The highlight of this catalog is certainly
the new kitchen knife series Boker
Patina. The forged blades, made of
the carbon steel O1, are ground very
thin and convince not only with an
extremely appealing composition
but also with incomparable cutting
performance. Even after the first use,
the high quality steel can be recognized
by the gray-blue tarnishing of the
blade, the patina, which then acts as a
resistant, protective layer.
HANDMADE SINCE 1869.
Last year we were able to celebrate our
150th anniversary with numerous loyal
friends and business partners. We are
now looking forward to the next 150
years with a thirst for action.
One quickly forgets that already in our
founding year 1869 - in the supposedly
“good old days” - the world was
in a state of unprecedented upheaval.
Thirteen years earlier, the first mailorder
catalog had appeared in France,
electric telegraphy, railways and
steamships brought the world closer
together and the first sound recording
was less than a decade away.
The promising possibilities in overseas
export and the cooperation with cutlery
factories in the USA, Canada and Mexico,
which had previously been founded
by members of the Böker family, were
essential incentives for the foundation
of Heinr. Böker & Co. in Solingen.
Managing Owners Kirsten Schulz-Dalichow and Carsten Felix-Dalichow
Dealing with challenges that seem
modern today, such as globalization,
networking and structural change, has
therefore been firmly anchored in the
DNA of our manufactory from the very
beginning.
With this in mind, the seventh revision
of our logo is based on the very first
trademark from 1869, which was a
positive declaration of intent to a
certain extent, and which contrasted
a seemingly restless and chaotic
historical situation with a clear and
simple formal language.
The stylized tree with the simple
bordering line has now been taken
up again and translated into a
contemporary appearance. In the
future you will recognize every product
that leaves our factory by this new and
yet familiar seal of quality.
The showpiece of the new series is
even more exclusive. The high class
Boker Patina Damascus chef's knife
is limited to 50 pieces worldwide.
The Wild Damascus is hand forged
by Chad Nicols from Mississippi, and
harmonizes perfectly with the handle,
made of stabilized burl birch with brass
rivets.
Of course, the catalog can also boast
many other novelties - a wide selection
of innovative kitchen knives and
accessories.
We now wish you an enjoyable reading of
our current catalog, Boker Knifestyle - 2020
BOKER DAMASCUS
07
DAMASCUS STEEL
A millennia-old blacksmith's art,
which still develops its fascination
today. While the forging of multi-layer
steels originally served to produce
the highest possible material quality,
today's enthusiasm for Damascus
steel is no longer based on technical
demands, but rather on a passion for
the material and its special charm,
the fascination of which is hard to
resist.
In the production of classic, hand
forged Damascus, at least two steels
of different compositions are forged
together.
After forging, the steel piece is
folded and forged again, doubling
the number of layers. This process
is now repeated until the desired
number of layers is reached. By using
steels with different properties, the
quality of the Damascus steel can be
significantly influenced - for example,
a particularly hard steel can be
combined with a particularly tough
steel in order to achieve the best
possible balance between hardness
and cutting performance.
The pattern of the Damascus steel
is influenced by the forging and the
number of layers on the one hand, but
can also be produced in a targeted
manner by additional stamping of
the finished forged Damascus bar. By
embossing the ingot using a stamping
die with a specific pattern, the
layers in the Damascus are shifted
against each other. The embossing
pattern appears as a structure in the
Damascus when the blade is ground
out of the embossed material.
Visually, however, the pattern is
hardly recognizable on the freshly
ground blade; only through the final
etching in a special acid, in which the
two types of steel respond differently
to the acid and tarnish darkly, does
the pattern created by the structure
come to the forefront, and unfold the
true splendor of Damascus steel.
In contrast to classic Damascus
production, rust-bearing steels cannot
be forged under normal circumstances.
However, resourceful Damascus blade
smiths have devised a method to
circumvent this obstacle. The crucial
point here is oxygen.
While the classic, non-corrosive
Damascus is forged and folded in a
normal, open forge, the ambient air is
the decisive factor in the case of noncorrosive
Damascus – it prevents the
forging of stainless steels. For this
reason, in rust-bearing Damascus,
pre-stacked layers of layers are
forged together under vacuum.
One of the most demanding forms
of forging Damascus steel is Torsion
Damascus. Here, in addition to the
classic folding process, the material
is also twisted, i.e. twisted into itself.
