BSC (HONS) FOOD SAFETY AND QUALITY(Full Time)ObjectivesThe programme is designed to develop <strong>the</strong> necessaryattitude and competence for <strong>the</strong> application <strong>of</strong>scientific principles in <strong>the</strong> control <strong>of</strong> food safetyand quality towards enhancing global food securityand sustainable food production to fulfil consumer,business, economic, social and environmental needs.It aims at preparing pr<strong>of</strong>essionals for <strong>the</strong> food sectorincluding food industries, small and medium foodenterprises, food authorities, food laboratories and food research institutions. Teachingand Learning will impart knowledge, skills and values to develop employability andproduce lifelong learners who can think and act creatively. Teaching methods willfacilitate practical, interactive, critical, reflective and integrative learning.On completion <strong>of</strong> this programme, learners will be able to:Ꮉ Explain <strong>the</strong> chemical, physical, microbiological, nutritional and sensoryproperties <strong>of</strong> food, and <strong>the</strong> factors which affect <strong>the</strong>se properties during manufactureand storage;Ꮉ Apply scientific principles to control <strong>the</strong> chemical, physical, microbiological,nutritional and sensory properties <strong>of</strong> food during manufacture and storage;Ꮉ Apply methods <strong>of</strong> preservation and processing to control deterioration andspoilage mechanisms in foods and to produce safe foods;Ꮉ Apply methods <strong>of</strong> food analysis to assess quality, nutritive value, safety andcompliance with standards;Ꮉ Apply statistical principles to assess <strong>the</strong> performance <strong>of</strong> a food productionprocess as well as <strong>the</strong> quality <strong>of</strong> raw materials and finished products;Ꮉ Participate in <strong>the</strong> development, implementation and maintenance <strong>of</strong> food safetymanagement systems to protect consumer health;Ꮉ Integrate food safety management within quality and environmentalmanagement systems in food businesses;Ꮉ Make a positive contribution to <strong>the</strong> successful development <strong>of</strong> small andmedium food enterprises, food industries and catering organisations;77
