HOLIDAY RECIPES LOVE YOUR leftovers by Cynthia MacGregor As if cooking a Thanksgiving meal wasn’t enough, the next day you’re faced with the leftovers— and the prospect of more cooking. Here are four recipes creatively using leftover turkey (chicken works in lieu of turkey if you want to prepare any of these at some other time of year) and require minimal effort. The amounts of turkey per recipe are approximate. 68 LIME-MANGO TURKEY 1/4 cup sherry 1 heaping tablespoon grated fresh ginger Grated zest of 2 limes 2 cups cooked turkey, cut bite-sized 1 mango, cut in small pieces Salt to taste Pepper—to taste, but use heavily 1/2 cup heavy cream 1/3 cup almond slices Pour the sherry into a large skillet, add the ginger and lime zest, and simmer for five minutes. (Be watchful that the mixture doesn’t boil too fast, lest the sherry boil away.) Add the remaining ingredients except almonds, mix, and simmer for another five minutes. Serve topped with the almonds. Serves 2-3. TURKEY LIBERTÉ This recipe includes a veggie, so the only other thing you need to prepare is some rice to go with it. 3 tablespoons butter 3 garlic cloves, sliced 6 scallions, sliced, white and light green parts 2 cans cream of mushroom soup, undiluted 1- 1/2 cups shredded Monterey Jack cheese 1 cup dry white wine 1 cup plain yogurt 2 tablespoons grated fresh ginger 2 cups cooked turkey, cut bite-sized 1 heaping teaspoon paprika 1 box (10 oz.) frozen chopped broccoli In a large skillet, melt the butter and add the scallions and garlic, sautéing till garlic starts to turn brown. Add the soup, cheese, wine, and yogurt, stirring till the mixture is smooth. (Hint: You can use your blender to most easily blend and smooth the soup and yogurt, perhaps adding the wine and cheese too, before adding to the pan if you wish.) Add the ginger, turkey, paprika, and broccoli cooking till heated through and broccoli is cooked but still al dente—as it cooks, break up the broccoli—about 10-15 minutes. Serve with rice. Serves 3. CHIMICHANGAS 1 cup cooked turkey, cut bite-sized 1 small onion, diced 1/2 cup grated cheddar or Monterey Jack cheese 1/2 cup salsa (hot, medium, or mild, cook’s choice) 4 regular size or 3 large size packaged tortillas Cooking spray (such as Pam) Preheat oven to 375°. Spray the bottom NOVEMBER <strong>2017</strong> of a baking pan with cooking spray. In a mixing bowl, mix turkey, onion, cheese, and salsa. Lay out the tortillas and spoon some of the mixture into the center of each tortilla. Roll up each tortilla and place it in the baking pan with the flap underneath. Lightly spray additional cooking spray across the tops of the tortillas. Bake for 15 minutes. May be served with additional salsa spooned on top of them or on the side. Serves 3-4. STOP ‘N’ GO TURKEY Again, here, veggies (two of them) are part of the recipe, so all you need is a starch side to make the meal complete. A simple baked potato, french fries, or garlic bread would work nicely. 3 tablespoons butter 1 medium onion, chopped 1 tablespoon flour 2 cups shredded Monterey Jack cheese 2 cups cooked turkey, cut bite-sized 1 10-oz. package frozen chopped spinach, defrosted 2 tablespoons snipped fresh cilantro 1 medium tomato, cut in bite-size pieces In a large nonstick skillet over medium heat, melt butter and then sauté onion till just beginning to brown. Stir in flour, cooking and stirring till mixture begins to thicken. Lower flame to medium-low and add cheese, stirring constantly till melted. Stir in turkey, cilantro, spinach, and tomato. Continue to stir and cook till thoroughly heated. Serves 3. P