This results in a very unique pattern,
and the control of this forging process
certainly requires the highest level of
expertise.
Torsion Damascus is also known, for
example, from the few remaining
swords from the Viking Age, in which
the finest pieces were forged with the
highest level of craftsmanship, which
were also technically far superior to
the standard swords of the time.
The extremely complex forging process,
with its characteristic pattern, still
makes Torsion Damascus one of the
most exclusive and rarely found
Damascus variants today.

BOKER PATINA DAMASCUS
Even if the Damascus blade of this exclusive model,
which is limited to only 50 pieces worldwide, does
not develop a visually perceptible patina after
use, the affiliation to the Boker Patina kitchen
knife series is unmistakable. In contrast to the
models with blades made of carbon steel, the
acid treatment and the (controlled) discoloration
is already carried out during the manufacturing
process, as this is the only way to make the
different Damascus layers visible.
The handle of this extraordinary chef's knife,
in the classic Solingen three-rivet design, is
in no way inferior to the blade in terms of
appearance and function. With its lively grain,
the handpicked, stabilized burl birch wood makes
each knife truly unique. This extraordinary
composition is completed with brass rivets.
The premium Damascus with 180 layers is hand
forged by Chad Nichols from Mississippi in
the USA, one of the most renowned Damascus
blade smiths in the world of knives.
The fine, high contrast designs and the high
suitability of the material for everyday use
are not only appreciated by various knife
manufacturers worldwide, but also by
numerous custom knifemakers.
However, with the forging of the high quality
Damascus, the blade is still far from its final
shape and finish. In the next step, the forged
split piece is further processed in our drop
forge in Solingen.
After it has been heated there to a red heat, a
two-tone ramrod beats it into shape in a massive
mold. This mold, consisting of an upper and
lower half, is the so-called drop forge. In the
next step, the blade is soft-annealed, deburred
and finally, calibrated.
The resulting Wild Damascus pattern is as
unique as a human fingerprint, and after its
journey around the world is ready for new
adventures - in your kitchen.

BOKER CORE DAMASCUS
We are a modern and sustainable company with
roots in an industry with a long regional history.
Our region is the Bergisches Land, where blade
production was established as early as the Middle
Ages, thanks to two main factors. The dense
forests supplied wood as a renewable resource
that could be carbonized for forging. Many
rivers running through narrow valleys – primarily
the Wupper River – supplied easily accessible,
renewable energy for grinding mills and smithies.
Now, the Bergisches Land does not actually
take its name from its mountainous topography
("Berg" being German for "mountain"), but from
the noble House von Berg. Their mighty counts
left their mark on the region like no other dynasty,
reaching all the way to the Rhineland. It is no
accident that their ancestral seat of Burg Castle
has become the landmark of the Bergisches Land.
Thanks to our close relationship with the castle
preservation association, Schlossbauverein Burg
an der Wupper e.V., we were able to obtain a small
amount of wood from the 100-year-old oak beams
of this historic monument.
built around the year 1130. From the top with its
three wooden brattices, visitors have a panoramic
view all the way to the neighboring town of
Remscheid. A covered bridge connects the tower
with the shield wall and wall walk. In medieval
times, it was the only access to the tower.
Today, the west side of the keep has an additional
entrance to the ground floor. The archway bears a
sandstone plate with information about the history
of the mighty tower. In the past, the ground floor
was called the dungeon, accessible only through an
opening from the floor above and used as storage
for stone balls. In case of an attack, the defenders
of the keep would pelt attackers with the balls
from the upper floors. The ground floor could
hold up to 12 tons of stones. From the first floor,
stairs in the outside walls, which are up to four
meters thick, lead to the upper floors. We process
pieces of the original oak beams of the keep at
Burg Castle with all due respect and diligence to
make handles for our Boker Core Damascus, an
edition strictly limited to 199 pieces. The blade is
truly special - the hand forged stainless Damascus
has a breathtaking pattern and offers excellent
resilience and hardness (60 HRC), which makes
the Boker Core Damascus an exclusive collector's
item and guarantees exceptional performance
for all cutting tasks in the kitchen. In Solingen,
the forged blade piece consisting of 300 layers
of Damascus is brought to a red heat and dieforged
into its beautiful shape by a drop hammer
weighing two tons.
What better way to express our respect for the
history of our region and our craft than by referring
to the Counts von Berg and their ancestral home?
