school, in the evenings and on Saturday and Sunday, Dec. 20 and<br />

21, from 4 to 9 p.m. both days. With six less days to ring due to<br />

a late Thanksgiving, a full schedule is needed to raise the most<br />

Dear Neil: When is the<br />

best time to transplant a<br />

navel orange and grapefruit<br />

tree Also, I have lemon and<br />

Mexican lime trees in pots.<br />

The lime tree has given no<br />

fruit. Should they be planted<br />

in the ground<br />

Transplant those in late<br />

winter, just before the burst<br />

of spring growth. None of<br />

those is winter-hardy here,<br />

so you’re going to have to<br />

make provision to keep<br />

them above freezing at all<br />

times. We have had several<br />

years of mild winters in Texas,<br />

but history has proven<br />

that we’ll eventually have<br />

another of those notable<br />

cold spells some day, probably<br />

sooner rather than later.<br />

At that time, all the tender<br />

plants that people have been<br />

setting out will meet their<br />

fates. Your plants all need to<br />

be grown in large patio pots<br />

and put into a greenhouse<br />

or large sunroom in the winter.<br />

Dear Neil: I have a question<br />

I’ve never seen addressed<br />

in your column. We<br />

set out lots of pansies and<br />

violas this fall, and they<br />

have been virtually eaten to<br />

the ground by cardinals. Is<br />

there anything we can do, or<br />

should we plant something<br />

else<br />

You’re correct: that is<br />

an unusual situation. You<br />

probably saw the cardinals<br />

feeding on the plants, and if<br />

so, I’ll yield to what you’ve<br />

seen. However, it sounds<br />

a lot more like nighttime<br />

rabbit damage. For either,<br />

I would suggest placing an<br />

alternate food source near<br />

the beds. Cardinals love<br />

black, oil-type sunflower<br />

seeds. Rabbits like winter<br />

ryegrass. Some gardeners<br />

put blood meal around their<br />

pansies to repel rabbits, but<br />

dogs roll in it and can do<br />

just about as much damage.<br />

Annual garden pinks would<br />

be the best winter-hardy replacement<br />

should you decide<br />

to do that.<br />

Dear Neil: I have a hedge<br />

row of redtip photinias<br />

that are about 10 feet tall. I<br />

want to prune them back to<br />

around 4 feet. Can I do that<br />

without killing them When<br />

should I do it<br />

Please forgive my boldness,<br />

but you’re about to<br />

make a serious mistake.<br />

Redtip photinias are our<br />

tallest landscaping shrubs<br />

in Texas (to 18 feet tall and<br />

10 or 12 feet wide if unpruned).<br />

To cut them back<br />

as severely as you describe<br />

would weaken the plants so<br />

badly that they might never<br />

look right again. It also<br />

would increase the odds<br />

of spreading Entomosporium<br />

fungal leaf spot into<br />

the weakened tissues. That<br />

disease is rampant, and we<br />

have no effective control for<br />

it. But, to your answer, the<br />

time to prune redtips would<br />

be January – before spring<br />

growth breaks out. Try to<br />

leave as many leaves as you<br />

can to sustain the plants.<br />

Spend the balance of this<br />

winter improving the soil.<br />

Use a rear-tine rototiller<br />

to pulverize the soil thoroughly.<br />

Work in shredded<br />

tree leaves and compost. If<br />

you have access to well-rotted<br />

manure, put a couple<br />

of inches of it in, too. Add<br />

a couple of inches of Canadian<br />

peat moss and one inch<br />

of finely ground pine bark<br />

mulch as well. Finally, add<br />

one inch of washed brick<br />

sand, or, better, one inch of<br />

expanded shale. Rototill to<br />

blend all of those materials<br />

Dear Neil: Snails are devouring<br />

my new transplants.<br />

What can I do to stop them<br />

Use snail and slug baits<br />

around the plants. You’ll<br />

have to replace the bait each<br />

time you water or after every<br />

rainfall. Sevin dust also<br />

works well. Dust it across<br />

the plants’ leaves and the<br />

adjacent soil. If you have<br />

loose, organic mulch that<br />

might be harboring them<br />

when they’re not feeding,<br />

you might want to remove it<br />

