PETER JOE knows a thing or<br />

two about making good deep<br />

fried chips.<br />

The 60-year-old owner of<br />

Gourmet Seafoods QE II on<br />

Travis Rd is a third-generation<br />

fish and chip shop owner.<br />

His grandparents moved<br />

from China to open one in<br />

Lower Hutt and his parents had<br />

one in Wellington.<br />

Mr Joe and his wife Helen<br />

took out the people’s choice<br />

category at The Chip Group<br />

Industry Awards.<br />

They were voted as having<br />

the best fries of any fish and<br />

chip shop in Canterbury,<br />

the West Coast, Nelson and<br />

Marlborough. Mr Joe said the<br />

award would not have been<br />

possible without Helen and<br />

their son Ben, who helped out<br />

at the shop.<br />

QUESTIONS have been<br />

raised over the name He Puna<br />

Taimoana, which has been<br />

given to the hot pools under<br />

construction in New Brighton.<br />

The new name received mostly<br />

positive feedback, but some<br />

residents are disappointed about<br />

the lack of public input into the<br />

naming process and that it does<br />

not include New Brighton or<br />

Christchurch.<br />

Te Rūnangao Ngāi Tūāhuririri<br />

and Matapopore gifted the name,<br />

which translates to “coastal pools”<br />

or “seaside pools.”<br />

In April, <strong>Pegasus</strong> <strong>Post</strong> reported<br />

on Development Christchurch<br />

Ltd’s early ideas for the hot pools’<br />

name. They were Christchurch<br />

Hot Pools or New Brighton Hot<br />

Pools.<br />

Sintes signs off from board<br />

TIM SINTES is an action man.<br />

For the last 12 years, he has<br />

been on the Coastal-Burwood<br />

Community Board fighting for<br />

action in the wards.<br />

And with his limited downtown,<br />

you might have seen the<br />

68-year-old Southshore resident<br />

out boating or hitting the waves<br />

on his surfboard.<br />

Mr Sintes, the board’s deputy<br />

chairman, is not running for<br />

re-election in the October local<br />

body elections, saying it<br />

was a tough decision to step<br />

down but it was time for him to<br />

put more energy into doing the<br />

activities he loves.<br />

“I love my surfing, my<br />

snowboarding, my cycling . . .<br />

my boating. I’ve got so many<br />

things that I want to do, plus I<br />

want to travel a bit more and just<br />

have a bit more free time.<br />

“My whole life, I’ve put the<br />

community before me and I<br />

think really it’s time that I need<br />

to do it for myself.”<br />

Mr Sintes also battled through<br />

pneumonia at the end of last<br />

year, which saw him hospitalised<br />

twice. Although he said he still<br />

feels like a young man, the time<br />

is right for a change of lifestyle.<br />

He said spending time with<br />

his wife Jan Sintes and daughters<br />

October’s local body elections and says he’s looking forward<br />

to spending more time boating and with his daughters Lauren<br />

and Jade ​<br />

Lauren and Jade, who he named<br />

one of his boats after, would now<br />

take priority.<br />

Mr Sintes said in spite of his<br />

time on the board being filled<br />

with ups and downs, he has<br />

“loved” the job.<br />

“I love the good parts of it, I<br />

hate the fighting, the battling.”<br />

He said he had “incredibly<br />

mixed feelings” about leaving.<br />

However, Mr Sintes said<br />

his decision to not run for<br />

re-election is not because he<br />

has lost interest or faith in the<br />

Coastal and Burwood wards.<br />

“I believe this place has so<br />

much potential that just hasn’t<br />

been realised. There are great<br />

people out there and I’d love to<br />

carry on the journey but [not]<br />

for another three years. Believe<br />

me, it was such a hard decision.<br />

“I can honestly say I couldn’t<br />

have worked any harder than<br />

I’ve worked . . . when I get into<br />

a project I give it 100 per cent, I<br />

throw my whole life into it and<br />

I never thought it would take 12<br />

years of my life.”<br />

Mr Sintes’ said his best<br />

achievements with the board<br />

include helping to get Taiora: QE<br />

II Recreation and Sport Centre<br />

rebuilt and ensuring the recently<br />

named He Puna Taimoana hot<br />

pools were approved for New<br />

Brighton.<br />

Even simple things like getting<br />

a boardwalk rebuilt in South<br />

Brighton was a highlight for Mr<br />

Sintes.<br />

Along with these<br />

achievements, Mr Sintes said:<br />

“There are a lot of things that<br />

I’m super disappointed in.”<br />

“I still so wish we could get<br />

South Brighton and Southshore<br />

estuary edge [sea level rise and<br />

flooding protections] sorted out.<br />

That’s just been going on for so<br />

long and it’s just not right.”<br />

Mr Sintes said the next<br />

three years would see some big<br />

developments he had helped<br />

push for come to fruition,<br />

including the hot pools.<br />

He said he would be watching<br />

on with excitement.<br />

reinstalled as part of the repair<br />

work being carried out on the<br />

New Brighton Clock Tower. The<br />

the clock tower can be lit up at<br />

night-time.<br />

A grant of $2500 will go to the<br />

discretionary response fund,<br />

the board also granted $5500 to<br />

Parklands @ Play, $3000 to the<br />

board’s Garden Pride Awards,<br />

$6000 to the Dallington Avondale<br />

Burwood Combined Event, $6000<br />

to the I Love New Brighton event<br />

and $500 to the board’s Anzac<br />

Day commemorations next year.<br />

his flights to attend the Shirley<br />

Boys’ High School exchange trip<br />

Coastal-Burwood Community<br />

support community-focused<br />

organisations with projects that<br />

strengthen community wellbeing<br />

in the area.<br />

Successful applicants are<br />

outlined in the community<br />

board agenda as being able to<br />

demonstrate they are sustainable,<br />

strategic, community-focused<br />

groups which benefit the<br />

community.<br />

community and creating good<br />

connections for people through<br />

our initiatives.”<br />

I actually think it’s quite nice.<br />

It does encompass the coastal<br />

area, so I think it’s a really good<br />

reflection on what the area is.”<br />

a Maori name, which I think is<br />

quite a good name . . . I wouldn’t<br />

be at all surprised if locally it’s<br />

just known as the hot pools or<br />

the New Brighton hot pools.”<br />

Former city councillor David Close cut the ribbon to<br />

open Christchurch East MP Poto Williams’ new office in<br />

the Eastgate Shopping Centre. Ms Williams moved from<br />

her old office in New Brighton, telling <strong>Pegasus</strong> <strong>Post</strong> last<br />

