quite old, however the person for whom it was
intended was not present.
From The A&S Mistress
Report by Alicia Hennenberg
Greetings and thank you for the opportunity to serve you as A&S
Minister. I do not yet have a drop dead but I am looking for 1 or 2.
Many hands make light work
Ice Dragon will soon be here, be sure to stop in and see the many
and varied works of the artisans of out kingdom at the pent. If you've
entered something (Viviant) make sure to see Isolde for details about
registering your entry with the A&S 50 challenge. She will be giving
away a stupendously spiffy gift to the lucky winner. Ice Dragon also
keeps our scribes busy this time of year. They are furiously finishing
fabulous scrolls for all the pent winners. Have you hugged a scribe
today? IF not,why not?
Spring is not far off and soon our events will move outdoors. Pennsic
will be a large event, and there are some new people in our
group. In conjunction with our chatelaine I would like to organize an
A&S day situated around preparing for outdoor events. If you are
interested in teaching a class or would like to see a class taught
please contact me. I will have more details next month Hopefully
thinking warm thoughts will expedite winters demise.
We have a rich and varied A&S community from the subtleties of
food, the ornamentation of paper, the finery of clothes the Joy of
music and dance, to the fine science of flinging rocks. I look forward
to working with them all. Seek them out and learn something new
Hold this shield wall through the
fight
Not trumpet call nor clash of arms
Will stay thee from thy duty
On Rhino shield will go
Foes be raining, blow on blow
Elandris banner raised on high
Over all the company nigh
When at last the time has come
Space in Valhalla's hall you've won
At that time your arms you'll lay
And sleep the sleep of champions
In that fire lit hall you'll be
Filled with peace and be pain free
Quaff the mead, drink the wine
Savor the best of golden times
That mead hall where you'll sit and
dine
Meet friends and foes of former times
The bards will sing of fights and wars
You'll pause a moment…remembering
Remembering Durlome Rakesh d'Mithnan called Dwarf
Back in the early times, when we were all much
younger and the world was a brighter place,
there lived a man named Durlome Rakesh
d'Mithnan. Son of Hannibal of the
Rhydderich Hael and a high-born Castilian
lady, grandson of Morgan Argante Elandris;
Durlome, known as Dwarf, was the sworn man
of Morgan Elandris to the end.
Through the years, he took part in raids on the
Midrealm and traveled far through all the
lands that were once the East Kingdom. He
was one of the original Rhinos of the Elandris
Shieldwall, protecting the pole-arms-men and
shield-men. The sheer mass of the men of the
Shieldwall was calculated to press the enemy,
and in many battles Elandris was seen leading
charges to break through the enemy lines. With
Mthumbal, Hak, Stor Dodlig and others, the
Rhinos’ fierce reputation was feared throughout
the Known World.
Dwarf was a soldier. His preferred weapons
form was sword and shield, though he did delight
in large heavy maces and mass weapons
he referred to as ‘weapons of mass destruction’
long before the term acquired other connotations.
He concentrated on melees and the arts
of war, not the arts of the tournament. His
task was to make the spears and pole-arms
more effective. His driving purpose was to protect
his Baroness. His lifeblood was his loyalty
and that loyalty defined his friendships
and his life in the Society.
In a more modern parlance, Dwarf - as Greg
Tamutis was known to his many friends - was
a sturdy pier upon which the Rhydderich
Hael, Shire and Barony, was built and his influence
lasts to this day.
Dwarf joined the Society in Fredonia when
the Rhydderich Hael was centered there. He
had graduated from the college and was working
there when he got involved with the organization.
Ever thinking of others, he sold his small car
and bought an Impala – the better to transport
the members of the fledgling group to New
York City, Toronto, Philadelphia, New England
and beyond; exposing the members of
what was a very isolated group from the far
Western Marches - what is the now the Kingdom
of AEthelmearc - to the major characters
and movements that were shaping the Society
of that time. And to give you a better idea of
just how different life in the SCA was then,
the Impala held six people and all their SCA
stuff for the weekend. It was a smaller world
then in many ways.
8
He met the Lady who was to be his wife,
Catalina de la Estrella, at Ice Dragon 2. As
she fondly recalls, “I scritched him and he followed
me home – what was I supposed to do?”
