Macular degeneration One in seven over fifty year olds will get macular degeneration and this will increase to one in four over 80 years. MRS KITCHEN’S CORNER ICE CREAM CHRISTMAS CAKE INGREDIENTS 1/2 cup chopped crystallised ginger 2 tsp brandy 300ml bottle of cream 2 tbsp castor sugar 125 g dark chocolate 15 g butter 2 L carton of vanilla ice cream 1 tsp vanilla essence 2 tsp cocoa 60 g slivered almonds 60 g ginger biscuits BY DAWN Age-related macular degeneration is a growing problem in New Zealand. Total prevalence of this disease is expected to increase to 206,908 sufferers by 2018. This has a major impact on the quality of life and independence of New Zealand’s increasing ageing population. Riskfactors include: 1) Age 2) Genetic and environmental factors i.e. family history 3) Smoking 4) Obesity 5) Blood pressure 6) High cholesterol 7) Poor diet 8) Lifestyle It is the leading cause of severe vision loss and left untreated sufferers become functionally blind within two years. Vision loss relates to the central area of the eye that provides sharp vision and is used for seeing in detail. Consequently reading, driving and recognising faces becomes more difficult. Peripheral vision (the outer area of the eyes) will still function. Treatments can vary, but early detection is a key factor therefore: 1) Regular eye checks 2) Maintaining good health through diet and exercise 3) Monitoring and maintenance of blood pressure and cholesterol These are all essential for the avoidance of this debilitating disease. It is important for us all to aim to be as heathy and functional as we can to maintain quality and enjoyment of life. METHOD Line the base of a 20cm springform cake tin with foil. Combine ginger and brandy, mix well and stand for 10 mins. Whip cream and sugar until thick. Fold in ginger and brandy. Spread mixture over base of cake tin. Put in freezer. Melt chopped chocolate and butter in microwave, cool slightly. Combine half softened ice cream and vanilla. Add chocolate mixture. Stir in cocoa. Mix well. Spread over frozen cream layer. Put in freezer. Spread remaining ice cream over chocolate layer. Microwave almonds until lightly golden. Crush ginger biscuits. Combine and press firmly over frozen mixture.Freeze the cake. This can be made over two days. Serve with fruit salad. Liked by young and old, a cake without fruit.
