RECIPE CARDS RECIPE CORN, BLACK BEAN AND TOMATO SALAD 6 SERVINGS SOURCE: WWW.WELLMARK.COM 1 15-ounce can black beans, rinsed and drained 1 small red bell pepper, seeded and chopped 2 cups fresh or frozen corn kernels ½ cup diced red onion ½ cup chopped scallions ½ cup chopped fresh cilantro 1 lime, juiced 1½ teaspoons ground cumin 2 teaspoons hot sauce (recommended: Tabasco) 1 tablespoon extra-virgin olive oil ¼ teaspoon salt 1 avocado, cut in chunks RECIPE STRAWBERRY SPINACH SALAD 4 SERVINGS SOURCE: WWW.WELLMARK.COM 6 ounces baby spinach 8 ounces strawberries (or raspberries), quartered ¼ cup plain, low fat yogurt, preferably Greek yogurt Zest and juice of one lemon 1 tablespoon olive oil 1 tablespoon red wine vinegar 1 tablespoon sugar 1 tablespoon poppy seeds Pinch of salt ¼ cup chopped red onion 1 /3 cup slivered almonds, toasted ¼ cup goat or feta cheese, crumbled DIRECTIONS Combine all ingredients in a large bowl; chill 20 minutes for flavors to blend. Just before serving, add avocado and toss. NUTRITION PER SERVING: Calories 174, Fat 6g (1g saturated fat), Cholesterol 0mg, Sodium 297mg, Carbohydrate 25g, Sugar 5g, Fiber 8g, Protein 6g DIRECTIONS In a large bowl, toss together the spinach and berries. In a small bowl, mix together yogurt, lemon zest and juice, olive oil, red wine vinegar, sugar, poppy seeds, salt and chopped onion. Pour over the spinach and strawberries, and toss to coat. Sprinkle with toasted almonds and cheese. Make it a meal by adding cooked, sliced chicken breast. A: There’s definitely an interest. People want to be healthy and they’re looking for alternatives and want to know what to trust. It kind of speaks to the reality of health care. We have a sick care system and not a wellness prevention system. Q: Do you ever hear from peers or patients who are skeptical about integrative medicine? A: My peers are skeptical, of course. I would’ve been skeptical of me when I started. But it turns out my stuff is not that crazy. My patients are getting better and more doctors are referring their patients to me. I try to make it a point when I talk to other doctors that “my background is the same as yours.” Dr. Suzanne Bartlett Hackenmiller leads a session on Shinrin-yoku – a form of forest or nature immersion – at Prairiewoods Spirituality Center in Hiawatha. Q: What do you prescribe most often and what advice do you most offer patients who seek to improve their health or stay healthy? A: It varies. Magnesium is one thing that has been depleted from our soil and can benefit patients with fibromyalgia to osteoporosis to constipation. Exercise is another. Essential oils and B vitamins and anything that decreases inflammation – techniques that foster the body’s innate ability to heal.
