Farmers used to transport<br />

milk <strong>in</strong> wooden buckets,<br />

barrels or Bitschn from <strong>the</strong> hill<br />

farm down to <strong>the</strong> valley below.<br />

But most of <strong>the</strong> milk stayed<br />

right where it was produced,<br />

where <strong>the</strong> dairymaid turned it<br />

<strong>in</strong>to a variety of cheeses and<br />

butter. Mechanization and <strong>the</strong><br />

construction of access roads<br />

made it possible to transport<br />

<strong>the</strong> fresh milk and cream <strong>in</strong> wooden or alum<strong>in</strong>um conta<strong>in</strong>ers to <strong>the</strong> farms<br />

and <strong>the</strong>n on to local dairies. Thus it became possible to supply local<br />

communities with fresh, high-quality dairy products. At <strong>the</strong> Muhreralm,<br />

visitors can still view some of <strong>the</strong>se orig<strong>in</strong>al Müchbitschn, while <strong>the</strong><br />

youngsters can also look forward to play<strong>in</strong>g with a homemade toy car.<br />

Alp<strong>in</strong>e Flavor – Muhreralm<br />

Everyth<strong>in</strong>g is home-produced – butter, freshly baked bread, cottage<br />

cheese seasoned with herbs and cheese noodles.<br />

How to reach us<br />

Prior to <strong>the</strong> toll station for Ried<strong>in</strong>gtal Nature Park <strong>in</strong> Zederhaus, <strong>the</strong><br />

forestry road branches off towards Grosskessel, where marked path<br />

No. 741 beg<strong>in</strong>s. This path now takes us to <strong>the</strong> Muhreralm (elev. 1,659 m)<br />

<strong>in</strong> about a 1-hour’s walk. We also recommend tak<strong>in</strong>g a hike to <strong>the</strong><br />

Ro<strong>the</strong>nwändersee (see page 12).<br />

Hut Highlights – “The cheese ripens <strong>in</strong> <strong>the</strong> Katschka”<br />

Alpsfahrnis is <strong>the</strong> name<br />

found <strong>in</strong> old documents <strong>in</strong><br />

reference to <strong>the</strong> wooden<br />

equipment that was brought<br />

up for use at alp<strong>in</strong>e huts.<br />

These tools <strong>in</strong>cluded <strong>the</strong> Stotz<br />

and Katschka for process<strong>in</strong>g<br />

milk. The former was used to<br />

skim <strong>the</strong> milk <strong>in</strong> <strong>the</strong> days when<br />

<strong>the</strong>re were no centrifuges.<br />

It was a large wooden dish,<br />

from which it was easy to ladle off <strong>the</strong> cream. The Katschka looks like a<br />

wooden flowerpot, bound by two wooden r<strong>in</strong>gs. The milk curd is allowed<br />

to mature overnight <strong>in</strong> this conta<strong>in</strong>er, becom<strong>in</strong>g <strong>the</strong> Lungau’s famous<br />

Hill Cheese. Small round holes <strong>in</strong> <strong>the</strong> base of <strong>the</strong> conta<strong>in</strong>er allow excess<br />

liquid to dra<strong>in</strong> off. Up at <strong>the</strong> Örgenhiasalm, <strong>the</strong> Stotz and Katschka are<br />

far from be<strong>in</strong>g museum pieces. They still play an important role <strong>in</strong> daily<br />

life.<br />

Alp<strong>in</strong>e Flavor – Örgenhiasalm<br />

Visitors can look forward to doughnuts straight out of <strong>the</strong> pan and hill<br />

cheese that is rich and flavorful. Yet ano<strong>the</strong>r of <strong>the</strong> specialties here is<br />

home-cured bacon, made from <strong>the</strong> pigs raised right on <strong>the</strong> farm.<br />

How to reach us<br />

As a start<strong>in</strong>g po<strong>in</strong>t for a hike, we would recommend <strong>the</strong> car park<br />

located near <strong>the</strong> south entrance to <strong>the</strong> Tauern Tunnel (elev. 1,345 m).<br />

Follow<strong>in</strong>g <strong>the</strong> hik<strong>in</strong>g path we will reach <strong>the</strong> Örgenhiasalm (elev. 1,710 m)<br />

after about a 3-hour walk. For an alternative, take a ride on <strong>the</strong> valley<br />

bus or drive your own car (toll road/€ 8 fee, <strong>in</strong>cl. valley bus dur<strong>in</strong>g <strong>the</strong><br />

ma<strong>in</strong> vacation season) to <strong>the</strong> Schliereralm (elev. 1,495 m). From <strong>the</strong>re<br />

cont<strong>in</strong>ue on foot via <strong>the</strong> Almenwanderweg path, or ride <strong>the</strong> valley bus to<br />

<strong>the</strong> Königalm, after which you will make your way up to <strong>the</strong> Örgenhiasalm<br />

(about a 30-m<strong>in</strong>ute walk). Time on trail from <strong>the</strong> Schliereralm to <strong>the</strong><br />

Örgenhiasalm is about 2 hours.<br />
