*Roasted Garlic<br />

To roast garlic, slice off <strong>the</strong> top of a whole garlic bulb. Place in a square sheet of foil paper about 20cm x 20cm (8” x 8”). Drizzle 1 tablespoon of olive<br />

oil, place two sprigs of thyme and sprinkle with salt and pepper. Enclose <strong>the</strong> garlic by bringing up <strong>the</strong> sides of <strong>the</strong> foil and pinching <strong>the</strong> package<br />

closed. Bake in a 350°F (175°C) oven for approximately 35 minutes, or until <strong>the</strong> garlic cloves are soft and creamy in texture. To use in <strong>the</strong> recipe<br />

above, allow to cool. Squeeze <strong>the</strong> garlic bulb to extract <strong>the</strong> cloves. Keep <strong>the</strong>m whole for this recipe.