Their loving relationship produced a son,
Morgan, named both for Greg and Kathy’s
dear friend Morgan Elandris, and lasted from
that day to January 26, 2011, the day he passed
away.
With his wife, Dwarf continued to contribute
to the local group, the Kingdom, and the Society.
He acquired equipment that was needed
and was a behind-the-scenes work horse for
many years. He welcomed people into his
home to assist them in working on behalf of
the Barony. Looking through the Baronial history,
you can still see old Ice Dragon newsletters
and Domesdays marked ‘Dwarvin
Press’; where the Henschel sisters, Kunegunda
and Roswitha, then Ice Dragon editors,
playfully gave credit for the use of Dwarf’s
mimeograph machine. Kunegunda has since
gone on to be a successful writer for the Buffalo
News. Dwarf and Kat also hosted one of
the first meeting places of the Rhydderich
Hael choir and recorder ensemble led by
Arianna of Wynthrope.
Kat and Dwarf made the first Baronial Pavilion,
a brown and gold 15 foot tall at the center,
19 foot diameter round tent, in their 8 X 50
foot trailer home. That tent, one of the first of
the movement toward more historically accurate
tents at Pennsic, served as a meeting
place for the Barony and saw many meetings
of the War Council of the East when Morgan
Elandris was War Leader.
Our Dwarf, as with many dwarves, was
known for his facility with tools and fire. At
the Pennsic that featured Hurricane Danny as
an unwelcome guest, Dwarf’s fire was one of
the few in the entire encampment that would
stay lit. It did alarm the autocrat a bit as the
wind caused the flames to stream 8 to10 feet
or more to the side of the fire pit. The brown
and gold pavilion was noted as one of the very
few tents that did not drop in the storm: courtesy
of Dwarf-manufacture and technology.
Dwarf enjoyed the softer side of Society life.
In his intermittent forays into Mongol culture
he happily encouraged the art of belly dancing.
He also cultivated an appreciation of the
cooking and brewing arts, most notably where
the two met in happy harmony in raisins in
the bottom of the Glugg pot. While cleaning
in the kitchen after an event, Dwarf and
James O’Neill did the sensible thing and ate
all the left –over Glugg-soaked raisins, not realizing
they were quite high-test, and the two
were found later in the evening with Dwarf
attempting to put himself through the automatic
dishwasher and James tucked into a corner
singing ‘Lily Marlene’ into a Spangen
Helm because he liked the sound of the echo.
His friends will fondly recall his broadreaching
curiosity and willingness to experiment.
A number of old Society helmets can
attest to his work with James O’Neill to determine
the effect of real weapons on armor, as
can a junk vehicle one of the crew was going
to have hauled away. It is amazing the damage
a Pike-maul can do to a Chevette.
9
In the later days of the Barony, around about
A.S. XX, Dwarf worked with James O’Neill
and Roderick of Basing to establish the Frieland
Legion – the East Kingdom Artillery –
under the patronage of Morguhn Sheridan,
then King of the East. In addition to assisting
with the building of the guns, he helped establish
the routines and safety practices used
when acting as signal corps for the Pennsic
battle staff. There are several photos of him
commanding one of the cannon crews at field
and woods battles. His son had an interesting
childhood explaining to his teachers and
classmates that he really DID have a cannon
in his backyard.
Around A.S. XV, Kat and Dwarf stepped
back from the Society to concentrate on raising
their son though they kept in touch with
their many friends, eventually moving to the
Canton of Beau Fleuve where Kat still lives.
Many old friends continued to game regularly
with Dwarf. He was also active in other
groups including Klingon Fandom.
Dwarf was a good man with a wicked sense of
humor and an abiding love for and allegiance
to his friends. He could be called on and
counted on in the Society and outside of it.
His work enabled the progress of others in the
Society, including Master James O’Neill,
Baroness Morgan Elandris, Mistress Arianna
of Wynthrope, Duke Sir Morguhn Sheridan
and Sir Andreas Hak. He influenced the people
who built the Society we have today.
He was a good friend and I will miss him
fiercely.
