THIS MONTH’S NUTRITION FACT:<br />

With the weather getting colder each day, you can almost<br />

start to taste your favorite holiday dishes being prepared,<br />

and consequently, you’re reminded of the slight guilt you<br />

face after those meals.<br />

Surprisingly, there are many holiday foods you can add<br />

or substitute in those meals that can significantly lessen<br />

that holiday meal guilt without losing taste! For example,<br />

just one cup of sweet potatoes is packed with over half<br />

the daily value of vitamin C and manganese and over two<br />

times the daily value of vitamin A (the most of any plant<br />

on Earth!)<br />

Sweet potatoes are also fantastic for weight loss. Because<br />

of the high glycemic index and fiber, and low calories,<br />

sweet potatoes digest much lower than traditional<br />

potatoes, which helps control appetite and delay hungry<br />

cues. So, the next time you come across a dish with sweet<br />

potatoes during the holidays, don’t pass it up!<br />

RECIPES OF THE MONTH<br />

This Thanksgiving, make this year’s celebration as healthy as can be. Here are two delicious, side dish options for the big meal:<br />

Green Bean Casserole With<br />

Crispy Shallots<br />

1/4 cup olive oil<br />

6 medium shallots, sliced into<br />

rings (about 1 cup)<br />

1 1/2 pounds thin fresh<br />

string beans or haricots verts,<br />

trimmed<br />

1 pound button mushrooms,<br />

sliced<br />

6 large cloves garlic, minced<br />

1 tablespoon chopped fresh<br />

thyme<br />

Cooking spray<br />

3 1/2 pounds sweet potatoes<br />

(about 5 medium), peeled and<br />

cut into 1-inch chunks<br />

1/3 cup honey<br />

1 large egg<br />

1 teaspoon ground cinnamon<br />

3 cups low-fat (1 percent) milk<br />

3 tablespoons all-purpose flour<br />

1/3 cup plus 2 tablespoons<br />

freshly grated parmesan<br />

cheese<br />

1/2 cup finely chopped fresh<br />

parsley<br />

1/4 teaspoon ground nutmeg<br />

Salt and freshly ground pepper<br />

Olive oil cooking spray<br />

Sweet Potato-Pecan Casserole<br />

1/4 teaspoon ground nutmeg<br />

1/8 teaspoon ground ginger<br />

Kosher salt<br />

1 tablespoon packed dark<br />

brown sugar<br />

1/3 cup finely chopped pecans<br />

DIRECTIONS<br />

• PREHEAT THE OVEN to 375 degrees F. Heat the olive oil in a small<br />

skillet over medium-high heat until very hot but not smoking.<br />

• ADD 1/4 CUP SHALLOTS and cook, stirring, until golden brown<br />

and crisp, about 2 minutes. Transfer with a slotted spoon to paper<br />

towels to drain. Repeat with the remaining shallots, cooking 1/4<br />

cup at a time. Reserve the oil in the skillet.<br />

• PLACE THE GREEN BEANS in a steamer basket fitted over a pot of<br />

boiling water. Cover and steam until bright green and still crisp,<br />

about 3 minutes.<br />

• HEAT 1 TABLESPOON of the reserved shallot oil in a large, deep<br />

nonstick skillet over medium-high heat. Add the mushrooms<br />

and cook, stirring occasionally, until the mushroom liquid is<br />

evaporated and they begin to brown, about 12 minutes. Add<br />

the garlic and thyme and cook, stirring, 1 minute. Transfer the<br />

mushroom mixture to a bowl.<br />

• WHISK TOGETHER the milk and flour until the flour is dissolved.<br />

Add the mixture to the skillet and, whisking constantly, bring to a<br />

simmer. Reduce the heat to medium low, whisking occasionally, until<br />

thickened, 10 to 15 minutes. Remove the pan from the heat and stir<br />

in the green beans, mushroom mixture, 1/3 cup parmesan cheese,<br />

the parsley, nutmeg, 3/4 teaspoon salt and 1/2 teaspoon pepper.<br />

• COAT A 2-QUART BAKING DISH with cooking spray. Spoon the<br />

green bean mixture into the prepared dish and sprinkle the top<br />

with the crispy shallots and the remaining 2 tablespoons cheese.<br />

Bake until golden on top and bubbling, about 20 minutes.<br />

Total Time: 1 hr 25 min / Prep: 30 min / Cook: 55 min<br />

Yield: 8 servings Level: Easy<br />

DIRECTIONS<br />

• PREHEAT THE OVEN to 350 degrees F. Mist an 8-inch square<br />

baking dish with cooking spray.<br />

• BRING A FEW INCHES OF WATER to a boil in a pot with a large<br />

steamer basket in place. Put the sweet potatoes in the basket,<br />

cover and steam until tender, 20 to 25 minutes. Transfer the<br />

