Year 12 Hospitality
Students impress guests with gourmet menu
and table service…….
The five Year 12 Hospitality students greatly impressed
the 35 guests who attended their function on Monday
evening during the last week of Term Two. It was an
opportunity for them to showcase their Food and
Beverage Skills. It was a very ambitious plan for five
students to provide a delicious alternating three course
menu as well as undertake the compulsory table
service assessment. It is a task designed for two
separate classes at TAFE.
Many of the guests were current staff at Junee High
School, parents of the Year 12 students and we also
welcomed some former Junee High School staff: Mr
Carl Doherty, Mrs Lisa Kells, Mr Andrew Denham and
Mr Chris Payne. We thank them all for taking the time
to support the work of our Hospitality students.
It was of credit to the students to have two entrees,
two mains and two desserts of such high quality.
Guests were also greeted with a mock-tail and Turkish
bread to dip in olive oil and dukkah. All yum. Students
had to practise silver service for the bread roll and
filling the guests’ glasses with water and a range of
non-alcoholic ciders.
The students did an extraordinary job transforming the
Textiles room into an ambient restaurant. They also
had to set the tables to industry standard; something
they did meticulously.
The menu of Potato, leek and bacon Soup, Creamy
Pumpkin Soup, Red Current Glazed Rack of Lamb,
Poached Chicken Breast with Creamy mustard sauce,
Chocolate Baskets filled with homemade Vanilla Bean
Ice Cream with berry coulis, strawberry fan and toffee
shards and Rose Water Pavlova Nests with cream,
strawberries, blueberries, berry coulis and rose water
Persian fairy floss. It was just delicious. Guests greatly
appreciated the experience and gave full credit to the
students for a very pleasant, enjoyable evening.
Well done Tayla, Ben, Kara, Keely and Kayla for doing
such a fantastic job and giving up a Sunday to prepare
the menu. Mrs Lee Cooper was also a very valuable
member of the team, donating her time on Saturday to
purchase stock and assisting all day Sunday with the
preparations, we couldn’t have done it without her. The
students certainly appreciated Mrs Cooper’s support as
they presented her with a lovely bunch of flowers on
the evening.
We wish all the students our best for their future
endeavours either in the Hospitality Industry or in
whatever field they decide on. They will certainly be an
asset to their chosen field.
Diners enjoy the hospitality from the Yr 12 students
Thank you so much for the opportunity to work with
you all and see how you have developed over the two
year course to enable you to work together as a team
to complete this huge task. I will treasure your
achievement and the lovely memory at the end of my
time at Junee High School.
