GEORGE&
DRAGON
wentworth’s traditional family pub
myth busting
With James Ward at the Grape Kitchen
There are a lot of myths when it comes to wine
- and I’ve heard them all.
Sometimes, these myths can be
taken as facts and cloud someone’s
judgement when choosing their next
wine. Over the next few issues, I want
to take you through my favourite
myths, starting with…
“All wines get better
with age”
This is the most common
misconception with wine. Although
it is true that some wines get better
with age, not all wines do. Wines that
are good for ageing typically are:
• High in alcohol (14%+)
• High in tannin
• High in acidity
• Aged in oak and on lees
• Gone through malolactic
fermentation
These factors help
a wine develop new
characteristics while it is
ageing. Wines that typically
have these characteristics
are full-bodied reds like
Reserva wines from Spain
or Cabernet Sauvignon
based Bordeauxs.
Bodegas Protos 2014
Reserva Ribera Del
Duero (£20.95) is a great
example of this.
White wines can
be aged as well,
however these can be
slightly trickier. As a
general rule, well-made
Chardonnay from
areas like Burgundy
in France, Napa in
California, and Yarra
Valley & Margaret River
in Australia, such as
Xanadu Chardonnay
(£16.50) are great for
ageing.
There are also some wines that
are meant to be drunk young. Vinho
Verde is a great example of this.
This is a wine that is
typically a field blend of
grapes. It’s fermented
in stainless steel and
released young without
any lees ageing or time
in oak. Villa Benizi
Pinot Grigio (£7.15)
from Venezie in Italy is
also a good example.
These wines tend to be
simple, refreshing and
slightly lower in alcohol.
Perfect to quaff while
youthful - the wine, not
the person.
