ADVERTISING FEATURE the eastbury hotel & spa Passionate about all things local, we speak with Matthew Street, Executive Chef with ‘Seasons’ Restaurant, at The Eastbury.... Matthew has been leading The Seasons kitchen and a team of seven for twelve years now. His love of cooking stems from his childhood growing up in a home where food, friends and entertaining were a way of life, full of flavours and fun and Sunday night homework sessions were a little side-tracked by Rick Stein on TV. For Matthew the definition of good food is “flavoursome, fresh, connective” and most importantly local. In the kitchen, he tries to use as much as he can from the natural surroundings and relies on a trusty list of local suppliers who are as passionate about food as he is. Particularly formative experiences were being a finalist in the 2009 Master Chef – The Professionals and as a 2009 Roux Scholarship Finalist. Matthew describes his cooking style as “imaginative and fun with a hint of nostalgia” and his inspiration most often stemming from the produce itself. Along with Sous Chef Ashley and the rest of the team they love to work with flavour combinations and fresh seasonal Dorset produce. His perfect supper? “It would probably have to be some type of charcuterie, a few cheeses, pickles, olives, some amazing bread and a few cold drinks.” 1) The name of the restaurant, Seasons, certainly gives an impression of the style of food – is seasonal sourcing and food provenance important to you? Choosing the best produce is where it all starts – by keeping the menu seasonal it’s a good way of being innovative. “The definition of good food is ‘flavoursome, fresh, connective’ and most importantly local...” 2) You are a local chef – what do you love about the West Country and what inspires you – there are certainly some amazing local producers? We are blessed in the West Country, there are hundreds of Great Taste Award Winners and Artisan Producers making their own unique produce. I take a lot of inspiration from the hedge rows and our vegetable garden at the hotel. We have an amazing gardener called Tina who I work closely with. 3) You have had a decorated career so far, as a finalist on MasterChef – The Professionals and as a 2009 Roux Scholarship Finalist – what did those experiences teach you and what are your ambitions for Seasons? It gave me a lot more confidence. Cooking in your kitchen versus in front of an audience are two different things. It’s good to be pushed out of your comfort zone. We achieved some great accolades last year however, my teams goal this year is to gain Three Rosettes. 4) When you’re not in the restaurant, how do you like to spend your time? I love cooking outdoors in the garden. Making pizza and sourdough is my new hobby.