month in spite of her new headquarters being in the Port<br />

Hills electorate, she hopes Eastgate will become part of<br />

Christchurch East when the electorate boundaries are<br />

reviewed next year.<br />

potatoes and a deep frier.<br />

“You’ve got to have a passion,<br />

you’ve got to love the industry,<br />

you’ve got to care about people,<br />

and you’ve got to care about<br />

how you get a good product out<br />

and that’s pretty much all there<br />

is to it.<br />

“You’ve got to say, oh, I love<br />

going to work today.”<br />

He said his family has a long<br />

history as fish and chip shop<br />

owners and his grandparents<br />

were among the first to open one<br />

in New Zealand.<br />

“Where they came from<br />

[China], they liked cooking you<br />

see, so when they moved to New<br />

Zealand that’s what they enjoyed<br />

and they said why not go for<br />

the New Zealand traditional<br />

food type and that was fish and<br />

chips,” Mr Joe said. “They only<br />

had about five items in those<br />

days, just chips, fish, sausages,<br />

hotdogs and potato fritters, that<br />

was pretty much it. Look at it<br />

now, it’s changed so much.”<br />

Keeping New Brighton’s history alive<br />

people together to celebrate the<br />

history of New Brighton.<br />

The 76-year-old has spent<br />

every year of her life living in the<br />

suburb, and says it is the people<br />

who have kept her there.<br />

“It’s the community. I think<br />

New Brighton’s community<br />

She has been the New Brighton<br />

Museum secretary for the past<br />

six years, and between 1981<br />

and 1999 you may have seen<br />

her behind the checkout at New<br />

Brighton Countdown.<br />

“I absolutely loved it . . .<br />

everybody knew me you see, so<br />

they’d come into Countdown<br />

and they’d cause great traffic<br />

jams because they’d want to be at<br />

my checkout.”<br />

She said she found the same<br />

sense of community when she<br />

started volunteering at the<br />

museum.<br />

“I love meeting the local<br />

people. They come in and most<br />

of the time I know them and<br />

they’ll want to reminisce.<br />

“For them, it brings back so<br />

many memories . . . sometimes<br />

they find granddad in some of<br />

the old surf club photos. So many<br />

memories.”<br />

Mrs Butterfield went to New<br />

Brighton District High School<br />

(which became Central New<br />

Brighton School) and Linwood<br />

High School. Her mother Doris<br />

Goodlad and grandmother Flora<br />

Speechly also both lived in New<br />

Brighton.<br />

She married her husband of 52<br />

years, former Canterbury rugby<br />

league player Errol Butterfield,<br />

at the New Brighton Methodist<br />

Church in 1967. They had two<br />

children, Lynda Butterfield, who<br />

lives in Parklands, and Jill Genet,<br />

who lives in Australia.<br />

Mr Butterfield, who died in<br />

July, was the brother of Jock<br />

Butterfield. Jock played 99 tests<br />

for the Kiwis in the 1950s and<br />

60s, and in 2007 he was named<br />

at hooker in the New Zealand<br />

rugby league team of the century.<br />

awards, when she was named in<br />

the local hero category for her<br />

contribution to the suburb.<br />

Mrs Butterfield said it was<br />

friendships like the one she<br />

had with Mrs Kelso, which<br />

had seen her develop such a<br />

strong connection to the seaside<br />

suburb.<br />

Festival of Adult Learning<br />

comes to Richmond<br />

It proved successful as he was<br />

named the overall winner and<br />

Bryan winning the eight class.<br />

Bryan said it was a successful<br />

weekend, in spite of the weather.<br />

“We’re constantly working on<br />

the truck’s handling, grip and<br />

flight characteristics and it performed<br />

superbly in the absolute<br />

worst conditions.<br />

“Couple that with Owen’s class<br />

win and the title itself and it’s<br />

been a great family day out in<br />

the rain.”<br />

Mark Brown brought his<br />

lighter four-cylinder car out for<br />

its first run in the class and led<br />

the opening laps of his first heat,<br />

but his challenge faded early.<br />

Sean Liddicoat has been named<br />

in the New Zealand under-23<br />

football team for their tour of<br />

Australia next month.<br />