carefully until the problem<br />

abates.<br />

is weak and erratic.<br />

Answer: Coral bark maples<br />

struggle with Texas’ intense<br />

summer sun, also with<br />

alkaline soil. Your tree looks<br />

like its older leaves probably<br />

scorched in the hottest<br />

part of the summer. You<br />

may want to consider moving<br />

it to a more protected location<br />

this winter. As for the<br />

branching, that should selfsolve.<br />

My tree showed some<br />

of the same growth initially,<br />

but it outgrew it.<br />

video game, but the gift card.<br />

No matter the occasion,<br />

you’re sure<br />

to receive at least<br />

one. Gift cards offer<br />

many conveniences.<br />

For the giver, it<br />

means you won’t<br />

make a mistake on<br />

size, color or style.<br />

For the recipient,<br />

it means not having<br />

to return a<br />

gift that didn’t fit,<br />

you already had or<br />

just wasn’t you. One important<br />

item to consider is the<br />

stability of the retailer. In<br />

some cases with a company<br />

going out of business, their<br />

gift cards might be rendered<br />

worthless.<br />

recommendations that we<br />

should all consider when<br />

choosing just the right gift<br />

card.<br />

Should it be a retail card<br />

or bank card<br />

Most of us are familiar with<br />

the retail gift card. These are<br />

cards that are bought at and<br />

can be used at a particular retail<br />

establishment. Some retail<br />

gift cards can be used at<br />

other establishments owned<br />

by the corporation. These establishments<br />

would be listed<br />

on the back of the card.<br />

Bank gift cards are gaining<br />

in popularity. These cards<br />

carry the logo of credit, debit,<br />

or charge card companies<br />

like American Express, MasterCard,<br />

Visa or<br />

Discover. They may<br />

be issued directly<br />

by the company or<br />

by a bank, mall or<br />

other institution<br />

and carry the credit<br />

card company logo.<br />

The advantage of<br />

bank gift cards is<br />

that they can be<br />

used anywhere<br />

that type of credit,<br />

debit or charge card<br />

is accepted; and it may allow<br />

the owner to withdraw cash<br />

at ATMs. Mall cards, however,<br />

can only be used at the<br />

named mall or mall chain.<br />

While gift cards may seem<br />

are some things you need<br />

to know before buying one.<br />

Here are some things to look<br />

for when buying gift cards:<br />

! Expiration dates. Does<br />

the card have an expiration<br />

date It should be visible on<br />

the card or packaging.<br />

! Can a card be replaced<br />

if it is lost or stolen before its<br />

value has been used up and<br />

is there a fee<br />

! Can the bank card be<br />

used to obtain cash from an<br />

ATM, and is there a fee<br />

! Is there a monthly<br />

maintenance fee The fees<br />

will kick in automatically,<br />

whether the card has been<br />

used or not.<br />

! Some bank cards allow<br />

the user to ‘reload,’ or add<br />

more value, to the card. If<br />

this is an option, check to<br />

see if there are charges for<br />

reloading.<br />

For those who give or receive<br />

gift cards, consider the<br />

following recommendations:<br />

Givers should review all<br />

terms and conditions of a retail<br />

or bank gift card before<br />

purchase. You may decide<br />

against a card with a lot of<br />

fees that could drain the value<br />

of the card or one where<br />

this information is not readily<br />

available. Givers should<br />

send the original receipt with<br />

the card so the recipient can<br />

more easily obtain a replacement<br />

if the card is lost or stolen.<br />

Recipients should review<br />

the terms and conditions of a<br />

gift card immediately upon<br />

receipt. If there is an expiration<br />

date, use the card immediately.<br />

If you receive a bank<br />

gift card, avoid transactions<br />

that will result in fees.<br />

experts as among the highest-risk<br />

periods for heavy<br />

alcohol consumption, it’s<br />

clear that Christmas trees<br />

aren’t all that tend to be<br />

well lit during the holidays.<br />

Even people who generally<br />

are light drinkers sometimes<br />