Each of these works of art comes in an elegant
leather covered gift box with a certificate of
authenticity and individual serial number.
The wood was sourced from the so-called keep, the
main tower of Burg Castle, which is an impressive
105 feet tall. The foundation of the keep (46 ft. x
36 ft.) was laid in the first building phase of the
castle in the 12th century. The six-storied defense
tower with living quarters was rebuilt in the early
20th century, modeled after Romanesque towers

Close to the headquarters of the Boker
Manufactory in Solingen, Germany, lies Burg
Castle on the Wupper River - the landmark
of the Bergisches Land. It is also one of the
largest castles in western Germany and the
largest reconstructed castle complex in North
Rhine-Westphalia. Today, Burg Castle is used
for a variety of cultural purposes, including as
a museum, event venue and memorial.
In order to be able to fully maintain this
landmark in the future and renew the energy
system, an extensive renovation program was
begun in 2017 and is set to continue until
2024. The renovation has enabled us to obtain
an exclusive inventory of original 100-yearold
oak beams from the mighty keep of Burg
Castle.
With great care and craftsmanship, we process
these historic oak beams from the keep into
handle scales for our successful kitchen knife
Boker Saga, which is available in a strictly
limited edition of 199 pieces. The design of
the Saga series was created by Danish knife
designer and renowned custom knifemaker
Jesper Voxnæs, and has already won the iF-
Product Design Award.
also rather exclusive and historic, we selected
the handforged stainless Damascus steel
made by Chad Nichols from Mississippi. This
premium Damascus boasts 200 layers and a
Rockwell hardness of 60 HRC, as well as the
Damascus pattern "Fade," with its fine, high
contrast lines.
While classic, non-stainless Damascus can
be forged and folded in an open forge,
the prepared layer packages of stainless
Damascus must be forged with great effort in
the vacuum. Damascus steel products forged
by Chad Nichols are known for their exclusive
for the excellent edge retention and everyday
functionality of the beautiful material.
BOKER DAMASCUS BLACK
With the successful cutlery series Boker Damascus
Black, we present kitchen knives with a stunning
look and feel, and above-average performance.
The best of two worlds: A traditional Japanese
chef's knife - handmade in Solingen, Germany.
Not only do many top chefs swear by Japanese
kitchen knives - they are also becoming
increasingly popular with ambitious home cooks.
The merits of a knife with Japanese handles
and the traditional construction of a blade with
stainless steel ferrule are obvious, because
delicate foods can be cut and cooked very gently.
When chopping herbs, for example, the very fine
cut leaves hardly any essential oils. Flavors are
not lost, and the unwanted tears when chopping
onions can also be avoided. The perceived
sharpness when cutting is breathtaking, and
makes cooking an experience.
The secret of the unusual sharpness lies in the
material and its processing. The blade consists
of 37 layers of Damascus steel. The premium
blade steel VG-10, made in Japan, is used for
the core, and is characterized by a high degree
of hardness, toughness and a homogeneous
crystalline structure.
In a direct comparison of the cutting performance
with a product of an established Solingen
kitchen knife manufacturer according to DIN EN
ISO 8442-5, the series Boker Damascus Black are
not only superior in the proverbial sense - the
cutting performance of our knives is more than
68% higher than that of the competitor's product
in the representative DIN test. In addition, the
series Boker Damascus Black convinces by an
initial sharpness that is far superior, making
frequent re-sharpening a thing of the past.
The handle material is black plywood, which, due
to its beautiful and dramatic color, emphasizes
the finely matted stainless steel ferrules and
the splendid grain of the razor-sharp Damascus
blade. Boker Damascus Black means cooking
with style. Available in eight practical sizes and
BOKER CARBON STEEL
23
BOKER CARBON STEEL
The classic carbon steel still has its
raison d'être in the age of ultra modern
powder metallurgical steels.
Many users appreciate not only the
traditional aspect offered by carbon
steel, but also the combination of
cutting performance and easy resharpening
that stainless steels have
never achieved. This property and the
very fine microstructure make carbon
steel a real alternative to chromium
steels for many cutting tools, even
today.
Carbon steels are still unsurpassed,
especially for blades where the finest
possible cutting edge is required, such
as razors.
But outdoor enthusiasts also appreciate
the fact that a carbon steel blade can
be brought back to a good sharpness
on a river rock in an emergency. In
the kitchen, too, particularly finely
ground carbon steel blades, with their
unsurpassed cutting capabilities, are a
real pleasure.
