From a romantic meal for two, to a celebration dinner for 40 Sponsored by: Italian Style Braised Cod - Recipe by Faz Razeen Cod was once the Vikings favourite dish, imported to Italy by Venetian merchants in the 15th century and cooked in the same way for centuries in the Vicenza region. The white, mild flavoured flesh of cod is available throughout the year and is a wonderful substitute for meat protein with its versatility making it easily adaptable to all methods of cooking. Preparation time: 10min Cooking time: 20 min - Serves 4 Ingredients: Cod fillets 450g (1 lb) if frozen cod used, ensure thoroughly defrosted. 3 tbsps. olive oil 1 tin chopped tomatoes (400g) 1 red onion, thinly sliced 4 cloves garlic, minced 1 tin anchovy fillets in olive oil chopped (50g) Handful of black olives, pitted and sliced Good handful chopped fresh parsley 1 Lemon Salt and pepper (100ml/4 fl oz) dry white wine Method Heat the olive oil in a large frying pan over medium heat, slowly sauté onions and garlic until softened. Add the tinned tomatoes, stir gently and then add rest of the ingredients i.e. olives, parsley, chopped anchovy fillets and finally add wine. Simmer for 5 minutes. Place cod fillets in sauce. Simmer for about 10 minutes, gently turn and cook each side for 5 minutes. Serve the dish with vegetables of your choice. 30 Find us online at www.goldentimes.co.uk