overdo it at holiday<br />

parties, according to Mimi<br />

Martinez-McKay of the<br />

Texas Department of State<br />

Health Services.<br />

“The problem isn’t so<br />

much what we think of as<br />

binge drinking,” Martinez-<br />

McKay said. “It’s more a<br />

matter of people consuming<br />

more alcohol than they’re<br />

accustomed to in a concentrated<br />

time period.”<br />

The risks of this spike<br />

in excessive drinking are<br />

obvious: Increases in traffic<br />

accidents, domestic violence<br />

and sexual assaults,<br />

as well as adverse health<br />

effects ranging from simple<br />

hangovers to hospital admissions<br />

for alcohol toxicity<br />

reactions.<br />

If you expect to be present<br />

at parties or other settings<br />

where alcohol will be<br />

served, health experts urge<br />

an advance planning approach<br />

based on limiting<br />

consumption and protecting<br />

your safety and that of others<br />

if you do over-indulge.<br />

Keeping holiday drinking<br />

under control is largely a<br />

matter of being aware that<br />

seasonal parties make it<br />

easy for a two-drink-pernight<br />

person to over-imbibe<br />

without really trying.<br />

One key, McKay said, is to<br />

limit the number of holiday<br />

parties you attend. This approach<br />

has the dual benefit<br />

of reducing the total number<br />

of drinks consumed and<br />

lowering the risk of driving<br />

while intoxicated. Even if<br />

you have only one or two<br />

“just to be polite” drinks per<br />

party, the cumulative effect<br />

can be similar to binge<br />

drinking at one party.<br />

Another smart approach<br />

to managing your alcohol<br />

intake is to drink water and<br />

other non-alcoholic beverages<br />

— especially if you already<br />

have consumed two<br />

or more alcoholic drinks.<br />

Smart holiday hosts increasingly<br />

are offering<br />

guests refreshing alcohol-free<br />

drinks, including<br />

non-alcoholic wines, champagnes<br />

and beers. This not<br />

only makes life easier for<br />

those who are trying to<br />

moderate their intake but<br />

also reduces potential social<br />

awkwardness for nondrinkers.<br />

Hosts also should be<br />

aware that pushing drinks<br />

on guests is not only unwise<br />

but inconsiderate to guests<br />

who are trying to take a<br />

smarter approach to getting<br />

in the holiday spirit.<br />

‘How Fast’ and ‘How<br />

Much’ both matter<br />

If you’re blessed with exceptional<br />

will power, a simpler<br />

option exists: decide<br />

upon an absolute limit in<br />

advance and “cut yourself<br />

off” when you reach it. Recognize,<br />

too, that your rate<br />

of consumption matters<br />

just as much as the total<br />

amount you drink. Blood<br />

alcohol concentration is<br />

the key factor in intoxication<br />

level, so downing three<br />

drinks in 20 minutes will<br />

have far greater impact<br />

than if you consume them<br />

at one-hour intervals.<br />

How do you know what<br />

your blood alcohol level is<br />

Hand-held breath analysis<br />

devices are available at<br />

many pharmacies, but they<br />

aren’t always practical to<br />

carry and tend to be less<br />

accurate than those used<br />

by law officers.<br />

An easier approach is<br />

to be aware of the rate at<br />

which alcohol is metabolized.<br />

In general alcohol is<br />

burned off at the average<br />

rate of about one standard<br />

drink (for example, one<br />

flute of champagne) per<br />

hour. Be aware, though,<br />

that total body alcohol concentration<br />

rises faster for<br />

a person with a small body<br />

mass than for a larger individual.<br />

Other key factors in how<br />

quickly alcohol builds up<br />

in your blood include fat<br />

content and gender. Leaner<br />

folks feel intoxicated more<br />

quickly because fat slows<br />

alcohol absorption, and<br />

women metabolize alcohol<br />

differently than men, resulting<br />

in partially metabolized<br />

alcohol staying longer<br />

in the bloodstream.<br />

The result: a man may<br />

take five drinks to reach a<br />

blood alcohol concentration<br />

of .08 while a small woman<br />

