Caramelised broccoli
and shallot tart with feta
Ingredients
300g peeled
banana shallots
quartered
1 glug of olive oil
300g purple
sprouting broccoli
2 rosemary sprigs
3tbs balsamic
vinegar
320g shortcrust
pastry (square or
round)
60g feta cheese

Tim and Kam Wong from the
Bamboo Cottage in Old Stratford
begin their 10 year celebrations
on 16 February - and that’s the
Chinese New Year.
Bamboo Cottage began life in the
year of the Rat and those born
under this sign are said to be
healthy and able to adapt easily
to the environment – both are
certainly true of this business. The
success is, however, more likely
to be down to the efforts of the
family who have worked incredibly
hard for the past 10 years.

Method
1. Heat oven to 200°C/fan180°C/gas 6 and place a
baking tray inside.
2. Heat olive oil in a large frying pan, add the broccoli
and the shallots, fry gently.
3. Increase heat, add balsamic vinegar and let it
bubble, stirring occasionally, until sticky. Tip into a
roasting tray with the rosemary, roast for 20 minutes
until veg is soft and crisp.
4. Unroll a 320g short crust pastry sheet leaving it on
its paper. Pile the cooked veg into the centre of the
pastry, leaving a 3cm border.
5. Crumble the feta over the veg. Fold the excess
pastry around the filling to form a rough tart. Brush
the pastry edges with milk, leave the tart on the paper.
6. Slide onto the hot baking sheet and bake for 20
minutes until the pastry is golden and crumbly. Serve
with salad leaves.

While he is busy working on the
menu, Tim’s wife and daughter
take a more active role at the
front of house, where you will
be guaranteed a happy and
welcoming smile.
