It feels like an age since our last issue 

of Cooper’s Choice landed on your 

doorsteps and inboxes, but it’s great to 

be back! On behalf of our entire team, 

we’d firstly like to say a huge thank you 

for all your support over these last few 

months. 

Like many of you, we are a family owned 

business, and it’s been a challenging 

time but we are navigating our way 

through this and are looking forward to 

whatever the future holds. 

We fully appreciate that it has been an 

incredibly tough and uncertain time all 

round, but it’s great to see our industry 

slowly returning to pre-pandemic levels. 

Week on week we are seeing trade 

figures increase so the sector looks 

likely to return to normal sooner than 

we may have thought. We want to give 

you the utmost reassurance that Dayla 

continues to be there, to in turn support

As you may have read in our last edition 

of Cooper’s Choice way back in March, 

Dayla have been around for well over 

a century and throughout those years 

we’ve seen some huge changes in our 

industry but nothing quite like what 

we’ve experienced these last 6 months 

or so. It’s been a tough time for all of us 

but there’s nothing like a challenge to 

reignite your passion and drive towards 

making your business a success. Think 

of this as a fresh start and a way to push 

forward new ideas. 

The impact of Coronavirus is a huge 

challenge for our trade, however, there 

is strength in the relationships we have 

built over many years of working 

together. At the heart of Dayla is a team 

of dedicated and committed staff who 

are all here to help you rebuild and 

flourish. We have experts across the 

business in all areas, whether that be 

Craft Beer, Spirits, Wine, Soft Drinks 

and more. We can help you grow new 

categories and with the support of our 

many brand partnerships, we can deliver 

a huge array of the leading international

Since the government allowed the On- 

Trade to reopen its doors, it’s been of 

huge importance to instill confidence 

and trust in your customers by ensuring 

all guidelines are followed and that any 

advice given is reacted and adhered 

to swiftly. With that in mind, here are 

some essential tips and tricks for going 

forward in this new landscape:

that they are comfortable in 

themselves, as well as keeping your

• Some colleagues might have been 

struggling with the lockdown and 

finding the adjustment back to 

normality somewhat difficult.

• To inspire confidence and trust in 

your customers, keep them updated 

in a reassuring tone as to what 

measures you are taking via social 

media. 

• Clearly display signage in your outlet 

which details all new systems and 

procedures for social distancing. 

• Ensure your staff are seen to be 

following all guidelines and are 

regularly washing hands, cleaning 

tables, bar areas etc. 

• Remove tables to allow more space 

between them and remove bar stools 

to reduce gatherings at the bar. 

• Position hand sanitisers on the bar 

and areas of high footfall. 

• Consider appointing one member 

of staff to manage the door and those 

entering your outlet. 

• Download an ordering app to enable 

your customers to order from their 

table, therefore reducing the number 

of people walking around freely. 

• Go cashless and sanitise card 

machines regularly.

Lager Is For Life, 

Not Just For Oktoberfest.

Lager is for life; not just for 

Oktoberfest. 

But, we all love an excuse to sink copious 

amounts of crisp, golden nectar while 

jigging along to some of the finest 

oompah music, chowing down on 

some of the Bavaria’s best gastronomic 

delights (think Schweinebraten, Würstl 

and Brezen) So, let us take you on a 

small trip through some of our very own 

favourite German beers available all year 

round at Dayla to help you get in the 

mood for the festivities. Hold on to your 

dirndls and lederhosens, respectfully. 

Firstly, a little background on 

Oktoberfest. It actually began as a 

wedding celebration between Bavaria’s 

Crown Prince Ludwig and Princess 

Therese of Saxony-Hildburghausen 

on Oct. 12, 1810. The wedding was, of 

course, celebrated with multiple days of 

drinking and feasting, with a bit of horse 

racing thrown in for good measure. The 

celebration became an annual evet (God, 

I love a 210-year post-wedding bender) 

and is now celebrated all over the world, 

however the epicentre of the boozy 

merrymaking remains in Munich. It is 

the World’s largest Volkfest (generally 

a beer/ wine festival paired with a 

travelling funfair) and runs for about 

16-18 days from mid-to late September 

into October. It is estimated that more 

than 6 million people from around the 

World attend the event and you can 

expect over 7.7 Million litres of beer to 

be consumed (I make that to be around 

about 13,686,974 pints!) 

Traditionally, at the Munich festival 

only beers brewed within the walls 

of Munich and beers that conform to 

the Reinheitsgebot, which is a purity 

law that dates back to the Roman 

Empire, are allowed to be served. The 

Reinheitsgebot law states that only beer 

containing hops, barley, water and yeast 

can stand up to the stringent purity laws. 

No adjuncts; no additives; only those 4 

ingredients. 

We are using Oktoberfest as an 

opportunity to shine a light on all the 

things we love about lager. It’s way more 

than cold, fizzy liquid. You can enjoy 

styles that plunge you to the depths of 

the darkest, smokiest malts and then be 

lifted to the dizzyingly heights of clean, 

crisp refreshment.