may reach that same level<br />

with only two or three<br />

drinks.<br />

It’s smart, then, to limit<br />

total consumption, drink<br />

slowly, adjust consumption<br />

to your body type, and consume<br />

food as well as drink<br />

to further slow alcohol absorption.<br />

Finally, if you do feel<br />

you’ve celebrated a bit too<br />

vigorously, be safe and considerate<br />

by taking a cab<br />

Here are some suggestions<br />

Holiday blues<br />

There are lots of factors<br />

that can contribute to an<br />

older person’s sadness or<br />

apathy around the holiday<br />

season such as the loss<br />

of a spouse, sibling or a<br />

close friend. Some seniors<br />

feel alone and isolated because<br />

their grown children<br />

and grandchildren live far<br />

away. While others may<br />

feel blue because of finanial<br />

concerns, poor health<br />

too many rich, high-calorie<br />

party temptations, treats<br />

loaded with sugar and opportunities<br />

to drink too<br />

much. Toss in a busy holiday<br />

schedule and it’s easy<br />

to feel tired, unhealthy,<br />

overweight and generally<br />

depressed.<br />

So should you just avoid<br />

all those holiday foods Actually,<br />

no, since that can<br />

leave you feeling deprived<br />

and more likely to finally<br />

over-indulge. Instead, use<br />

common sense and moderation.<br />

Limit alcohol consumption<br />

and enjoy your favorite<br />

holiday foods, but in<br />

reasonable-sized portions<br />

and without going back for<br />

seconds.<br />

And don’t forget exercise.<br />

It’s often ignored in busy<br />

or because they’re unable to<br />

perform routine holiday activities<br />

like shopping, baking<br />

or even attending religious<br />

services.<br />

How to help<br />

Depending on what’s<br />

making your mother blue<br />

during this holiday season,<br />

here are some tips that may<br />

help:<br />

■ Be a good listener: Talk<br />

to your mom about how<br />

she’s feeling and why. Very<br />

often just being able to<br />

share feelings with someone<br />

can help.<br />

■ Prevent isolation: Encourage<br />

family members<br />

to be around your mom as<br />

much as possible during<br />

the holidays. If you can’t be<br />

there physically, be sure to<br />

call more often.<br />

■ Find community help:<br />

Contact her church or other<br />

community resource where<br />

someone may be able to stop<br />

by for a visit, or pick her up<br />

for a religious service or<br />

community activity.<br />

■ Ease her financial guilt:<br />

If your mom is on a tight<br />

budget, be sure she doesn’t<br />

feel guilty if she can’t afford<br />

to buy the grandchildren<br />

fancy gifts. It’s not what the<br />

holidays should be about.<br />

■ Lend a helping hand:<br />

If poor health or physical<br />

limitations are causing her<br />

blues, lend her a hand with<br />

shopping, decorating and<br />

other holiday preparations.<br />

■ Suggest volunteering:<br />

Many churches or civic<br />

groups would love her help<br />

to find volunteer opportunities).<br />

Helping others is<br />

a great way to forget your<br />

own troubles.<br />

■ Watch the holiday spirits:<br />

Alcohol consumption for<br />

the holiday season, and alcohol<br />

is a depressant that<br />

can intensify the problem.<br />

■ Go for a walk: Exercise<br />

is a natural antidepressant<br />

holiday schedules, yet studies<br />

show that even small or<br />

moderate amounts of exercise<br />

can lift your spirits.<br />

It’s also a great way to burn<br />

those extra calories of the<br />

season.<br />

Lastly, don’t let depression<br />

rule your life. Holiday<br />

socializing is a great way<br />

to combat the blues. Make<br />

the effort to go and meet<br />

people at a party, or just call<br />

up a friend to go for coffee<br />

and talk about interesting<br />

things. Spending time with<br />

others and refocusing your<br />

thinking on positive things<br />

you enjoy is your goal.<br />

Eating right, exercising,<br />

taking a realistic view of<br />

so encourage your mom to<br />

go for a daily walk, or if possible,<br />

take one with her.<br />

Watch for depression<br />

There’s a big difference<br />