With a little care, a carbon steel blade
has the same life expectancy as a
stainless blade. In the kitchen, it is
usually sufficient to rinse the blade
under hot running water after use.
What you should avoid is leaving the
used blade lying around for a long time
without cleaning it.
Since the dishwasher is also a taboo for
stainless steel kitchen knives, this also
applies to carbon steel blades.
Knives with carbon steel blades should
not be stored in a leather sheath, for
example, as leather sheaths normally
contain tannic acids that can attack the
carbon steel.
A completely natural material property
is the formation of a patina when the
knife is used. A gray-blue tarnishing
of the blade is completely normal, and
in no way constitutes a defect. On the
contrary, the resulting patina (oxide
layer) forms a protective layer on the
blade, which increases its resistance to
external influences.
This patina often becomes visible after
the first use, and cannot be removed.
The expert immediately recognizes the
high quality carbon steel from this. In
principle, this also applies to Damascus
blades forged from classic carbon steels.
1 BOKER CAMELLIA OIL
This high quality, pure camellia oil
is made according to a traditional
Chinese recipe, and has many uses.
The thin oil is extracted from the
seed of the camellia tree, is taste
neutral, odorless, and does not dry.
The camellia oil is food safe and
impresses with its special purity.
Corrosion protection
The acid-free, non-resinous, and
non-evaporating camellia oil is
traditionally used to protect from
corrosion in the care of high quality
knife blades made from carbon steel,
as well as tools and weapons. It
is purely organic and perfect for
preserving non-stainless kitchen
knives and straight razors as – in
contrast to other care oils – does not
form an emulsion with water.
Wood protection
The low-viscosity oil quickly absorbs
into the wood and protects from
moisture, dirt, and UV radiation.
Camellia oil is clear, does not discolor
the wood, and brings out the grain
beautifully. Outstanding for the care
of high quality straight razor handles
and kitchen knife handles made from
fine woods.
CHESTNUT
PATINA [ˈpaːtina]
Patina (Ital. "thin layer,” "varnish")
is a surface (structure and color)
created by natural or artificial aging.
Not only since sustainability,
handmade products and local
patriotism became social trends,
these topics have been inevitably
connected with Boker DNA. Our
lifetime warranty, as well as our
high vertical range of manufacture,
have distinguished us since our
beginnings in 1869.
Products that outlast decades
and can be passed on to future
generations are welcome to look
at their age and past. These traces
of use do not diminish their value,
but are an expression of quality,
uniqueness and history.
The patina which our new chef's
knife series Boker Patina takes
on after only a short time, due to
contact with acidic food, does not
represent a quality defect at all.
On the contrary, the dark color,
which develops during oxidation
through contact with a combination
of cut goods and water, serves as a
protective layer and thus increases
the resistance against external
influences.
The fine structure of the carbon
steel O1, in combination with the
particularly thinly ground blade,
guarantees excellent cutting
performance and superior cutting
properties.
Quality is not only in the materials
used, but also in the production
process. The forging in the Solingen
die and the further processing by
hand make each knife truly unique.
The composition of the Boker Patina
series is completed by the use of
brass rivets and an extraordinary
handle, crafted of stabilized,
solid birch wood. This exclusive,
handpicked handle material boasts
a lively, flame-like grain, similar
to some of the highest quality root
woods available.
The Boker Patina series in the classic
three-rivet design consists of three
models with carbon steel blades,
as well as an exclusive chef's knife
made of hand forged Damascus.

CHESTNUT
BOKER CORE ANNIVERSARY 150
Naturally, we want to celebrate our 150th
anniversary with another special edition,
based on our successful line of kitchen
knives, Boker Core. In the 17th century, a
huge chestnut tree used to provide welcome
shade for the small tool manufactory in
Remscheid owned by the Boker family. It is
well known that this tree inspired the name
of the Boker Manufactory and the worldfamous
corporate logo.
Paying homage to the beginning of our
company's history 150 years ago, this
model features a handle made from smoked
chestnut wood. With its dark color and
subtle pattern, the material emphasizes
the elegant design and exclusive nature
of the knife. The die-forged blade is
made from O1 carbon steel, which offers
superior characteristics and excellent edge
retention - the perfect material for high
quality kitchen knives. Even in the age of
state-of-the-art powder metallurgical steel,
classic non-stainless carbon steel still has
its raison d'être.
