Red <strong>Wine</strong> Making<br />
This chapter describes the processing of grapes <strong>to</strong> make red wine.<br />
Various approaches can be, and are, taken in the production of<br />
red wine and many different processes may be used. The following<br />
processes are usually undertaken, but it should be borne in mind<br />
that the list is neither prescriptive nor exhaustive.<br />
9.1 Destemming and crushing<br />
On arrival at the winery, the stalks may be removed <strong>to</strong> prevent<br />
any bitterness tainting the juice. Following this, the grapes can<br />
be lightly crushed. Both these tasks can be performed by the same<br />
machine, a crusher–destemmer, as illustrated in Fig. 9.1. The grapes<br />