between feeling sad or blue<br />

and being chronically depressed.<br />

If your mom’s blues<br />

linger beyond the holidays<br />

into the New Year, she may<br />

have a more serious problem.<br />

Here are the signs to<br />

watch for:<br />

■ A persistent feeling of<br />

sadness.<br />

■ Lost interest in hobbies<br />

or activities that she formerly<br />

enjoyed.<br />

■ Feeling worthless or<br />

hopeless.<br />

■ Inability to sleep or<br />

sleeping too much.<br />

■ Loss of energy or motivation.<br />

■ Not eating or eating too<br />

much.<br />

■ Trouble thinking, concentrating<br />

and making decisions.<br />

■ Feeling anxious, rest-<br />

How to cook your goose<br />

Hunting season has been<br />

under way for more than<br />

three months now, and<br />

hances are a good many<br />

f you have a freezer well<br />

tocked with everything<br />

rom dove breasts to venison<br />

teaks.<br />

Game meat is far more<br />

utritious than domestic<br />

but it does require different<br />

cooking techniques. Take<br />

venison, for example. Venison<br />

is very lean and what fat<br />

there is in the meat should<br />

be removed; it’s the fat that<br />

sometimes contributes to<br />

the ‘gamey’ taste that some<br />

folks complain about.<br />

I am often asked questions<br />

such as “are wild hogs good<br />

to eat” or “doesn’t venison<br />

have that ‘gamey’ taste”<br />

I’ve found it impossible to<br />

answer these questions<br />

with a blanket statement. I<br />

often reply with something<br />

like this: “If you were going<br />

to a hog farm to purchase<br />

your pork chops, would you<br />

choose the oldest boar Likewise,<br />

you wouldn’t choose an<br />

older bull for your T-Bone<br />

steaks! Younger game animals<br />

in good condition obviously<br />

make better table<br />

fare than older ones. This is<br />

not to say that venison from<br />

older bucks, if prepared<br />

properly, is not good eating.<br />

I always use the center ham<br />

cuts, tenderloins and backstraps<br />

for steaks and grind<br />

the rest for sausage or, add<br />

beef fat to it and make venison<br />

burgers.<br />

Because of its “dry” nature,<br />

larger cuts of venison<br />

must always be cooked with<br />

moisture. I’ve slow-cooked<br />

many venison hams with the<br />

end result a flavorful, tasty<br />

piece of meat. Slow-cooking<br />

at a low temperature is the<br />

key to preparing roasts from<br />

game animals. I usually season<br />

the roast well with my<br />

favorite dry seasonings and<br />

a couple of bay leaves, and<br />

using a sharp knife, make<br />

incisions into the roast and<br />

insert pieces of bacon, slivers<br />

of garlic and onion or jalapeno<br />

pepper. Then, covered<br />

with slices of fatty bacon<br />

and a little butter on top, I<br />

place the roast in a covered<br />

cast iron kettle and bake<br />

slowly for about 10 hours at<br />

200 degrees. The meat falls<br />

off the bone and is well received<br />

at the dinner table<br />

when served with carrots,<br />

potatoes and onions (which I<br />

add to the roast a couple of<br />

hours before serving).<br />

Making barbecue from<br />

these larger cuts is another<br />

great way to please the<br />

home. I do a lot of my cooking<br />

on a Smokin’ Tex (www.<br />

smokintex.com) electric<br />

smoker, and I’ve found it<br />

to be a very easy, carefree<br />

method of tenderizing larger,<br />

tougher cuts of meat. I<br />

simply place the roast in a<br />

double layer of heavy duty<br />

foil, add barbecue sauce<br />

and allow to smoke, uncovered<br />

a couple of hours, using<br />

hickory, plum, peach or pecan<br />

wood. Then, wrapped in<br />

the foil, the roast is allowed<br />

to smoke at 200 degrees for<br />

up to 12 hours or so, or overnight.<br />

This method makes<br />

some of the best tasting,<br />

most tender barbecue imaginable.<br />

I often smoke cuts<br />

of wild hog, which have flavorful<br />

fat, with venison and<br />

blend the two for chopped<br />

barbecue.<br />

Chicken fried venison<br />

steak is better tasting than<br />

the best beef round steak,<br />

to my way of thinking. I use<br />

a tenderizing mallet and<br />

pound the steaks, adding dry<br />