Mistress Cori Ghora, OP, OL
I first met Dwarf in the fall of 1978, I believe. I
was a student at SUNY Fredonia, and I think
he was a computer programmer in the college's
IT Dept. He became one of the core members
of the then *Shire* of the Rhydderich Hael. We
all played D&D together regularly, and of
course went to SCA events. Dwarf was kind
of quiet and shy but had a fun sense of humor
and was always willing to lend a hand when
asked. I remember one particular event for
which one of our members had made several
gallons of an alcoholic beverage called
"Glog" (except the "o" should have an umlaut
over it, I think - it's pronounced sort of like the
o's "book"). Glog was made by steeping raisins
in red wine mixed with something stronger -
vodka, maybe? Anyway, it was very sweet, and
a lot of us got a little more inebriated than we
expected on the stuff. Dwarf was on kitchen
cleanup duty for the event, called the "Feast of
Good Friends." Anyway, the cleanup crew were
all a little merrier than usual due to the glog,
and at one point Dwarf got up on the conveyor
belt that sent the dish racks through the site's
industrial dishwasher and ended up sliding on
through. Fortunately, no one tried to turn the
water on and he was no worse for wear coming
out than he was going in. We were a lot sillier
in those days, I think. One of our bywords for
years after that event was "Watch out for the
raisins!" meaning the raisins in the glog, which
soaked up the alcohol to an amazing extent.
Dwarf and Kat also hosted the very first rehearsals
of the Rhydderich Hael Singers in
their home for several years in the 1980s. Dwarf
wasn't a singer but he was gracious about allowing
us to invade their home every week.
(Continued Next Page)
10
(Continued form previous page)
Dwarf was a man of sometimes surprising talents.
Once I went to his and Kat's home for
choir rehearsal and commented on their new
red velvet sofa. Not so, I was informed - it
was their old sofa, reupholstered by Dwarf. I
hadn't known he was so handy until then.
I am very sad to hear of Dwarf's passing, and
wish to offer my condolences to his friends
and family.”
-Arianna of Wynthrope
I don't remember the first time I met Dwarf. I
do remember that he became an instant
"Uncle". Although he was one of the famous
Rhinos of the Elandris shieldwall, the phrase
gentle giant truly applied to him.
There weren't many other kids around when I
joined the SCA and not everyone knew what
to do with me or how to interact. Dwarf was
always at ease, quick to give a hug or listen to
my excited chatter.
I lost touch with him and his wife Kat as I
grew up and moved away, but I will always
hold fond memories of him in my heart.
-Lady Amanda Elandris of Kirkby Lonsdale
ctc, QOC.
I hopped a ride to Pennsic with Dwarf a few
years ago. All right, maybe it wasn’t a few
years ago. Maybe it was 1979. My first
Pennsic. And Dwarf had a VW minibus of
the classic orange and ivory coloring. I wouldn’t
have attended the event without a willing
ride, and that event changed everything. I
abruptly stopped attending classes at Fredonia
State, and started attending the more important
classes of the SCA. Soon enough I
had flunked out of Fredonia, and graduated in
the SCA. But the two remained connected.
You see, in those days, the Rhydderich Hael
was located in Fredonia. Buffalo was the
Shire of Beau Fleuve. And our weekly barony
meetings were held on the Fredonia State
campus, in Fenton Hall, on the first floor in a
room to the left of the main entrance. Forgive
me if I no longer remember the room number.
Every week we would have a brief meeting
which included connecting drivers and riders,
and a preview of all upcoming events within
reasonable commuting distance. Afterwards
might be a dance practice, an arts & sciences
workshop, or other activity. On more than a
few occasions what followed was Dwarf and
me having long sessions of trying to top each
other with punning shaggy dog stories.
Dwarf had an inexhaustible supply of these
stories, and the challenge was to try to pull at
least a few of them into the realm of the middle
ages, or at least the SCA. It didn’t seem
any stretch to ride to Pennsic VIII with
Dwarf and Kat (his girlfriend, and future
wife); though I believe I rode to about only
four events total with them. It was a pleasure
to travel with them, although they were definitely
more refined than I was in those days.
(Continued Next Page) 11
After the weekly meeting and activity, most of
us would repair to Pizza Hut where the manager
allowed us all to partake of the “Family
Special” which consisted of a 49 cent all you
can eat salad bar with the purchase of any
large pizza. The dozen of us could always afford
at least one large pizza. Dwarf didn’t often
join us at Pizza Hut, and didn’t always
make it down from West Seneca to Fredonia,
but he and Kat made it often enough to be an
essential part of the landscape. And sooner
rather than later, most of the people from Fredonia
moved northward to Buffalo. During
that time period I was Baronial Chronicler,
and Dwarf was a patron of the office contributing
sponsoring money to an issue or two,
and at least a time or two, contributing an article.