Many users appreciate the traditional aspect
of carbon steel, as well as the combination
of edge retention and easy sharpening, never
quite achieved by stainless steel. For blades
requiring an extremely fine edge, e.g. razor
blades, carbon steel is still a matchless choice.
In the kitchen, it is truly a joy to work with
a fine edged carbon steel blade that offers
unsurpassed cutting properties. With a little
care, a blade made from carbon steel has the
same service life as a stainless blade. In the
kitchen, you simply have to rinse the blade
under hot running water after each use.
One completely natural property of the
material is the patina that will develop over
time, especially after cutting acidic food. It is
absolutely normal for the blade to take on a
grayish blue hue, which is not a flaw. On the
contrary, the patina (oxide layer) protects the
blade and makes it more resistant to outside
conditions. The patina often develops after
the first use and cannot be removed. For the
expert, it is a sure sign of high quality carbon
steel.
In addition, the blade features two-tone
etching with the historic Boker tree etched in
gold. Providing a strong contrast and elegant
appearance, the inscription is etched in deep
black. The elaborate blade etching process
according to Solingen tradition is reserved for
the finest, most exclusive knives, highlighting
the special status of this anniversary edition
in our product range.
All knives in this series are handcrafted in
Solingen and strictly limited to 150 pieces
worldwide. Each knife has an individual
serial number and comes with a certificate
of authenticity, packaged in an exclusive
anniversary box.

BOKER HANDMADE KITCHEN KNIVES
31
HANDMADE KITCHEN KNIVES
Since 1869, the famous knives with the
worldwide known Boker tree mark have
been handmade in the blade city of
Solingen. Depending on the series and
type of construction, up to 80 different
steps are necessary to finish a knife in our
manufactory. A chef's knife passes through
about ten internal departments.
Before the production of a new knife can be
started for the first time, the product idea
is digitally designed with the help of CAD
software. A simple hand sketch by our knife
designers and custom knifemakers often
forms the basis for an initial design drawing.
For forged knives, the raw material is then
cut into slit pieces, heated to red heat and
beaten into shape in a massive die with the
help of a two-ton ramrod. The blades of the
non-forged chef's knives are punched from
steel plates or cut out by laser or water jet
technology.
The intended purpose and the shape can
already be clearly seen from the blade
blanks. In the hardening shop, the blade
undergoes thermal treatment. The steel
must be as hard as possible for the required
cutting performance on the one hand, and
tough enough not to break during use on
the other. The blade is then ground with
appropriate cooling.
Bent on the grinding stand, the next
production step is carried out by genuine
Solingen craftsmanship. The back is ground,
the transition from blade to tang is cleaned
and finally, the unique Solingen blue plating
is applied. All Damascus steel knives are
then etched, so that the different layers of
steel can be distinguished, i.e. accentuated.
The handle department stores the wood of a
wide variety of trees, including many native
species, but also 5,000-year-old bog oak
and rare root woods. These are cut by our
master carpenter into so-called scantlings
on a circular table saw and then further
processed by hand on a milling machine.
The milled scantlings are then married to
the blades in the reiding mill. Depending on
the type of construction, this is done using
rivets, hollow rivets or extremely durable
adhesive joints.
The most impressive transformation of the
unfinished knife takes place in the buffing
department. All edges, protruding rivets,
protruding glue and scratches are skillfully
shaped in countless work steps on belts and
grinding wheels with different grit sizes.
Apart from the sharp cutting edge, the
knife gets its final shape aesthetically and
functionally.
Finally, the knives are meticulously checked
with an experienced eye in the final
inspection. Only absolutely faultless and
flawless specimens are then sharpened by
hand, marked with our hand proof, checked
again, then cleaned and packed.
Each design has its own tradition and
justification and at the same time different
advantages in production, handling and
application. One thing, however, unites
the Boker kitchen knives presented here
despite all the differences – they are all
exceptional, superior kitchen knives, which
you will not voluntarily put down. According
to your individual and personal preferences
regarding design, weight, ergonomics and
balance, you will certainly find what you are
looking for with us.

CPM-154
SATIN
OAK
BOKER PURE CPM
Danish design emerged as a style in the
middle of the 20th century, strongly
influenced by the ideas of the German
Bauhaus. This design movement developed
its own no-nonsense look characterized by
simple formalism, minimalism, clarity and
functionality, as well as by the use of
cutting edge industrial technology in the
realization of this design vocabulary. This is
the tradition of Danish designer and custom
knifemaker Jens Ansø, who designed the
kitchen knife series Boker Pure following
these exact design principles.
