The story began with a butcher shop in Parma, opened in 1950. And it continues with Sagem, a company<br />
founded in 1986 by Mauro Ziveria Traversetolo, specializing in the production of black pork and in the<br />
selection of gourmet salami from throughout Italy.<br />

Perhaps the best on the market. The most delicious strolghino, the most delicious Felino salami, the most<br />
fragrant culatello di Zibello. And so the Coppa, the cooked shoulder of San Secondo, the fiocchetto, the bacon,<br />
the lard, the mortadella. They are chosen by the most valuable artisans with meticulous care and great<br />
experience by Sagem, a company created in 1986 by Mauro Ziveri, a gentle middle-aged gentleman with light<br />
skin and bright blue eyes, behind a family tradition linked to meat and their transformation by curing, which<br />
in its choices has always revealed an authentic passion for their work. The cured meats are those typical<br />
of the Emilian repertoire, sold whole or already sliced and packed in a tray with the Rosa dell'Angelo brand.<br />
Pre-sliced diminishes quality, some gourmet will say. On the other hand, Sagem is one of the rare Italian<br />
delicatessen companies that offer high-quality prêt-à-manger meats thanks to a cutting-edge processing<br />
process, with manual packaging in a modified atmosphere tray: taste, fragrance, aromas, textures enjoyable<br />
to the last slice. Where to find them? In the best delicatessens and restaurants and, of course, the "ham bar"<br />
at the headquarters of Traversetolo, and in Parma at Eurotorri and inside the Ente Fiere.<br />