At that point Dwarf and I also intersected
regularly in D&D groups, and at the steadily
increasing number of local and nearby events.
While Dwarf had a special talent for muttering
vile curses under in breath, he did so in
dwarvish so as not offend young ears. And
that makes an important point, although
Dwarf was a fighter and a hardy soul, he was
also a gentle man with a weakness for some
children. I remember an Ice Dragon at Buffalo
State College where Dwarf was the major entertainment
of the minors.
When it came to fighting, Dwarf was one of
the Four Rhinos of the Apocalypse, a shield
wall consisting of Stor Dodlig (sp?) who was
Dwarf’s mundane brother, Barak Elandris
Muthumbal, and me in my alternate persona
as Barak Elandris Bostar. At Pennsic IX we
made a difference in the field and woods battles.
Dwarf and I were both on the Eastern
team in the first ever Unbelted Champions
Battle that year, 20 men to a side. We were
part of a shield wall with Barak Elandris
Mago and Barak Elandris Linnaeus, and Morgan
Elandris behind us fighting spear. The
East won the battle dominantly.
Dwarf was also active in broadening SCA
combat. One of his pet projects was to create a
list legal flail, but he was ahead of his time.
Given the primitive state of armor at the time
he was never able to convince the marshalls
that his flail was safe, but in today’s list I
think there would be no question. His creation
had a stout shaft and three balls that were not
unlike the duct-taped rolls of toilet paper that
would make list-legal boulders in a later era.
The balls were attached serially by rope.
Dwarf’s creativity came out in various ways,
the shaggy dog stories, the articles, D&D, the
flail. It also came out in his syntax and grammar.
He had ways of inverting sentences that
made Yoda envious. And he moved accents
and emphasis to unexpected places in sentences.
The result is that one I start remembering
the unusual way in which he spoke, I can often
remember whole stories and conversations
from thirty years ago. What a wonderful gift
that is for me. Thank you.
As years passed, we moved in different directions,
Dwarf into different kinds of reenactment;
me applying the lessons of the SCA in
never ending turns as a college student and professor.
I always thought fondly of Dwarf, and
through the years there were always threats to
rekindle our old D&D group. But that never
happened. The last time I saw Dwarf was late
summer of 1997 when I stopped at his house for
a pleasant hour. It seems that almost all my
memories of Dwarf were pleasant hours.
Greg. I haven’t called him “Greg” since the
late 70’s. I was a penniless college student at
Fredonia and he was on staff as a computer programmer.
I took a part time job as the evening
mainframe babysitter and occasional programmer
so Greg and I saw each other almost every
weekday for about a year. He taught me much
about reducing stress by facing work with a
good attitude, though I didn’t realize it at the
time. I remember his evil grin as he ate onion
sandwiches at lunch, that is, two slabs of onion
separated by a thin layer of mustard. Maybe
that’s the real secret to dealing with workplace
idiocy. He was my first professional reference
and helped launch my career.
Greg was smart and funny, with a wicked
streak. It was always good to talk with him. I
remember him telling me about his days in the
military. I remember telling him about this
weird group of people that my girlfriend and I
stumbled across on campus. Before long we
had all joined them in garb and armor. He was
a kind and gentle man who took such a perverse
glee out of hitting people with sticks.
We started playing D&D. He was a fun Dungeon
Master who enjoyed seeing what the
players could come up with when presented
with “creative” situations. He played characters
very well, especially the evil ones. They
were so at odds with his easy going nature that
they always took you by surprise. I remember
DMing. He paid close attention to the game,
even while Ruth and Kat were crafting and
chatting away beside him. Look, it’s Halley’s
Comet! Even after we were both inactive in
the SCA and long removed from Fredonia we
still met regularly to play D&D.
Until I moved to Virginia in January 1996.
Over time I have lost contact with almost
everyone from that time and place in my life,
much to my regret. Dwarf is a bright light in
my memory. He will be missed. I only hope
that Kat, Morgan and all those who were
close to him are able to find comfort in memories
of him. I know that he would want us all
to remember him and smile. Or perhaps, an
evil grin.