The knives have unique, classically simple
lines and offer excellent balance, handle
ergonomics and functionality. This
minimalistic design is highlighted with the
use of "Bergische Eiche," a regional oak
wood, for the handles. The pleasing pattern
of the elaborately finished oak wood is only
interrupted by three understated stainless
steel rivets, which are applied with great
care in a completely manual process.
In order to match the aesthetic quality of
the series with its technical properties, we
use the powder metallurgical steel CPM-154,
made by the American manufacturer Crucible
Industries. This steel is made by melting the
already excellent base steel 154-CM in order
to add more carbides.
CPM-154
The steel is then atomized in a vacuum and
quenched with a cold air jet. The resulting
steel powder is pressed and sintered below
melting temperature. This process makes
it possible to give the steel a much higher
carbide concentration than regular blade
steel; and the carbides give the steel
additional hardness and edge retention.
The bar graph (left) shows the edge retention
compared to an established, popular kitchen
knife steel, the chromium-molybdenumvanadium
steel X50CrMoV15, as well as
to the excellent 440C. The superior edge
retention of the 440C is far surpassed by the
powder metallurgical steel CPM-154, which
is a guarantee for a sharp knife that keeps
its edge for a very long time.
The Pure Series has truly set new limits and
is, with its puristic and functional design
concept and high end materials, the new eye
catcher in your kitchen.
What do Trier, Wiesbaden, Münster and
Lüneburg have in common?
Apart from
a historic city center, landmarks that are
famous beyond the borders of the region and
a long standing tradition as important trade
cities, they share another important aspect:
these cities are the homes of excellent cutlery
retailers, who have built their outstanding
reputation over many years by means of their
extensive selection and first rate expertise.
We harnessed their decades of experience,
excellent know-how and finely honed
everyday sense for the requirements and
needs of cooking and kitchen enthusiasts in
our product development of the Boker Core
series, combined with our almost 150 years of
experience as a Solingen Knife Manufactory.
The result is a product with dynamic lines,
excellent handling and breathtaking cutting
capability that earned the quality rating
"recommended by leading retailers."
The solid blade blank, made from a chromiummolybdenum-vanadium
alloy (X50CrMoV15),
perfectly suited for making premium
kitchen knives, is handforged with Solingen
craftsmanship, structurally optimized and
then hardened to 58 HRC. In order to give
the blade a longer service life and even finer
cut, our traditional hand grind is then highly
polished.
"I'm particularly impressed with the absolute
focus on functionality in the Boker Core
kitchen knife series. The design is very
pleasing – not too elaborate – and has a clean
and flush connection of the forged bolster
and the walnut handle, which also meets our
hygiene requirements."
Jörg Lamskemper
Head of the Craft Guild Messerschmiede-Innung
Schneidwerkzeugmechanikermeister
Carl Herlitzius GmbH & Co. KG, Münster
The forged bolster ensures a secure grip
and protects the user from possible injuries
in case of a slip. A special design feature
of all knives in this series is the gently
rounded spine. This makes the knife easy
and pleasant to handle in any position and
prevents unpleasant pressure on the hand
– even if strong pressure is applied to the
spine, while executing a rock chop, for
instance. The perfectly proportioned handles
round out the cohesive and appealing look,
and are available in finely grained walnut,
or durable synthetic, in our Core Professional
Series.
"Domestic wood types like the walnut used
in this series are becoming more and more
popular and can be found in many trendy
kitchen accessories. We support the use of
local materials and products that are still made
BOKER SAGA
BLADE MATERIAL DESIGNED BY HARDNESS BLADE FINISH HANDLE MATERIAL HANDMADE IN LIFETIME WARRANTY
440 C 58 HRC STONEWASH GRENADILL
THE FORM — SCANDINAVIAN DESIGN
The substance is nothing if its superior
potential is not used in the appropriate form.
Scandinavians are known for a straightforward,
clear and, above all, highly functional design.
The custom principle of "form follows function"
is consistently implemented in Scandinavian
design. And our partner, Danish knifemaker and
designer Jesper Voxnæs, has been working hard
at this for more than 20 years.