seasonings during the process.<br />

Then, I cover the steaks<br />

with milk and refrigerate<br />

several hours before frying.<br />

Dipped in an egg batter and<br />

dusted with flour, the steaks<br />

need only three or four minutes<br />

on each side in hot oil.<br />

Drain the steaks, chop and<br />

sauté an onion in a little of<br />

the remaining oil and pour<br />

a big can of mushroom soup<br />

(with a little water) and you<br />

have smothered steak! Put<br />

a lid on the cast iron skillet<br />

and bake or cook on the<br />

stove top over low heat for<br />

an hour or so to tenderize;<br />

serve with hot rice and hot<br />

dinner rolls.<br />

Preparing and cooking waterfowl<br />

requires a bit different<br />

technique, but if all the<br />

duck dinners you have been<br />

served in the past tasted<br />

like liver, chances are pretty<br />

good the cook didn’t have a<br />

clue of how to prepare and<br />

cook ducks and geese. Lanell<br />

Holland, my wife’s cousin, is<br />

married to the legendary waterfowl<br />

guide Jack Holland.<br />

Years ago, she instructed me<br />

in the proper way to prepare<br />

duck and goose breasts. “It’s<br />

the blood in the meat of waterfowl<br />

that can give it the<br />

strong, liver flavor. Remove<br />

the breast halves and butterfly<br />

them. Then place in<br />

cold water and, using your<br />

hands, squeeze the meat.<br />

This greatly aids in removing<br />

the blood in the meat,”<br />

she instructed. John Bryan,<br />

another friend that guides<br />

for ducks on the Brazos<br />

River, takes the process a<br />

step farther and uses a tenderizer<br />

mallet to tenderize<br />

the breast halves, then he<br />

places them in a pan of cold<br />

water. Waterfowl breasts,<br />

prepared thus, are excellent<br />

when wrapped in fatty<br />

bacon and grilled or, believe<br />

it or not, chicken fried just<br />

like venison steaks. Served<br />

with hot biscuits and cream<br />

gravy, Bryan proved to me<br />

it’s tough to distinguish the<br />

flavor of duck breasts from<br />

chicken fried venison!<br />

Quail and dove can be<br />

prepared and fried just like<br />

chicken. My friend and fellow<br />

outdoors writer Bob<br />

Hood came upon a method<br />

for preparing quail that is<br />

the best I’ve found. He places<br />

a couple of rows of Ritz<br />

crackers in a plastic bag<br />

and crushes them into a fine<br />

meal. Next, in a Dutch Oven<br />

he melts a stick of butter,<br />

then coats the quail pieces<br />

(or chicken wings) in butter,<br />

then covers them with<br />

the Ritz meal. Cooked for<br />

about 1 hour, the quail are a<br />

golden brown. The Ritz meal<br />

batter is crunchy and adds<br />

a great deal of flavor to the<br />

game birds.<br />

If you’re new to cooking<br />

game and game birds, hopefully<br />

these tips will serve as a<br />

good place for you to expand<br />

your culinary skills. Making<br />

great tasting meals from<br />

game animals and birds is<br />

really no great feat, but it<br />

does require a bit of common<br />

sense and adherence to a few<br />

basic rules. In no time, I ex-<br />

pect you will develop your<br />

own list of favorites!<br />

Now is prime time for drift<br />

fishing for blue catfish, and<br />

chances are very good you<br />

live close to a lake or river<br />

that provides good wintertime<br />

fishing. The biggest<br />

blues are landed each year<br />

during the dead of winter.<br />

Savvy drift fishermen employ<br />

a drift rig developed at<br />

Santee Cooper Reservoir. To<br />

tie this rig, begin with a basic<br />

Carolina rig with a 4-foot<br />

leader. The big difference<br />

between the Santee Rig and<br />

the Carolina Rig is a small<br />

floater positioned about 6-<br />

bait. This float keeps the<br />

bait up off bottom during the<br />

drift, making it much easier<br />

is a favored bait of drift fishermen,<br />

but fillets from rough<br />

fish such as carp or buffalofish<br />

also make good baits for<br />

big blues. If wind speed is<br />

much above 12 knots, use a<br />

drift sock or a couple of plastic<br />

5-gallon buckets on the<br />

windward side of your boat<br />

to slow your drift.<br />