A total of 21 players will head<br />

to New South Wales as preparations<br />

continue for the OFC men’s<br />

Olympic qualifying tournament,<br />

which takes place in Fiji soon<br />

after the Australia tour.<br />

“These two games against<br />

a strong Australian team will<br />

help us prepare for the Olympic<br />

qualifiers as we look to secure<br />

our place at Tokyo 2020.”<br />

The Australia matches also<br />

provide the rare opportunity for<br />

the players involved to test themselves<br />

against New Zealand’s<br />

traditional sporting foe,<br />

They have met 10 times over<br />

the years with New Zealand’s<br />

only positive results being a famous<br />

1-0 triumph in Adelaide in<br />

1996 and a 1-1 draw in Auckland<br />

WANTED<br />

Showing visitors to many of Christchurch’s<br />

beauty spots, natural attractions, places<br />

of historical interest, and the changing<br />

cityscape as the city rebuilds, is the<br />

task undertaken by the team of 20<br />

knowledgeable and friendly guides at<br />

Walk Christchurch.<br />

All the volunteers thoroughly enjoy<br />

revealing our city’s unique features, many<br />

of which visitors may not discover on their<br />

own, and answering questions on the city<br />

and its people.<br />

Walk Christchurch was established in<br />

1982 as the Christchurch Personal Guiding<br />

Service, and has undergone a number of<br />

changes over the years to meet the needs<br />

of increasing numbers of visitors to the city.<br />

The primary walk is the Classic<br />

Christchurch Walk, a five-kilometre walk<br />

around the central city, which takes<br />

about two and a half to three hours. From<br />

October, a shorter Highlights Christchurch<br />

Walk is also being introduced. This will be<br />

2.5 kilometres, lasting about 90 minutes.<br />

More walks are also planned to meet<br />

different requirements.<br />

The walks are ranked in the top 10 activities<br />

for tourists in Christchurch by Trip Advisor,<br />

and positive reviews are regularly posted<br />

on the Trip Advisor website.<br />

and passionate about Christchurch, and<br />

it was a pleasure to listen to him speak<br />

about the city he loves. The walk never felt<br />

The volunteer guides themselves get many<br />

benefits from their guiding activities.<br />

For example, Josie has, over the years<br />

of guiding, developed an interest in our<br />

city – its past, present and future as well<br />

as improving her knowledge of the city<br />

architecture and landscape.<br />

Josie considers herself not just a walking<br />

guide, but an ambassador for the city. She<br />

is often one of the few people that visitors<br />

can meet and talk with over the duration<br />

of the walk.<br />

Craig appreciates being part of an<br />

active, sociable group of walking guides.<br />

He has increased his appreciation of<br />

Christchurch and the guided walks have<br />

taken him to places he had never visited<br />

or known about. Stories about those<br />

places have strengthened his connection<br />

to Christchurch and his knowledge about<br />

what is happening in Christchurch.<br />

To meet the growing demand for the<br />

walks, Walk Christchurch is seeking more<br />

volunteers to join the team. Details of<br />

Sailing Lake Rua, our students enjoyed a six day practical<br />

learning session where they developed their sailing skills<br />

and worked towards gaining up to nine credits over three<br />

assessments.<br />

Along with Ara Institute of Canterbury, students had two<br />

practical days learning about techniques and equipment used<br />

when climbing and abseiling as well as hearing about the<br />

many locations around New Zealand where they could do this.<br />

They also completed a two credit practical assessment.<br />

Our mountain biking two day camp at Living Springs was a<br />

true adventure. Students developed their skills in mountain<br />

biking on tracks at Bottle Lake Forest and Victoria Park in the<br />

Port Hills.<br />

I struggled as a Principal to make a decision to attend a Digital<br />

Fluency Course (DFI) this term.<br />

But with my colleagues and new friends, we began the<br />

journey together. I’ve decided to take part in the second<br />

Digital Fluency Intensive course, which began 23 July <strong>2019</strong>, in<br />

