INGREdIENTS<br />

Water 125ml<br />

Butter 60g/3 tablespoons<br />

Eggs (60g), lightly beaten 3<br />

Vanilla essence 1 teaspoon<br />

Almond essence ½ teaspoon<br />

Sugar 1 tablespoon<br />

Salt 1 teaspoon<br />

Bread flour 600g/ 4 cups<br />

Bread improver 1 teaspoon<br />

Tandaco yeast 2 teaspoons<br />

Add TO THE AUTOMATIC FRUIT ANd NUT dISPENSER<br />

Raisins ½ cup<br />

Sultanas ¼ cup<br />

Currants ¼ cup<br />

Mixed peel 2 tablespoons<br />

Panettone is an Italian, festival bread – rich in fruit and flavour.<br />

Brush with Citrus Glaze (page 136) for additional appeal.<br />

Procedure<br />

1. Place ingredients into bread pan in <strong>the</strong> exact order listed in <strong>the</strong> recipe.<br />

2. Wipe spills from outside of bread pan.<br />

3. Insert <strong>the</strong> bread pan into position in <strong>the</strong> baking chamber and close <strong>the</strong> lid.<br />

4. Press MANUAL SET (LCD Screen shows total time for last recipe programmed<br />

and NUTS selected).<br />

5. Press MANUAL SET (LCD Screen shows PREHEAT –<br />

use arrows to change time to 0).<br />

6. Press MANUAL SET (LCD Screen shows KNEAD 1 – use arrows to change to 5).<br />

7. Press MANUAL SET (LCD Screen shows KNEAD 2 – use arrows to change to 25).<br />

8. Press MANUAL SET (LCD Screen shows RISE 1 – use arrows to change to 60).<br />

9. Press MANUAL SET (LCD Screen shows PUNCH DOWN –<br />

use arrows to change to :15).<br />

10. Press MANUAL SET (LCD Screen shows RISE 2 – use arrows to change to 0).<br />

11. Press MANUAL SET (LCD Screen shows SHAPING – use arrows to change to :0).<br />

12. Press MANUAL SET (LCD Screen shows RISE 3 – use arrows to change to 60).<br />

13. Press MANUAL SET (LCD Screen shows BAKE – use arrows to change to 60).<br />

14. Press MANUAL SET (LCD Screen shows NUTS YES or No –<br />

use arrows to change to NO).<br />

15. Press ‘MANUAL SET’ (LCD Screen shows °C –<br />

use arrows to change temperature to 115°C).<br />

16. Press ‘MANUAL SET’ (LCD Screen shows total time for this recipe 3:30 and NUTS<br />

NO. The word SET appears in <strong>the</strong> lower right-hand side corner).<br />

17. Press <strong>the</strong> ‘BEEPER’ button<br />

(to add <strong>the</strong> fruit manually when <strong>the</strong> beeps sound in KNEAD 2)<br />

18. Press ‘START/PAUSE’ to commence operation.<br />

19. At <strong>the</strong> end of <strong>the</strong> setting, press ‘STOP’. Remove Panettone from <strong>the</strong> bread machine<br />

and bread pan. Cool bread on rack.<br />
