He also liked that the location was neither valley floornor mountainside, but a happy medium at an altitude of 200-300 feet.William Hill purchased 200 acres and developed 140 of them. Overthe years, he discovered the Estate was best suited to growing redBordeaux varietals including Cabernet Sauvignon, Merlot, CabernetFranc, Petit Verdot and Malbec. Each of these varietals are bottled individually,and are also blended into a rich,distinctive Estate Meritage.William Hill Estate winery has alsobuilt its fine wine reputation onelegant Chardonnay. The Napa ValleyChardonnay ($22) is light, crisp and fruitforward,while the Reserve ($30) is richand buttery. Available only at the winery,their silky smooth Dijon ClonesChardonnay ($35) has delicious notes ofpear and butterscotch. These three winesare featured in William Hill’s ChardonnayExperience, with three food pairings thatbring out the best in these wines and helpyou explore food and wine dynamics. This is available daily for $20either inside the tasting room, or outside overlooking the vineyards.To really appreciate the special sense of place at William Hill EstateWinery, particularly during harvest season, taking a tour is the best wayto get the full Estate experience! In an intimate group setting, you canlearn about and history and terroir, work on a seasonal activity in thevineyard, and find out about winemaking and barrel aging in the stateof-the-artwinery. You’ll also taste through an exclusive selection of thewines, paired with local artisan foods, and conclude with a sit downtasting of Reserve and Estate wines.