Brewers Spotlight
This Months Recipe
Courtesy of Lord Robert l'Étourdi
From the Autocrat for
Champs:
My mead recipe:
This is most definitively NOT a period recipe but it
works for me:
Ingredients:
17-20 lbs of honey (anything light (e.g. NOT buckwheat))
2 gallons of fruit juice (no preservatives...) or 1-96
oz can of wine starter juice.
water to make up 5 gallons total
1 packet Lalvan EC-1118 yeast (yeah, this is why it's
not period)
yeast nutrient
wine makers acid blend
In a 20 quart or larger stockpot, heat water to 160
degrees F. Turn off heat and mix in honey until dissolved.
Heat to 160 degrees, again. Do not heat
beyond 160 or you will boil off the esters that give
the mead it's distinctive nose. Carefully transfer to
fermenter and add juice. Cover and wait until cool
(less than 80 degrees). Add in 5 tsp of yeast nutrient
and 5 or less tsp of acid blend. If the juice that
you are using is very acidic, use less acid blend.
Follow directions on yeast packet for activating dry
yeast. Add yeast to fermenter and stir vigorously.
Cover, install airlock and forget for a month or so.
Since honey ferments much slower than cane sugar, it
may take as long as 3 days to start bubbling in the
airlock. Ferment until bubbling stops. Rack into
clean carboy and wait until clear. Bottle and allow
to age until the sharpness goes away. The aging could
be as little as 8 months or as long as 2 years, depending
on what juice has been used.
Put June 11th on your calendars.... That is, if
you have a cheap calendar that is missing days;
otherwise mark June 11th as Baronial Champs.
We will be at the same site as last year
(Cummings Lodge in Akron Falls Park). Pani
Zosia will be cooking up a Fabulous Feast(tm).
We will have loads of space for fighting, fencing,
archery, thrown weapons, fishing (no, there
will not be a fishing champion), sitting in the
sun (also, no champion), bardic and A&S. And,
the parks service will be spraying poison-ivy repellant,
in the woods, as soon as the snow
melts.
Check out next month's exciting episode of
the Ice Dragon for the full event announcement.
Recipes
These are both recipes we were introduced to by
Duke Cariadoc in Enchanted Ground at Pennsic
26, both can also be found in Cariadoc's Miscellany:
An Islamic Dinner. Since that first experience
we have made both recipes many times
and experimented with variations on them.
Hais (date and nut balls)
2 cups pitted dates, chopped fine (approx 1 lb)
2/3 cup roasted almonds, processed fine
2/3 cup roasted cashews, chopped course
4 tbsp melted butter (or sesame oil)
1/3 cup powdered sugar
1 tsp cinnamon
Combine the dates, nuts and fat in a bowl and
mix thoroughly, combine sugar and cinnamon
in a small bowl and mix well. Shape the date/
nut mixture with spoons or by hand into small
round balls and then roll in the sugar mix. As
long as they are kept dry, these will travel well
and make great camp snacks.
Red Lentil Soup/Chili
Bay leaves are a key ingredient here; they bring
out the best in lentils. This easy
recipe makes a rich, but not heavy meal. Makes
6 to 8 servings. Multiply as
needed.
Ingredients
1 onion, chopped
2 to 3 cloves garlic, minced or put through a
press
¼ teaspoon chili powder or ¼ teaspoon cayenne
pepper
½ teaspoon cuminseed
1 tablespoon olive oil
1 tablespoon butter
2 quarts water or vegetable stock
2 cups dried red lentils, washed
1 carrot, sliced thinly
2 ribs celery, diced finely
1 bay leaf
2 teaspoons salt, preferable sea salt, or to taste
1 tablespoon Dijon mustard
3 tablespoons tomato paste
½ cup parsley
In a stockpot or Dutch oven, sauté the onion,
garlic, and spices in the oil and
butter until the onion is soft.
Add the remaining ingredients and bring to boil,
then reduce heat, cover, and simmer
for 1 to 2 hours or
until reaches the desired thickness. Stir periodically
so indredients will not stick
or burn to the pot.
Correct the seasoning and serve alone or especially
good over steamed rice.
