34 | October 20, 2016 | The orland park prairie Dining Out opprairie.com The Dish Smoked salmon takes Just Shrimp’s starring role Michael Gilbert Contributing Editor The restaurant’s name is Just Shrimp, but co-owner John Mihalos is willing to share a little secret. “Even though we are called Just Shrimp, you don’t need to like shrimp to eat here,” Mihalos said. “Our speciality is fried shrimp, but we have enough of a menu to give people a variety to eat.” One of those non-shrimp options is the smoked salmon sandwich ($9.99), which was introduced earlier this month. It comes served with fries and coleslaw. “We wanted to do an item that was a little on the healthier side but still do a great job with it and make it very tasty,” Mihalos said. “Having [the salmon] smoked in house and then immediately sealing it in a bag allows it to retain the smoked flavor and moisture and improve the taste.” The smoked salmon sandwich is served chilled and on a sweet Hawaiian roll. The size of the salmon is between 6 and 8 ounces. It is seasoned with salt, pepper and brown sugar, and then topped with tarragon-lime mayonnaise, as well as lettuce and tomatoes. Those fearful $10 wont get very far with salmon have probably never dined at Just Shrimp. The salmon is thick, and the fries and coleslaw that accompany the sandwich are plentiful. “The response has been ST<strong>OP</strong> BY AND ENTER very, very good,” Mihalos said. “It’s on a trial basis now, but it’s looking like it’s going to be one of our staple dishes. Another non-shrimp option is the gator po’boy, $12.99 with fries and coleslaw. Diners who order this dish will receive several pieces of lightly breaded and fried bite-sized, alligator served on toasted French bread, with lettuce and tomato, as well as Just Shrimp’s unique po’ boy sauce. “We’ve had the alligator po’boy for about five or six months, and it has become a favorite among many people,” said Mihalos, who owns the restaurant with his daughter, Christina. “We had a customer who was craving it, so we brought it in. The gator does not melt in the mouth like other meats, but it still goes down easy. And Mihalos puts just the right amount of seasoning to make this a must-try dish. The sauce on the sandwich has a dash of sriracha, giving it a mild kick. “Our sauce has a nice little kick to it but nothing that will have you reaching for your water,” Mihalos said. Of course, one cannot discuss the restaurant without talking about the shrimp. “The shrimp will speak for itself,” Mihalos said. “It’s our speciality. We get glowing praise for it.” The restaurant only uses wild-caught shrimp, as opposed to farmed shrimp. Harlem Ave. The rotisserie-style chicken restaurant closed roughly two years ago, but Mihalos said he introduced several popular fish dishes at Chicken Wild that ultimately led to the opening of Just Shrimp. “Trying to find our niche, we introduced fish, and once we started serving our shrimp it kind of had a life of its own,” Mihalos said. “Because the fish and shrimp were the leading items [at Chicken Wild], my daughter suggested that we switch to shrimp and do the type of things that we are doing today. We went with it, and we’ve been blessed ever since.”
