White fruits, almond, marzipan and flint<br />
characters lead to a structured wine with<br />
good depth and flavours of fresh apples<br />
and passion fruit. Powerful in nature, it has<br />
a firm acidity and a mineral stony finish.<br />
Vaillon is located on the left bank of the river,<br />
on a hill which faces south-east with good<br />
sun exposure and Kimmeridgian clay soils.<br />

The Mont de Milieu is more mineral in<br />
character with a flinty wet stone quality. It<br />
is tight and structured with a solid acidity<br />
requiring more time in bottle. It has good<br />
depth and flavours of lemon and lime. Mont<br />
de Milieu flanks the Grand Cru hillside and is<br />
itself on a gentle, south-facing slope.<br />

Fourchaumes also flanks the Grand Cru hill<br />
(on the other side) and lies just north of the<br />
town of Chablis. Slightly deeper in colour, it<br />
has a more mellow aroma with blossom and<br />
banana. It is supple and ripe with a hazelnut<br />
and pineapple fruit finish.<br />
