Oven baked whole carp<br />

[ “Karliotiko” fish ]<br />

• Cut the peppers, the potatoes and the onion <strong>in</strong>to r<strong>in</strong>gs.<br />

• Spr<strong>in</strong>kle a large p<strong>in</strong>ch of salt and pepper evenly over the fish, and then place<br />

it <strong>in</strong> the middle of a pan.<br />

• Dash a p<strong>in</strong>ch of salt over the potatoes and distribute them around the fish.<br />

• Mix the peppers, the onion, the garlic and the parsley <strong>in</strong> a separate bowl and<br />

then place them over the potatoes.<br />

• Add another p<strong>in</strong>ch of salt and pepper evenly over the vegetable mix.<br />

• Pour over the olive oil and the grated tomato and bake <strong>in</strong> a preheated (180 o C)<br />

oven for approximately 90 m<strong>in</strong>utes (depend<strong>in</strong>g on the oven) until the fish sk<strong>in</strong><br />

becomes crispy.<br />