***Note***
When this recipe was used at last event, it was
multiplied by 5. There was plenty to
go around.
dryed by the fire, and put to it a pound and half of
loaf Sugar sifted in a very fine sieve and dryed;
Three pounds of Currants well washed and dryed in a
cloth and set by the fire; When your flower is well
mixed with the Sugar and Currants, you must put in
it a pound and half of unmelted butter, ten spoonfuls
of Cream, with the yolks of three new-laid Eggs beat
with it. One Nutmeg; and if you please, three spoonfuls
of honey. When you have wrought your paste
well, you must put it in a cloth, and set it in a dish
before the fire, till it be through warm. Then make
them up in little Cakes, and prike them full of holes;
you must bake them in a quick oven unclosed until
golden blonde. Afterwards Ice them over with Sugar.
The Cakes should be about the bigness of a handbreadth
at Barnet.
This recipe was developed to use modern items that
most closely matched what could have been found
in a medieval kitchen. While the full documentation
of this recipe runs several pages, I will keep
this article short:
Ingredients:
1 Cup, sweet cream butter
2/3 Cup, un-refined, organic turbinado sugar
¼ Cup, Clover honey
1 beaten egg
2 1/2 Cups, King Arthur band Artisan, Organic allpurpose
flour (flour
from hard red what, unbleached)
2 Teaspoon, fresh lemon zest, minced
2 Tablespoons, fresh squeezed lemon juice.
3/4 Teaspoon, crushed cardamon seeds
1/2 Cup, chopped and sliced almonds
Procedure and explanation:
Heat the oven to 350F. Melt the butter and mix it
with the sugar until well integrated. Add in the
honey, cardamon, almonds and the lemon
juice and zest. Mix well. Add the beaten egg to the
mixture (which will be very sticky). Finally, add in
the flour, however, add it in thirds and make sure
that each batch of flour is mixed in before the next
batch is added. Roll the dough out into small balls
and smash them flat: they should be about the diameter
of a poker chip. Do not dock the cookies, as
suggested in the above recipes. Bake until they turn
"golden blonde". Do not leave the Cirlettes alone
while they bake: they can go from pale, to blonde
to burned very quickly. Check every minute after
the first five minutes.
Since there is no yeast or leavening added to the
mix, the cookies receive all of their lift from steam
trapped inside of the sticky dough. The cookies
should be soft and chewy when finished. However,
if you prefer a crunchy cookie, let the batter sit in
the 'fridge over night. The flour will absorb more of
the liquid in the mix, leaving less available to turn
to steam and puff up the cookies.
“I have served this as a pre-event feast to my
ride on more than one occasion” -Constantinia
Description: A great new way to have eggs for
breakfast or lunch.
Ingredients
3 large eggs
1⁄4c milk
1 dash each salt, nutmeg, ground pepper, & onion
powder.
1 TBS each fresh chopped parsley, basil &
chives
3 slices of bread chunked
3/4 cup 6 slives lunch meat or any cubed left
over meat like beef ,ham or corned beef
1⁄2 oz shredded regiano and monterey jack
cheeses
3 t salsa
Instructions
I start with 3 large eggs and a 1/4 cup of milk
that I whisk together.
To that I add large dashes of salt, nutmeg,
ground pepper, & onion powder. I whisk that
into the egg mixture.
I then add a healthy pinch of both fresh
chopped parsley, and basil and repeat the
whisking.
Two slices of diced fresh whole wheat or rye
bread are mixed into the egg mixture by spoon.
5 slices of the lunch meat of your choice are
diced and added to the egg & bread.
1/2 once each of freshly shredded Regiano and
Monterey Jack cheeses are stirred in,
Pour the whole mess into a greased medium
sized ramekin and bake at 375 for 35 - 40 min.
Or until deeply golden brown on top and sides.
Let cool for 3 - 5 min before serving. I recommend
the universal condiment of salsa as the
perfect way to complete the dish.
“I made this in a dutch oven over an open fire at
Shoote in the Wyldewoods last september. It
was one of 6 over filled dutch ovens filled with
soups. & was the first one emptied of everything;
it was that well liked. I was glad that I sampled
as I made it because no one left any for me. “
-Constantinia
Spicy sausage, Beef & Barley.
1 pound Hot sausage
1 pound Beef chunks
1 pound Barley (uncooked)
Canola oil
Salt
6 Onions cut into rough chunks
5 cloves garlic smashed
Basil
Sage
Water
shredded Parm cheese
Put enough oil in the bottom of dutch oven to
well coat, fry beef on all sides & remove from
pot. Add a bit more oil and do the same with the
sausage. Add onions and garlic to pot and barley
Add enough water to fill pot 2 inches shy of top
& let boil until barley is fully cooked stirring often.
