Pumpkin Bread<br />
A cozy fall recipe from our Assistant Marketing Manager, Hanna.<br />
Ingredients: 2.<br />
⅓ cup melted coconut oil (or extravirgin<br />
olive oil)<br />
½ cup honey or maple syrup<br />
2 eggs<br />
1 cup pumpkin puree<br />
¼ cup milk of choice or water<br />
1 ½ tsp pumpkin spice blend<br />
1 tsp baking soda<br />
1 tsp vanilla extract<br />
½ tsp salt<br />
1 ¾ cup white whole wheat flour<br />
(or regular flour)<br />
Optional mix ins like chocolate<br />
chips, walnuts, pecans<br />
Optional: cinnamon to sprinkle<br />
on top<br />
Instructions<br />
1. Preheat oven to 325 degrees Fahrenheit<br />

and grease a 9X5 inch loaf bread pan<br />
2. In a large bowl, beat the oil and honey<br />
together with a whisk.<br />
3. Add the eggs and whisk until blended.<br />
