COVID UPDATE<br />

<strong>Cambridge</strong> Retirement Living continues to remain vigilant in our<br />

pursuit of the health and safety of our staff and our residents in the<br />

face of COVID-19 and its variants.<br />

Under the guidance of the PA Department of Human Services, and<br />

the Centers for Medicare and Medicaid services masks are now to be<br />

worn only when an outbreak is present.<br />

While masks are optional, we also ask that any visitors experiencing<br />

symptoms of illness mask for the safety of our residents and staff.<br />

We are so thankful for the kindness of our residents and their families<br />

as we have broached new ways to reunite everyone as safely as possible.<br />

We so enjoyed our summertime fun and look forward to sharing<br />

autumnal memories with you soon.<br />

We have missed you deeply, and we know our residents are grateful<br />

to hold you close!<br />

LETTER<br />

From the Editor<br />

a moment of tranquility<br />

Walking the dog one fall morning, we came<br />

upon a new cafe in our neighborhood.<br />

It looked very pleasant, exactly the way a<br />

cafe should look. Much care had been taken<br />

with lively plants and new paint so that<br />

the little cafe didn’t look anything like the<br />

abandoned pump station it had been.<br />

As we stood there, Pigeon and I -- Pigeon is<br />

my little dog’s name -- a gentle rain started<br />

up and raised our interest in the cafe to the<br />

level of action.<br />

Over the sodden leaves we stepped and<br />

crossed the wet street.<br />

The cafe had been finely done. The main<br />

wall was gone, and clear windows installed.<br />

You could see deep into the bright cafe. It<br />

looked warm and dry.<br />

Two women sat in the window. They<br />

resembled one another very closely except<br />

for a clear distance in age that I guessed<br />

to be twenty years or so. It was a simple<br />

mother-daughter date on a fall morning.<br />

Just above the window in saffron wooden<br />

letters installed on a navy-blue backing:<br />

Grizelda’s Cafe<br />

I thought that was a fantastic name for a cafe.<br />

Was it really someone’s name? I thought<br />

of a person -- half monster, half queen. (I<br />

learned later Grizelda was the nickname the<br />

female proprietor gave to the “person” she<br />

was before she had her morning coffee.)<br />

A sign on the door welcoming dogs<br />

encouraged the two of us, so we went in.<br />

The cafe was doing good business. There<br />

were two baristas steaming milk, slicing<br />

bread for the toaster, as a cashier worked<br />

hurriedly, dispensing change and moving<br />

baked goods from the glass display into<br />

brown paper sacks for customers to take<br />

away.<br />

“Good morning,” she said to me as we<br />

entered. “Your dog is very cute.”


