Somepeople like to add a slice of guava paste totheir aborrajados, which pushes themtowards the dessert category.Ingredients• 2 ripe (black and yellow) plantains• 1/2 teaspoon of baking soda• 1/2 cup grated cheese• 1/2 teaspoon of salt (farmer cheese,Monterey Jack, or mozzarella)• 1 to 2 tablespoons of milk• 2 large eggsSteps to Make ItPreheat several inches of oil to 360 F.Slice the ends off of the plantains, thenslice through the peel lengthwise severaltimes to help remove the peel. Slice theplantains crosswise into 1 1/2 inch thickpieces. Fry the plantain slices in the oiluntil golden brown, about 4 minutes. Drainthe plantain pieces on paper towels. Whencool enough to handle, place each slicebetween two pieces of wax paper, and usethe flat bottom of a glass ( or any other flatitem) to flatten the plantain to about 1/4inch thickness.Sandwich 1 to 2 tablespoons of gratedcheese between 2 slices of plantain,pressing the plantain together around theedges to seal in the cheese. Repeat withremaining plantain slices. Whisk the flour,sugar, baking soda and salt together. Stirin the eggs, and add enough milk to makea thick batter. Stir until well mixed. Dip theplantain "sandwiches" into the batter tocoat them, then return them to the oil to fryin batches, until golden brown and crispyon the outside (about 4 minutes). Drain onpaper towels and serve warm. Enjoy!• 6 cups of vegetable oil, for frying• 4 tablespoons of flour• 2 tablespoons of sugar
