Chicken Ginger with Spring Onion<br />

Ready in 20 minutes Serves 2<br />

Ingredients:<br />

250ml Chicken Stock<br />

3 x 2cm Fresh Ginger, peeled and cut in to long strips<br />

2 Garlic Cloves, chopped<br />

300g chicken breast, skinless<br />

2tbs spring onion, chopped ½ Onion, cut in to long strips<br />

2tbs Soya Oil<br />

2tbs Oyster Sauce<br />

Method:<br />

Heat oil in a wok or frying pan. Stir chicken and fry until golden brown. Add<br />

chopped garlic, ginger, onion and sauté for 30 se<strong>co</strong>nds. Add chicken stock<br />

and Oyster sauce and bring to boil for two minute. Stir well, then reduce<br />

heat and simmer until the chicken is well done. Serve with rice or noodles<br />

and garnish with spring onions. Enjoy!<br />

The restaurant is in a handy location on the top of Pukekohe main<br />

street next to The Monarch Cafe and you can see the world go by<br />