Christchurch. I thought about all the reasons why I shouldn’t<br />

be there, including workload, personnel, and student issues to<br />

deal with at school.<br />

Then I thought about the reasons why I must be there, and<br />

for me, it is about people. I have asked my staff to change the<br />

world, to use digital tools, to become fluent in the use of these<br />

tools and then to share their learning with our students and<br />

others. I can rise no higher than the standards of excellence<br />

that we collectively set within our schools, although the<br />

school and environment of modern learning practices are now<br />

at the forefront of New Zealand education. I cannot expect<br />

any of my staff to do something that I must do myself. I am<br />

here learning and seeking new knowledge, amongst a group<br />

of people with similar passions, commitments and desires.<br />

We are all educators, with a broad range of experiences<br />

and expertise, we are lifelong learners, and we are people<br />

wanting to make a difference for our students. I had a degree<br />

of reservation attending this particular course; my skills and<br />

capabilities as a digitally fluent citizen are in need of support.<br />

Dorothy Burt shared with us “The ManaiaKalani Story”, an<br />

interesting narrative of a journey and commitment beginning<br />

from 2016 to DFI today. Thank you, Dorothy, for reminding<br />

us about ‘Why’, about sharing a passion and desire of a<br />

community making a difference for their learners, and for<br />

bringing that passion and belief to Christchurch. I take this<br />

opportunity to acknowledge the explorers and navigators of<br />

the ManaiaKalani story and the gift that you bring and share<br />

with other educators of Aotearoa.<br />

Learn, Create and Share is a pedagogy of practice, and it<br />

is underpinned by a successful, experienced team. It is a<br />

methodology or teaching and learning practice supported by<br />

evidenced based data. The pen has been replaced by a digital<br />

device. In our technological world, we have advanced the<br />

types of tool that we are using in the classroom, and therefore,<br />

teachers need to be upskilled in the use of these tools.<br />

Our first lesson focused on Google groups. I had no idea that<br />

such a google package existed. I wanted to know more. I<br />

could see the potential of using the google group platform as<br />

a leadership tool.<br />

At least a couple of times during the day I got that ‘aha<br />

moment,’ i.e. when you realise you have been doing<br />

something for years and someone shows you a zap shortcut.<br />

Wow! I should have known that and it makes one feel like an<br />

idiot.<br />

I have a goal to learn about the tools that my staff and<br />

students are using. I expect to share their frustrations, anxieties<br />

and successes. I trust that at the end of our DFI course, I will be<br />

able to master some of the digital tools that our learners are<br />

using.<br />

Every day, I will leave with new<br />

learning; I have: created a google<br />

doc, learnt a few short cuts, inserted<br />

images into a table, and I am<br />

blogging for the first time.<br />

Most importantly, I am pleased to<br />

be here, learning new things, and<br />

sharing this learning with my staff<br />

and students of Mairehau High<br />

Kapahaka Competition -<br />

Papanui and Mairehau combined group -<br />

Nga Whatumoana<br />

Ngā Whatumoana was a composite group of Papanui and Mairehau<br />

High school students. The group competed in the Waitaha<br />

Secondary Schools Kapahaka Whakataetae at the Aurora Centre,<br />

Burnside High School, on Saturday 3rd <strong>August</strong>. The competition<br />

