br />

2. 150g corn syrup or golden brown<br />

syrup<br />

3 1 table spoon flour<br />

4. 3 whole eggs<br />

5. 5ml vanilla essence<br />

6. 500g sweet dough<br />

Directions<br />

1. Prebake a 20cm pie dish with the<br />

sweet dough<br />

2. Mix all ingredients and pour into<br />

dish<br />

3. Bake at 160°c for 10 to 15 min or<br />

until solid and golden brown<br />

4. Serve with a vanilla icecream<br />
