Irish Chicken with<br />
avocado, tomato<br />
and green beans<br />
Preparation time: 15 mins to prepare, 30 mins to cook<br />
Serves: 4<br />
Ingredients<br />
e 4 Irish chicken breasts<br />
e 2 cloves garlic<br />
e 1 red onion<br />
e 1 packet of Irish rocket<br />
e 200g fine Irish green beans<br />
e 24 Irish cherry tomatoes<br />
e 3 ripe avocados<br />
e 1 large bunch Irish mint<br />
e 1 bunch Irish basil<br />
e 6 tblsp sunflower oil<br />
e ½ tbsp. wholegrain mustard<br />
e 2tbsp white wine vinegar<br />
e 2 tbsp honey<br />
Method<br />
1. Marinade in olive oil and garlic for 1 h<strong>our</strong><br />
2. Heat the honey in a pan and add the wholegrain mustard<br />
3. Slice the onion and tomato<br />
4. Bring a pot of water to a boil, add green beans and blanch<br />
for 3-4 minutes<br />
5. Make the vinaigrette by adding the sunflower oil to the<br />
vinegar. Heat a griddle pan till hot.<br />
6. Grill chicken for 30 mins until brown. Cut into large<br />
chunks.<br />
7. Brush chicken with honey mustard sauce<br />
8. Slice avocado and combine with rocket, mint, basil,<br />
tomatoes, onion and green beans<br />
9. Place in a bowl and arrange chicken on top<br />
Method<br />
1. Place Plymouth, peach, lemon & wine<br />
in a glass a squash down (muddle)<br />
the lemons<br />
2. Add ice and shake them up.<br />

Top with prosecco to add bubbles...<br />

Serve with:<br />
Great served on its own or as a main c<strong>our</strong>se with potatoes.<br />
Alternative:<br />
Would also work well with grilled mackerel.<br />
Helpful tip:<br />
Prepare the avocado at the last minute and<br />
rub a little lemon juice over the cut pieces<br />
to stop discol<strong>our</strong>ation.
