Italian Style Braised Cod - Recipe by Faz Razeen<br />

Cod was once the Vikings favourite dish,<br />

imported to Italy by Venetian merchants<br />

in the 15th century and cooked in the<br />

same way for centuries in the Vicenza<br />

region. The white, mild flavoured flesh<br />

of cod is available throughout the year<br />

and is a wonderful substitute for meat<br />

protein with its versatility making it easily<br />

adaptable to all methods of cooking.<br />

Preparation time: 10min<br />

Cooking time: 20 min - Serves 4<br />

Ingredients:<br />

Cod fillets 450g (1 lb) if frozen cod used,<br />

ensure thoroughly defrosted.<br />

3 tbsps. olive oil<br />

1 tin chopped tomatoes (400g)<br />

1 red onion, thinly sliced<br />

4 cloves garlic, minced<br />

1 tin anchovy fillets in olive oil chopped<br />

(50g)<br />

Handful of black olives, pitted and sliced<br />

Good handful chopped fresh parsley<br />

1 Lemon<br />

Salt and pepper<br />

(100ml/4 fl oz) dry white wine<br />

Method<br />

Heat the olive oil in a large frying pan<br />

over medium heat, slowly sauté onions<br />

and garlic until softened. Add the tinned<br />

tomatoes, stir gently and then add rest<br />

of the ingredients i.e. olives, parsley,<br />

chopped anchovy fillets and finally add<br />

wine. Simmer for 5 minutes.<br />

Place cod fillets in sauce. Simmer for<br />

about 10 minutes, gently turn and cook<br />

each side for 5 minutes.<br />

Serve the dish with vegetables of your<br />

choice.<br />