was to decide the region’s most outstanding Secondary School<br />

Kapahaka group and earn a place in the National Secondary<br />

School’s Kapahaka Competition in 2020.<br />

The day started early for Ngā Whatumoana. Students assembled<br />

at Papanui High School at 7.30am, and then travelled together<br />

to Burnside to perform. Our group was one of 12 rōpū (groups)<br />

who performed and their amazing kaiako kapa haka - Miss Satriani<br />

Reihana - said that they were focussed and determined to do their<br />

very best on the day. All the intense months of training paid off<br />

as they performed their set with mana and kaha. Whether you<br />

were watching in the audience or on the live stream, everyone was<br />

extremely proud of our group. The day finished at 7.30pm with the<br />

winners announced live on the Tahu FM live stream of the event.<br />

For a first time entered group Ngā Whatumoana did incredibly well.<br />

They were 7th overall and our leader Phoenix Neilson, gained very<br />

high marks - no marks under 89!<br />

Huge mihi to our staff Satriana Reihana and Charntay Poko for all the<br />

hours of training and support for our performers: Phoenix Neilson,<br />

Matthias Mataitai, Matalasi Tulia and Zion Wirihana. Thanks also to<br />

Sarah Maindonald, Lauren Taylor and Vanessa Gopperth for their<br />

huge efforts as well.<br />

It was terrific to work with ngā kaiako o Papanui - Paul Peawini,<br />

Chloe Honekawa and Kirsten Aumua and their talented students,<br />

led by Mariah Mohi.<br />

Phoenix Neilson, kaitataki tane mo te ropu (Male leader for the<br />

group) drew inspiration from Te Puea’s famous whakatauki, “Mahia<br />

nga mahi, hei painga mo te iwi”. Do the work, for the benefit of the<br />

iwi.<br />

First time performer Matalasi Tuila remarked, “It felt like all the mana<br />

and hard work that the tutors instilled in us during the preparation<br />

allowed us to represent our kura with the utmost distinction.”<br />

Grizzled veteran, Zion Wirihana, states “it was an awesome<br />

experience and gives me hope that one day in the near future,<br />

Mairehau can reach the pinnacle of success in culture and<br />

performance, and stand with confidence and pride at the national<br />

level.”<br />

Matthais Mataiti, summed it all up in one word, “Mean”.<br />

Okazaki Nishi<br />

School Visit <strong>2019</strong><br />

We enjoyed having our annual visit from 20 students from<br />

Okazaki Nishi School, from Japan, who visited us between<br />

July 31 and <strong>August</strong> 9. They had ESOL classes here at school<br />