We know that 2020 has been a, shall we say, bizarre year. And we know that the idea of clambering 

round a long bench in large numbers, dancing on the tables and just enjoying festivities and bratwurst in 

large numbers seems a lifetime a way, but we wanted to collate a small list of beers to help you celebrate 

Oktoberfest in your own way. Now, it took some serious consideration and certainly hours of taste testing 

and deliberating (ahh, I love this job) but we have created our Top 7 favourite Lagers available all year 

round at Dayla. There’s a lovely little mix of fridge-filling exquisiteness and some juggernauts on keg 

which you can fill your boots, and steins with. Let’s get to it; 

Our Top 7 German Lagers 

1. Augustiner Helles 5.2% · 20 x 500ml £39.99 

For us, Augustiner comes storming in at number 1 on this list with the same aplomb as an oompah band 

marching though the beer hall. We were in complete agreement when conducting this list that Augustiner 

Helles is indeed our favourite? Dare I say, ever lager?... yes. Hands down. No doubt. Subtle character from 

the pale malts allows this Helles, which means pale, or bright in German, to shine. It’s crisp, it’s light and 

has ever so ultra-fine notes of citrus. 

2. Löwenbräu 5.0% · 50 Litre Keg £129.99 

A refreshing and mildly tart beer with a history traced back to Munich in 1383. So, if you’re talking brewing 

pedigree, you’ll find it with Löwenbräu. The best raw ingredients, in line with the Reinheitsgebot Purity Laws, 

make this a true Bavarian lager drinking experience, with it being served been served at every Oktoberfest in 

Munich since 1810. 

3. Ayinger 4.9% · 20 x 500ml £34.99 

Ayinger Lager Hell, is actually classic Bavarian drinking heaven. Together with wheat beer this Muenchener 

Hell style is the most famous beer style in the Bavarian South. Crisp, smooth and mellow, you can expect 

a light malt flavour and 4.9% ABV.

people visit Oktoberfest and 

drink over 6 million litres of beer 

4. Schlenkerla Rauchbier Marzen 5.1% · 20 x 500ml £39.00 

First mentioned in 1405, the historical Brewery Tavern Schlenkerla can be found in the middle of Bamberg, Bavaria, 

directly beneath the mighty cathedral. If you think the Weizen is smoky then this is smoky and his bandit. A legendary 

dark and aromatic German beer which achieves its smoky flavour by exposing the malt to intense, aromatic smoke 

from burning beech-wood logs. 

5. Fruh Kolsch 4.8% · 20 x 500ml £35.49 

Fruh have been brewing their very unusual Kolsch beer for over 100 years in the shadow of Cologne cathedral. Kolsch 

is a top-fermented beer – using an ale yeast rather than a lager – but is then lagered at very low temperatures like a 

pilsner or a helles. A dangerously drinkable beer with an unsurpassed balance of malt and soft delicate hops. Lemony 

pale gold in colour with a good lasting white head, the hoppy, dry finish is from using Hallertau and Tettnang 

hops. Taste is very clean, a result unlike normal ales, of cold conditioning. Fresh, with just a touch of bitter hops. 

This is probably the closest to knowing Augustiner Helles off of top spot in our hearts. 

6. Flensburger Pilsener 4.0% · 50 Litre Keg £122.00 / 24 x 330ml £32.00 

A classic from Germany’s most northern brewery, Flensburger. Unmistakable in character and freshness, the Pilsner’s 

full flavoured aroma and carefully selected hops create a great taste experience. The brewery is still operating its own 

well, supplied by an underground vein of melting Ice Age water from Scandinavia – so you can expect refreshment of 

epic proportions. 

7. Krombacher Pils 4.8% · 50 Litre Keg £129.99 / 24 x 330ml £28.00

Quality: 

· To gain the most profitability, the 

quality of your casks should be your 

priority. Make sure they are kept in 

a temperature controlled 

environment between 11 and 13°C. 

· Clean your lines at least once 

every 7 days. This is imperative due 

to potential yeast build-up.

drink cask, choose to do so because 

they trust the quality at your venue.

It takes an inquisitive, questing spirit to produce the most remarkable

familiar into terra incognita. In time, those travels brought him, to the

If the on-trade were a fighter, it would be Mike Tyson, one of the best boxers to have ever 

graced the ring. Right now though it feels like 2002 and we’ve been knocked out by the 

legend that is Lennox Lewis. Tyson though, is one of only 5 other fighters to ever regain 

a world championship after losing it, he’s not called “Iron Mike” for nothing! 

So with that comeback in mind I hope my 4 hit wine combo will help you as you step back 

into the ring...... 

The Jab · Pricing it right 

Many lists I see on my travels its cheaper to buy a large glass that the bottle, that’s crazy! 

With customers in short supply everyone needs to maximise the spend per head and 

incentivising bottle purchases is the way to do this. Have a range of price points too. 

The Cross · Single Serve bottles 

The less handling the better right now, so consider single serve wines. But don’t write 

them off as low-quality plonk, you can get the likes of Argentine Malbec or Marlborough 

Sauvignon so your offering can be premium.