Put back in the sausage & beef and salt, sage
& basil to taste
Simmer another 15 - 20 min stirring often,
Serve each bowl with a generous helping of
fresh Parm cheese
This does make a lot so either be hungry or have
a lot of very hungry friends.
“I was gifted with a very large bag of precooked
meatballs, left over from an Ice
Dragon some years ago. Since I was running
the kitchen at the next event, I had to figure
out what to do with them. They became a
meat pie - which went over very well. I had
some children working in the kitchen who enjoyed
smashing the meatballs! I wrote up the
recipe and have shared it with my family.
They liked it. The only difference is, we put a
pastry top on the pie for the event, instead of
cheese.
I hope this meets your requirements.”
-Fionnghuala
MEATBALL PIE
2 packages precooked Italian meatballs (about
12 per package)
5 or 6 eggs, depending on size
2 prepared, uncooked pie shells
2 cups shredded sharp cheddar cheese
1 half pint of light cream or half-&-half
1 cup chopped fresh dates (don’t use commercial
ones, they contain sugar)
Your choice of two or more of the following ingredients:
½ cup currants (or if you prefer, white
raisens)
½ cup dried cranberries or blueberries
2 cored, chopped apples (or 1 cup chunky
applesauce, without cinnamon)
Thaw meatballs, smash and chop them up to
resemble ground meat. Put them in a large
bowl and add the dates and other fruit. Beat
the eggs with the cream and add half of it to
the meat/fruit mixture. Using your hands,
knead this like you were making meatloaf.
Continue to add eggs and blend, the mixture
should be little runny.
Mound the meat/fruit mixture into prepared pie
shells. Top with cheese, dividing between both
pies and spreading it out to cover the tops as
much as possible. Bake at 350 degrees for about
45 minutes. These directions make two pies - if
you only want one, just divide the ingredients
in half.
Get creative … Try using a prepared quiche
mix instead of whole eggs (meat/fruit won’t be
quite so runny before baking). Or try adding
grated cheddar or parmesan cheese and diced
tomatos to the filling instead of fruit, and using
a pastry lid on top. You could add onions,
mushrooms, any leftover meat that you chop
up, some cooked vegetables, or any other combination
of ingredients that you think your family
would like. You could add more seasoning, or
use less fruit (I recommend keeping the dates,
however, the sweetness is a pleasant surprise).
The pie can be served warm for dinner, or sliced
cold as a snack for later on.
Although this recipe is my creation, you can
turn it into you own individual speciality. It’s
particularly useful when you have company
coming or want to serve things buffet style, the
pie can be made in advance and kept in the
fridge for several days. The cheese crust on top
seals in the moisture.
Recipes Continued
Kushkhananaj
2 cups white flour
1 cup wheat flour
1/2 cup sesame oil
3/4+ cup cold water
1 1/2 cup sugar
1+ cup nuts or dried fruit in any combination,
chopped fine (almonds are traditional, but
anything will work; you can also add various
spices as well)
Combine the sugar and nuts in a small bowl.
Mix the flour together, stir in the oil and water;
kneed briefly then divide into 6 parts. Roll
each part out into a rectangle roughly
8"x16" (wider is better, but it will break if too
thin), scatter the filling evenly and roll up like
a pastry roll making sure to seal the ends and
flap with a bit of water.
Bake on baking sheets (preferably with baking
parchment) at 350 degrees for ~45mins
Hope those are of some use to you ;)
“A story comes with this photo. It was a
Rhydderich Hael baronial champs tourney
in, hmm, maybe 1984? I was having a hot
day (my ONLY hot day fighting, ever), had
won a couple of rounds, lost one but been
competitive and then had a bye, so I was in
the quarter-finals. I was the only woman in
the tourney so all the women were rooting
for me. I faced my knight, Sir Ogami. I
handed my camera to Caterina del Cavallo
and asked her if she could take a picture of
the fight. Hasdrubal was marshaling, said
"Lay-on" and Ogami one-shotted me to the
head and I went flying. Caterina hit the
shutter as fast as she could, and this was
what she got as I tumbled ass over teakettle.
I keep this photo on the wall as a reminder
that humility is a Good Thing. :-)”
