lock. Variable capacity vats are also available and are useful even<br />
when only partly filled. These have a floating metal lid, held in place<br />
by an inflatable plastic tyre at the perimeter. Fibreglass vats are occasionally<br />
used as a less costly alternative <strong>to</strong> stainless steel.<br />
Although in the late twentieth century many producers replaced<br />
their wooden vats with stainless steel, wood is again gaining popularity<br />
as a material for vat construction at some small and mediumsized<br />
wineries. The difficulties of maintaining and sanitising the vats<br />
are ever present, but there is less risk of the wine being affected by<br />
reductivity, as will be discussed in Chapter 17. Illustrations of wineries<br />
containing various vats are shown in Figs 8.2 and 8.3.<br />