Our decades-long experience in manufacturing
outdoor knives and the creativity of knifemaker
Jesper Voxnæs combine to present the concept
and design of the Saga series, setting a new
standard in cutting and ergonomics. The
transfer of the design into the culinary sector
guarantees that working with the Saga has
become a unique event - the Boker Saga chef's
knife was awarded the iF Product Design Award
in 2013.
THE SURFACE — SLICK AND
ROBUST
The finish is key. It crowns the knife both
aesthetically and functionally. For the Saga
G10 series, the optimized cutting performance
is not only guaranteed by the full flat grind
of the 440C blade, but also by the surface
finish, which is achieved in a specialized
grinding process, and is characterized by
outstanding gliding properties through the
cutting material, thus enhancing the already
superior cutting performance.
For the Saga Grenadill series we offer, for the
first time in the sector of kitchen cutlery, a
stonewash finish. This special finishing method
upgrades the existing cutting performance, as
well as providing extreme resistance against
scratches, with the micro structure of the
finish. This tried and true finish has been used
in outdoor sector for years.
The handle scales of the Boker Saga knife are
a typical feature of outdoor knives that you
ordinarily would not see on a kitchen knife.
Mankind's oldest tool was invented for
life in nature - we also perfected it for the
needs of our time.
Our Boker Saga series with G10
handles and satin finished
blades is also still available!
Matching the innovative and advanced Damascus
knife series from Boker, we developed an
innovative concept for a knife block, which
simultaneously holds and presents up to seven
kitchen knives. The block consists of seven
panels, made of wood, which contain strong
magnets. Six panels form a semi circle, and
a seventh panel in the center, all mounted on
a solid wooden base plate, allow a safe and
decorative storage of seven high quality kitchen
knives of all standard size. The annoying
"guessing and fishing" for the right knife will
never happen again. The innovative Boker wood
knife block provides for easy handling, simple
cleaning without any slots, and holds your
kitchen knives ready for use at all times. A real
eye-catcher for your kitchen. Made in Europe.
KNIFE SHARPENING
63
KNIFE SHARPENING
The knife is humankind's oldest tool.
The need for sharp blades is just as
old and still very pressing today.
According to a survey, more than 90%
of German households use dull knives.
Even though everybody uses knives in
the kitchen, the subject of sharpening
knives is still shrouded in mystery.
For many people, sharpening and
honing are unfamiliar territory - skills
ascribed only to an elite circle of select
specialists who use secret methods
to make dull knives sharp again; it is
almost like magic.
However, there's really no wizardry
involved. If you find the method that
is right for you, you can restore the
edge of your own knives to exquisite
sharpness without a problem. One
more thing about manual sharpening
- there is an old adage saying that
things done quickly are not worth
much. If something is worth doing, it
is worth doing slowly. A good manual
sharpening process always takes a little
more time. A manual knife sharpener
who is primarily advertising his high
speed will never be able to offer the
desired result that can be achieved
with the methods described below.
Today, machine sharpening has become
a good, practical alternative. A vast
variety of home sharpening tools are
available, but our experience has
shown that machines with sharpening
belts achieve a far superior quality of
the finished product than machines
working with grinding wheels.
We hope that our overview on the
following pages will take some of
the "mystery" out of the subject of
sharpening knives and motivate you to
take a closer look at this practical and
useful skill.

WHETSTONES
SHARPENING
Of course, modern technology is catching up
with the subject of sharpening, but many of the
"experts" on this subject are traditionalists. And
that usually means: you use stones.
Such stones can be very different in nature; they
can be natural stones, synthetically produced, or
even hybrids. Stones are generally not used dry.
Depending on the stone, you need water (such as
Japanese water stones, which need to be watered,
or the Belgian Chunks, which only moisturizes
the surface), or oil, as in the centuries-proven
Arkansas stones.
While the oil in the oil stone only has the task
of ensuring the sliding on the stone and wash
away worn steel particles from the stone, the
water forms a grinding sludge, especially in the
Japanese water stones, which is instrumental in
sharpening.
Especially for very fine cutting, the highest
qualities of the Arkansas oil stones have
tremendous potential, but here as well, it's
generally a matter of personal preference.
There are different methods of sharpening with
the bench stone - some prefer a circular motion
or "8" trajectory with the edge (i.e. with the
spine of the blade ahead), sharpening one side
of the blade until a burr emerges and then
changing sides. In particular, in the case of the
fine print, the respective mutual pull against the
cutting edge (i.e. with the cutting edge ahead) is
a popular method. And as so often in life, there
is not one correct method here - trying out and
finding the personally preferred method is the
way to go.
