ASPARAGUS AVOCADO SALAD<br />
1 bundle asparagus trimmed<br />
and chopped in 3cm pieces<br />
Salt and pepper<br />
Olive oil<br />
2 hard boiled eggs<br />
5 slices of bacon, cooked and<br />
chopped<br />
1 avocado, chopped<br />
For the dressing<br />
2 teaspoons dijon mustard<br />
1 1/2 teaspoons white vinegar<br />
1 1/2 teaspoons sugar<br />
1/2 teaspoon lemon juice<br />
Pinch of salt<br />
Heat a skillet over medium<br />
high heat.<br />
Add olive oil and asparagus<br />
and sprinkle with salt and<br />
pepper.<br />
Cook until tender, moving<br />
occasionally, about 3min.<br />
In a small dish, whisk together<br />
the dressing.<br />
In a dish toss everything,<br />
including the dressing, together<br />
and serve warm or at room<br />
temperature.<br />
MEAT AND POTATO<br />
GRATIN<br />
Ingredients<br />
2 tablespoons olive oil<br />
1 onion, thinly sliced<br />
2 cloves garlic, minced<br />
500g beef mince<br />
3 teaspoons paprika<br />
5-6 nadine or van rosa potatoes,<br />
peeled, sliced<br />
Salt and pepper to taste<br />
2 1/2 cups milk<br />
3 eggs<br />

Directions<br />
Preheat oven to 180 deg C.<br />
Heat olive oil in a heavy skillet<br />
over medium heat and add<br />
onion and garlic. Cook and stir<br />
until translucent. Add mince<br />
and paprika, and cook until beef<br />
is browned. Remove from heat<br />
and set aside. Butter a 30cm x<br />
20cm (or larger) baking dish.<br />
Layer half of the sliced potatoes<br />
and sprinkle with a small<br />
amount of salt and pepper.<br />
Top the potatoes with the<br />
bunched asparagus 250g ....................... 3<br />

granny smith apples ...................................... 1<br />
washed nadine/van rosa<br />
potatoes 5kg ................................................................. 5<br />
Australian tangelos ................................... 2<br />
prepack onions 5kg.......................................... 3<br />
beef eye fillet steak .................................. 32<br />
premium beef mince........................................... 12<br />
chicken thigh fillets................................... 14<br />
pork loin chops ................................................... 11<br />
lamb legs ....................................................................... 12<br />
beef mince. Spread remaining<br />
potatoes over mince, and<br />
sprinkle with salt and pepper.<br />
In a separate bowl, whisk<br />
together the milk and eggs until<br />
thoroughly combined.<br />
Pour the milk mixture into<br />
dish to cover potatoes and cover<br />
with foil. Bake for 45min, or<br />
until potatoes are tender when<br />
pierced with a fork. Remove foil<br />
and continue to bake until top is<br />
brown and bubbly, 25-30min.<br />
Let rest for 15min before<br />
cutting and serving.<br />