and attended classes with their kiwi buddies. They enjoyed<br />

performing in our talent quest and their farewell party<br />

which was held on <strong>August</strong> 9. Thank you to the students<br />

who acted as buddies, to the homestay families and to our<br />

staff for ensuring that this visit was a success.<br />

Zoning<br />

The Board of Mairehau High School recently adopted an enrolment<br />

scheme that has been approved by the Secretary for Education.<br />

Under this scheme, students will be enrolled if they live within our<br />

home zone.<br />

Mairehau High School has been collaborating with other Greater<br />

Christchurch State Secondary School Principals and Boards of<br />

Trustees to establish a cohesive schooling network across the city.<br />

There has been a collective desire to create a sustainable school<br />

network that will have a significant positive impact on the learning<br />

communities of Christchurch. Mairehau High School remains<br />

committed to ensuring that our approach to zoning change will<br />

meet the needs of schools in our community, while also supporting<br />

the effectiveness of improving a more sustainable school education<br />

network.<br />

We are confident that the new Mairehau High School zone will<br />

provide long term sustainable and equitable learning opportunities<br />

for the young citizens of our community.<br />

Our new zone will take effect from 1 January 2020. Any change<br />

to school zones could be a concern for communities. It is our<br />

belief that a new zone should not be thought of as being a forced<br />

relationship, but families will develop a feeling of belonging to<br />

Mairehau High School. When families visit our school, we want<br />

them to understand that Mairehau High School will be a match for<br />

their child’s learning needs.<br />

Parents are aware that we have a growing roll. They like the fact<br />

that teachers in the school build strong relationships with students.<br />

12 of our students, in collaboration with Avonside Girls’ High<br />

of many flash mobs taking place nationwide as part of the ‘SOUL<br />

Friendmobs’.<br />

Sources of Unconditional Love (SOUL) helps support girls to build<br />

Ingredients<br />

• 1/2 cup Linseeds (whole)<br />

• 1/2 cup Chia Seeds<br />

• 1/2 cup Sunflower Seeds<br />

• 1/2 cup Pumpkin Seeds<br />

• 1 cup water<br />

• Sea salt to taste<br />

Directions<br />

• Preheat oven to 180°c.<br />

• Combine all the ingredients in a large<br />

bowl (except for sea salt) and mix well.<br />

Allow to sit in the bowl for 15 minutes<br />

until the mixture begins to ‘gel’.<br />

• Split the mixture into two and place<br />

each half on a sheet of baking paper on<br />

a baking tray. With wet fingers spread<br />

the mixture out to desired thickness.<br />

• Place in oven for approx 30 minutes,<br />

remove the crackers from the oven<br />

and cut them into squares. Return<br />

the mixture to the oven and bake for<br />

another 30 minutes or until they are<br />

crispy.<br />

• Remove from the oven and allow to<br />

cool. Place in airtight container in the<br />

fridge or cupboard.<br />

Healthy chicken dish an instant hit<br />

Scotch eggs are done with<br />

a flavoursome chicken<br />

mince wrapped around<br />

a boiled egg and then<br />

cooked in the air fryer.<br />

It’s tasty, portable and a<br />

wonderful breakfast dish<br />

Chicken scotch eggs<br />

Gluten, dairy and sugarfree/no<br />

added fat<br />

Ingredients<br />

1 tsp baking soda<br />

7 eggs<br />

490g raw chicken breast, roughly<br />

