Executive Chef David Bush heads up the winery’s onsite kitchen, crafting unforgettable culinary experiences designed to reflect the beauty, charm and agricultural heritage of Sonoma Valley. The winery’s multicourse wine and food pairing is unsurpassed in wine country, offering what one popular food writer described as “small plates that rival the kitchen of any Michelin-starred restaurant.” Chef Bush, whose résumé includes Sonoma’s the girl & the fig restaurant, masterfully pairs his creative dishes with St. Francis’ award-winning wines. The menu changes seasonally but offers an array of gourmet delicacies. Mouthwatering selections include items like slow roasted spice-rubbed shoulder of local lamb tasted alongside the St. Francis 2007 Sonoma Valley Anthem Meritage blend. Chef’s Banh Mi sandwich with grilled sirloin and housemade duck rillette bring out the luscious fruit and spice in the St. Francis 2009 “Old Vines” Zinfandel, a wine rated 91 points by Wine & Spirits. A recent dessert course paired the winery’s 2009 Port, a Double Gold Medal winner at the San Francisco Chronicle Wine Competition, with decadent chocolate fondue. Follow us on Twitter @WineCountryTW
WINE COUNTRY THIS WEEK “My philosophy about wine and food pairing is that there are no rules,” Chef Bush says. “I like to take risks. My ultimate goal is to surprise people and for them to leave with a different view of how wine and food work together.” St. Francis’ dining room, with its tiled fireplace and spectacular vineyard views, is the ideal setting for Chef Bush’s break-the-rules pairings. Guests sit together at a custom-designed round table, guided through each course by an expert host who highlights key components and shares some of the winery’s history. The experience is relaxed, friendly and educational, showcasing the best Sonoma County has to offer. Planted just steps away from the winery’s dining room, is the winery’s new two-acre estate vegetable garden uses organic farming practices to produce a bounty of seasonal vegetables, berries and fruits for Chef’s kitchen. “The garden gives me an opportunity to create wine and food pairings using the freshest seasonal ingredients grown right outside our kitchen door,” Bush says. “I have everything I could possibly want, from lettuces, greens and beets to multiple varieties of heirloom tomatoes, apples and pears.” Seated pairings are held Friday-Sunday at 11 a.m., 1 and 3 p.m. There are two seatings on Mondays and Thursdays at 11 a.m. and 2 p.m. The cost is $38 per person. For a more informal wine and food paring, St. Francis also offers the option of relaxing on the outside patio with a glass of wine or a flight of wines paired with a selection of charcuterie, featuring local cheeses, housemade patés and rillettes. STARS UNDER THE STARS St. Francis Winery’s Free Outdoor Film Festival Returns July 12th Wine and food aren’t the only pairings earning rave reviews at St. Francis. The Winery also pairs its award-winning wines with award-winning movies during its FREE “Stars Under the Stars” summer outdoor film festival. Back for its third year, the festival takes place every Thursday at the Winery from July 12 to August 16. Festival sommelier and film aficionado Christopher Sawyer and St. Francis Winery CEO and President Christopher Silva will host a short discussion of the evening’s film and suggested wine pairing before each screening. “Great movies and elegant wines transport us to another place and time – all the more so under the sky and the stars on a summer night in Sonoma,” Silva says. Seating on the lawn begins at 7 p.m. with a pre-show concert and wine reception, followed by the movie screening at dusk. Guests are welcomed to bring low-backed lawn chairs, blankets and a picnic.
