BALSAMIC AND TOMATO
ROAST CHICKEN
If you’re planning a dinner party, this
recipe is an easy way to impress your
friends.
It takes almost no time to prepare,
but the homely smell of roast chicken
combined with a modern balsamic
twist will have your friends thinking
you are domestic deity in no time.
Delicious served on a bed of potato
mash with a side of greens, this
chicken can also be coupled with
other favourite side dishes.
Warning: after serving this dish once,
be prepared for a flood of RSVPs to
your next dinner party!
What do I need?
• 4 thick slices eggplant, cut
lengthwise
• 4 chicken breasts
• 400g can of tomatoes
• 2 tablespoons salted capers
• ¼ cup balsamic vinegar
• 1 tablespoon olive oil
• 2 tablespoons brown sugar
• ¼ cup basil leaves to garnish
What do I do?
1) Preheat oven to 200 degrees.
2) Place eggplant in bottom of baking
dish and top each slice with a
chicken breast.
3) Combine tomatoes, capers,
balsamic vinegar, oil, and sugar.
4) Spread mixture over chicken and
eggplant.
5) Bake for 45 minutes, or until
eggplant is soft.
6) Top with basil leaves to serve.
TIP: Soak eggplant in water for 30
minutes before baking to ensure it
softens.
