eliminated with a correctly functioning<br />
CAS system.<br />
There are disadvantages, not the least is<br />
that gas stunning has high installation<br />
and operating costs. Another disadvantage<br />
is that insensibility is not instantaneous.<br />
According to Dr. Temple Grandin, of<br />
Colorado State University and renowned<br />
animal welfare expert, “when gas stunning<br />
systems are compared to electrical<br />
stunning, the tradeoff between stressful<br />
reactions to the gas and a reduction<br />
in handling stress by eliminating live<br />
shackling must be considered. Electrical<br />
stunning provides instant insensibility,<br />
but live shackling is definitely bad for<br />
bird welfare.” She adds that “…direct<br />
observation is the only way to verify that<br />
a commercial CAS system is inducing<br />
insensibility with a minimum of<br />
discomfort.”<br />
From a further processing standpoint,<br />
many of the largest U.S. cooking<br />
operations request or require that their<br />
turkey or chicken meat come from gasstunned<br />
poultry. They have found through<br />
studies that meat tenderness improves<br />
with gas stunning and that blood spots in<br />
the meat vanish. This, they say, makes for<br />
a tastier product with more eye appeal.<br />
Still, research continues. Variations in<br />
the gas mixtures used, as well as the<br />
way they are delivered, are constantly<br />
changing. One similar stunning method<br />
is called the Low Pressure Atmospheric<br />
System. In a news release Arkansasbased<br />
chicken processor O.K. Foods,<br />
<strong>Inc</strong>. announced that it has been working<br />
with TechnoCatch LLC and Yvonne<br />
Vizzier Thaxton, Ph.D., Mississippi<br />
State University, to create a new and<br />
more humane way to process poultry.<br />
This procedure differs from other CAS<br />
methods in that it does not use gases. The<br />
company states that “the LAPS system<br />
works by reducing the oxygen level in<br />
poultry live haul cages. This reduction<br />
of oxygen causes hypoxia and a sense of<br />
euphoria similar to climbing to altitude<br />
in an airplane. LAPS is a superior<br />
alternative to conventional electrical<br />
stunning because birds are insensible<br />
before unloading, shackling and stunning,<br />
reducing bird stress levels and eliminating<br />
animal welfare concerns as birds are<br />
introduced to the plant.”<br />
Whether out of concern for animal welfare,<br />
worker safety or meat quality, CAS is<br />
increasingly mainstream. Poultry processors<br />
need to weigh the advantages of gas<br />
stunning against economic considerations<br />
when deciding between traditional electric<br />
water bath stunning and this ever more<br />
popular method of rendering turkeys and<br />
chickens insensible prior to slaughter.UB<br />