chopped<br />

1 green apple, peeled, cored and<br />

diced, optional<br />

2 tsp chopped ginger<br />

2 tsp chopped garlic<br />

Small handful coriander leaves<br />

Small handful parsley leaves<br />

1 Tbsp and seven tsp sticky sauce<br />

(see next recipe)<br />

Himalayan salt and freshly<br />

Ground black pepper<br />

Equipment<br />

Air fryer<br />

Directions<br />

Bring a medium-sized pot of<br />

water to the boil along with the<br />

baking soda and, using a large<br />

spoon, carefully lower the eggs<br />

into the boiling water. For soft<br />

boiled eggs, boil for 4.5min. For<br />

semi-hard, boil for 5.5min and<br />

for hard-boiled, boil for 6.5min.<br />

Remove the pot immediately<br />

from the heat and run the pot<br />

under cold water to stop the eggs<br />

from cooking.<br />

As soon as you can pick the<br />

egg up, carefully roll the egg<br />

on the bench to crack the shell<br />

which will help the egg to cool<br />

down more quickly.<br />

Set the eggs aside to cool while<br />

you prepare the chicken mixture.<br />

Place the chicken breast, apple<br />

(if you are using), ginger, garlic,<br />

fresh herbs, and a tablespoon of<br />

sticky sauce into the bowl of a<br />

blender or food processor.<br />

Season with a little salt and<br />

pepper and blend on high until<br />

very well-combined.<br />

Using a set of scales, evenly<br />

portion the chicken mince into<br />

seven piles.<br />

Very carefully continue to peel<br />

the eggs, making sure not to split<br />

the eggs as you do so. Take your<br />

time.<br />

Take a pile of the mince and<br />

flatten it as much as possible<br />

in the palm of your very clean<br />

hand. Sit the egg on top of the<br />

mince and bring the mince up<br />

to cover the egg as evenly as<br />

possible. This may take a little<br />

practice to get right, so take your<br />

time.<br />

Once all the eggs are covered,<br />

pre-heat your airfryer for two<br />

minutes on 180 deg C. Add the<br />

rest of the sticky sauce to a bowl<br />

and roll the scotch eggs in the<br />

sauce to fully cover the outside of<br />

the eggs.<br />

Place the eggs inside the air<br />

fryer basket and cook for seven<br />

to eight minutes until well<br />

covered and the mince is fully<br />

cooked. Cool the eggs before<br />

storing in the fridge.<br />

You can make these scotch<br />

eggs in advance. They will last<br />

four days in the fridge or you can<br />

vacuum seal them and increase<br />

their fridge shelf life up to two<br />

weeks.<br />

Sticky sauce<br />

Ingredients<br />

1 medium-sized green apple,<br />

peeled, cored and diced<br />

240ml low sodium tamari<br />

120ml apple cider vinegar<br />

120ml water<br />

3 slices ginger<br />

1 lime, zested and juiced<br />

Directions<br />

Place the apple in a small<br />

pot and add enough water so<br />

that it comes halfway up the<br />

apple.<br />

Bring to the boil and cook<br />

for 10min or until the apple<br />

is soft and the water has<br />

evaporated. Blend the apple in<br />

a small food processor until<br />

smooth and place in a mediumsized<br />

pot.<br />

Add the tamari, apple cider<br />

vinegar, water, ginger, lime zest<br />

and lime juice to the apple and<br />

whisk well to combine.<br />

Bring the sauce to the boil and<br />

then reduce to a rapid simmer<br />

and cook for 10-15min or until<br />

the sauce has reduced down<br />

by half and has become a little<br />

thicker and syrupy.<br />

Cool the sauce and store in a<br />

jar in the refrigerator for up to<br />

two months.<br />
