Year 12 Hospitality<br />

Students impress guests with gourmet menu<br />

and table service…….<br />

The five Year 12 Hospitality students greatly impressed<br />

the 35 guests who attended their function on Monday<br />

evening during the last week of Term Two. It was an<br />

opportunity for them to showcase their Food and<br />

Beverage Skills. It was a very ambitious plan for five<br />

students to provide a delicious alternating three course<br />

menu as well as undertake the compulsory table<br />

service assessment. It is a task designed for two<br />

separate classes at TAFE.<br />

Many of the guests were current staff at <strong>Junee</strong> <strong>High</strong><br />

<strong>School</strong>, parents of the Year 12 students and we also<br />

welcomed some former <strong>Junee</strong> <strong>High</strong> <strong>School</strong> staff: Mr<br />

Carl Doherty, Mrs Lisa Kells, Mr Andrew Denham and<br />

Mr Chris Payne. We thank them all for taking the time<br />

to support the work of our Hospitality students.<br />

It was of credit to the students to have two entrees,<br />

two mains and two desserts of such high quality.<br />

Guests were also greeted with a mock-tail and Turkish<br />

bread to dip in olive oil and dukkah. All yum. Students<br />

had to practise silver service for the bread roll and<br />

filling the guests’ glasses with water and a range of<br />

non-alcoholic ciders.<br />

The students did an extraordinary job transforming the<br />

Textiles room into an ambient restaurant. They also<br />

had to set the tables to industry standard; something<br />

they did meticulously.<br />

The menu of Potato, leek and bacon Soup, Creamy<br />

Pumpkin Soup, Red Current Glazed Rack of Lamb,<br />

Poached Chicken Breast with Creamy mustard sauce,<br />

Chocolate Baskets filled with homemade Vanilla Bean<br />

Ice Cream with berry coulis, strawberry fan and toffee<br />

shards and Rose Water Pavlova Nests with cream,<br />

strawberries, blueberries, berry coulis and rose water<br />

Persian fairy floss. It was just delicious. Guests greatly<br />

appreciated the experience and gave full credit to the<br />

students for a very pleasant, enjoyable evening.<br />

Well done Tayla, Ben, Kara, Keely and Kayla for doing<br />

such a fantastic job and giving up a Sunday to prepare<br />

the menu. Mrs Lee Cooper was also a very valuable<br />

member of the team, donating her time on Saturday to<br />

purchase stock and assisting all day Sunday with the<br />

preparations, we couldn’t have done it without her. The<br />

students certainly appreciated Mrs Cooper’s support as<br />

they presented her with a lovely bunch of flowers on<br />

the evening.<br />

We wish all the students our best for their future<br />

endeavours either in the Hospitality Industry or in<br />

whatever field they decide on. They will certainly be an<br />

asset to their chosen field.<br />

Diners enjoy the hospitality from the Yr 12 students<br />

Thank you so much for the opportunity to work with<br />

you all and see how you have developed over the two<br />

year course to enable you to work together as a team<br />

to complete this huge task. I will treasure your<br />

achievement and the lovely memory at the end of my<br />

time at <strong>Junee</strong> <strong>High</strong> <strong>School</strong>.<br />

members to join us at the Railway Café on Friday 26<br />

<strong>July</strong> at 6:30pm for a Lamb Roast Dinner followed by<br />

dessert. The cost is $25.00 per head. Please contact the<br />

school on 69241 666 to book your seats, bookings<br />

must be made by Thursday 25 <strong>July</strong> for catering<br />

numbers to be finalised, dietary needs will be catered<br />

for.<br />