When sharpening, it is essential to maintain the
correct angle. When sharpening on the stone, on
the one hand, it has to be determined correctly and,
on the other hand, to be constantly maintained
during the entire sharpening process, which of
course requires some practice and experience.
If you appreciate the traditional method but are
open to more modern materials, you can of course
also consider ceramic or diamond coated bench
stones. While the handling is identical to water
or oil stones, it can usually be dispensed with oil
or water, and the wide range of grits also offers
all options.
It is important that after creating a burr, depending
on the grinding method, it is removed cleanly.
For this purpose, a leather strop will do, which,
possibly also treated with abrasive paste, represent
the final step and the cutting edge "meets the
finishing touch."
The finely tapered edge that can bend when
coming in contact with a bone or a hard cutting
surface is straightened with a sharpening steel.
The knife is carefully placed on the steel and
pulled across on alternating sides with light
pressure and with the spine first (important!).
This straightens the bent edge and refreshes the
knife's cutting power.
The steel should not be confused with its similar
half-brother, the rod sharpener. Though they
look very similar, the difference is that the rod
sharpener is made with abrasive materials, such
as ceramic, synthetic ruby or diamond-coated
steel. Since these rods are used for sharpening,
they are also handled differently.
Perfect for quick touch-up sharpening, the
sharpener is used by pulling the knife along
the rod, edge first, until the desired level of
sharpness is reached. Unlike the steel, the rod
sharpener does take material off the edge; this
is a true sharpening process. You need to know
that neither of the two tools is suitable for
replacing the function of the other.
This sharpener, made of synthetic ruby, is 20 times harder than hardened steel (20,000
Knoop hardness, which is roughly a 200 hardness in Rockwell units)! The most
unusual aspect of this sharpener is the high efficiency (taking less time for sharpening),
in combination with an extraordinarily fine edge, allowing superior edge retention. In
addition, this sharpener will last longer than a diamond sharpener, as it is not a coated
instrument but one of bulk material. Can be used either wet or dry, and can be simply
cleaned with a dish sponge. Length: 8.00".
SABRAGE
The tradition of opening a Champagne bottle
with a saber was born in the Napoleonic
era. The "sabrage" with the Briquet saber
was founded in 1812 by the general himself
after winning a battle. This unique custom
has survived to this day, and not only in
France. It is a special highlight at any festive
occasion. When done correctly, it generally
works without issue. After the wire basket is
removed from the cork, one drives the blade
of the saber along the bottleneck and onto the
thickening of the neck below the bottle head.
The whole bottle head comes off with a bang
and the Champagne flows out. Any resulting
glass fragments fly forward, propelled by the
pressure. The torn off bottle head with the
cork will be labeled with the date and will
then serve as a reminder of the celebration or
as a talisman.

CURRENT RESIDENT -or-
Cooking with friends and family is becoming more
and more popular. In the kitchen or outdoors,
cooking and eating together is a defining moment
of community. The compact, shortened kitchen
knives SanYouGo and ChefYouGo by Boker Plus
are perfect for use outside of your own kitchen.
Jesper Voxnæs reduced the classic knife formats
to the essentials, shortening the handles in
particular. The blades, made from high quality
440C, are also noticeably shorter compared to
classic kitchen knives. The SanYouGo was made
from the essence of a Santoku, while the classic
chef's knife was the source of inspiration for the
ChefYouGo. The blades of these two extremely
compact and flexible models are finely satined,
while the scales consist of black G10 with a red
fiber layer. Leather sheath included.
1 BOKER PLUS CHEFYOUGO
Compared to the SanYouGo, the blade of this
model is a little longer. In order to keep the
right balance, the dimensions of the handle are
slightly more generous as well - which doesn't
at all diminish the compact and flexible qualities
of this concept! Blade length: 4.50". Overall
length: 7.50". Weight: 4.1 oz.
2 BOKER PLUS SANYOUGO
The classic Santoku grip, in which thumb and
index finger are placed quite far out on the
blade, is perfect for the short handle that curves
into the palm and is held by the middle and
ring finger. This concept provides outstanding
cutting control! Blade length: 3.38". Overall
length: 5.62". Weight: 2.5 oz.