potatoes to a bowl and let cool slightly. Add the honey, egg,<br />

1/2 teaspoon cinnamon, the nutmeg, ginger and 1/2 teaspoon<br />

salt; whip with an electric mixer until smooth. Spread the<br />

sweet potato mixture in the prepared baking dish.<br />

• MIX THE BROWN SUGAR, pecans and the remaining 1/2<br />

teaspoon cinnamon in a bowl; sprinkle over the potatoes. Bake<br />

until hot and beginning to brown around the edges, 40 to 45<br />

minutes.<br />

mg; Sodium 180 mg; Carbohydrate 31 g; Fiber 3 g; Protein 3 g<br />

IT’S TIME<br />

FOR A REVOLUTION<br />

“I/YOU/WE NEED TO START WORKING<br />

OUT.” This is a very common statement that most<br />

people say and/or hear at some point. It happens every<br />

day - a physician tells a patient that they need to get some<br />

exercise to ward off potential chronic disease; a couple<br />

decides they want to start a fitness routine to get in shape<br />

together; someone feels as though their energy levels and<br />

productivity have slipped and know that physical activity<br />

can make them feel better and more confident. But for<br />

most, it ends there, as simply a thought or a statement.<br />

The CDC reports that only 21% of Americans meet the<br />

recommended levels of aerobic and strength training<br />

shown to decrease the risk for chronic disease and improve<br />

health markers. Research has shown that two of the biggest<br />

reasons for not taking the leap into exercise are lack of<br />

knowledge and the fear of being uncomfortable.<br />

and the intimidation that came<br />

along with it. My trainer worked<br />

with me individually and<br />

designed workouts specifically<br />

for me to do – workouts, at the<br />

age of 48, I never thought I<br />

could do. Taking part in VIVE’s<br />

many exercise classes they<br />

offer is my new lifestyle.<br />

It has always been VIVE’s mission to create an all-inclusive<br />

fitness environment where everyone is able to access the<br />

space, equipment, and expertise they need to reach their<br />

health and fitness goals. But according to the above statistics,<br />

8 out of 10 Americans have barriers that keep them from<br />

beginning an exercise program. VIVE’s Revolution program was<br />

developed as a way to reach those people experiencing the<br />

fear of being uncomfortable and those needing guidance to<br />

get started.<br />

Since its inception in 2015, our Revolution program has<br />

helped over 140 participants begin their fitness quest with<br />

professional support and guidance through a 60-day program.<br />

The program includes 16 sessions with a personal trainer and<br />

access to the facility and group exercise classes offered at<br />

<strong>Vive</strong> during the 60 days. Two nutrition consultations are also<br />

provided to ensure the participant is taking a more holistic<br />

approach to improving their health.<br />

is able to make fitness and healthy eating habits a regular<br />

part of their lifestyle for the long term. Revolution trainer,<br />

Lindsay Marshall, says, “I love that Revolution allows me to<br />

help a client who might have never done any type of physical<br />

activity and is very intimidated by the gym environment to<br />

be comfortable enough to use VIVE’s facilities to improve his<br />

or her health and fitness. Seeing someone learn to create a<br />

lifelong habit of healthy choices is my biggest reward.” Many<br />

of the participants in the program have graduated to become<br />

regular members of VIVE and continue to work with their<br />

trainer for guidance and encouragement.<br />

With the upcoming holiday season, and the ensuing rush to<br />

get into shape in the New Year, VIVE’s Revolution program<br />

might just be the ticket to helping many people overcome<br />

the obstacles that have kept them from enjoying a healthy,<br />

fit lifestyle. Brent Oliver, Revolution coordinator, says, “I have<br />

seen Revolution change people’s lives first hand. When<br />

an individual spends 60 days in the atmosphere that VIVE<br />

provides, along with the guidance and support from our<br />

trainers and dietitians, and they acquire the proven habits<br />

of exercise and nutrition for the long-term, incredible things<br />

happen and goals are exceeded.”<br />