She had the friendly, confident air of<br />

someone who was very busy but very<br />

capable in their position.<br />

Thank you, I said, and looked down at the<br />

little furry girl. Her tail was wagging -- the<br />

person ahead of us, a man in a raincoat, had<br />

ordered a bacon egg and cheese croissant<br />

and the smell of the seared bacon filled the<br />

air.<br />

I ordered two almond croissants and an<br />

earl gray tea for my wife. We watched the<br />

baristas work as we waited. They wore<br />

matching green bandanas and talked easily<br />

as steam shot into the air and milk poured<br />

into dark espresso. It was a good team for<br />

the new cafe.<br />

Order for Lance and Pigeon!<br />

We grabbed our brown paper sack, shared<br />

a quick word of thanks, and went out the<br />

door for home.<br />

All the kids in our small neighborhood<br />

attend an old public school and we walked<br />

along the school’s playground edge as we<br />

went. It had stopped raining completely.<br />

The day was beginning its sprint into late<br />

morning.<br />

All the time we were walking Pigeon kept<br />

bringing her nose to the bag of baked<br />

goods. Did my dog suddenly like almond<br />

croissants? Could a dog have almonds?<br />

Funny girl.<br />

We crossed the playground and the brick<br />

school beyond. I watched leaves float into<br />

the shallow pools beneath vacant tire<br />

swings. I had loved pushing my classmates<br />

on the tire swings and the tranquil scene<br />

made me tired and happy. I felt grateful for<br />

my life.<br />

It was good luck to have happy memories<br />

that far back. I knew enough to know not<br />

everyone did.<br />

Back at home I unwrapped the wax paper<br />

and brought out its contents on our dining<br />

room table. The little dog watched patiently<br />

with her rump on the floor and her nose in<br />

the air.<br />

“What’s this? Something for the little one?”<br />

Beside the croissants someone had put two<br />

strips of thick cut bacon. Boy, I thought, as I<br />

fed the bacon to the dog, we won’t be going<br />

to Starbucks again any time soon. I opened<br />

my phone and tapped in a five-star review<br />

for the new cafe on google.<br />

They had earned it.<br />

We hope you enjoy this issue of <strong>Cambridge</strong><br />

<strong>Times</strong>. This fall we were thinking of the<br />

simple moments, the tranquil moments, the<br />

moments of care and reflection.... We wish<br />

the same for you.<br />

STAFF<br />

Every issue we take pride in highlighting our newest staff<br />

members of <strong>Cambridge</strong> Retirement Living. From our Executive<br />

Directors, to our Activities Directors, our Maintenance Staff,<br />

and our excellent Chefs, each of these people make up the core<br />

of what it means to be <strong>Cambridge</strong>. Through these interviews,<br />

we hope to learn a little more about them and to share their<br />

amazing stories with you.<br />

JOELEEN JOHNSTON<br />

executive director of <strong>Cambridge</strong> Pointe<br />

Joeleen Johnson grew up on Conneaut Lake in<br />

Pennsylvania, only an hour and twenty minutes away<br />

from <strong>Cambridge</strong> Pointe where she now serves as the<br />

Executive Director.<br />

Joeleen is married to her husband<br />

Shawn, and together they have three<br />

boys, Kyle, Kaleb and Jonathan as well<br />

as two daughter-in-laws, Delilah and<br />

Caroline. Joeleen tells us that she’s blessed<br />

to have two grandchildren, Malaya (3<br />

years old) and Kam (2 years old), “they<br />

are the love of my life”.<br />

Besides being an amazing<br />

grandmother, Joeleen became a certified<br />

Nursing Assistant in 2005. She decided<br />

in 2011 to continue on for nursing and<br />

achieved her LPN. She longed to find<br />

a way to help others and decided that<br />

she enjoyed Personal Care as a Wellness<br />

Nurse! She later went on for her PCHA<br />

(Personal Home Care Administrator)<br />

License this past year!<br />

When she’s not at <strong>Cambridge</strong> or<br />

chasing her grandkids around, Joeleen loves to spend time<br />

with her whole family for Football Season (she’d like to<br />

shout out “Go Steelers!”), traveling, and relaxing at the<br />

beach.<br />

She tells us that her favorite thing about working<br />

with seniors is “the stories they tell when given the<br />

opportunity. The love and appreciation I feel from my<br />

residents makes any stressful day worth it.” We certainly<br />

appreciate you Joeleen, welcome to the team!<br />

JENIFER BURROWS<br />

executive director of <strong>Cambridge</strong> Warren<br />

Jenifer Burrows was born and raised<br />

in Warren, PA so she knows her community<br />

well as the Executive Director of <strong>Cambridge</strong><br />

Warren.<br />

Jenifer worked in retail until she<br />

was 16 years old, and after speaking with<br />

her sister, decided to become a medicine<br />

technician. She aided at a local assisted living<br />

facility and fell in love with the work there.<br />

Jenifer has a 25-year-old son, and<br />

in her spare time she soaks up as much<br />

outdoor time as possible. Be that riding her<br />

motorcycle, kayaking, or just relaxing in the<br />

sun.<br />

Her favorite thing about working with<br />

the senior community is their honesty and<br />

loyalty. She told us she loves “listening to<br />

their stories of their childhood, adulthood as<br />

well as their working experiences.” She loves<br />

how loyal they are to their caregivers, and<br />

how honest and empathetic they are.<br />

Thank you for sharing your story,<br />

Jenifer, we can’t wait to see what you do at<br />

<strong>Cambridge</strong>!<br />

Corry residents have Gone Fishin'!<br />

They love to fish from the comfort of<br />

their couches, AND there are no pesky<br />

mosquitos or bait to trouble with! Hope<br />

We all scream for ice cream, and we<br />

definitely smile for delicious root beer<br />

Oaks Hospice for our <strong>Cambridge</strong> <strong>Fall</strong>s<br />

our day. During breakfast, our Pointe<br />

ladies found a pack of hair bows, and<br />

everyone thought they were too cute<br />

(and funny!) to pass up!<br />

their summer-fun beach ball! We loved<br />

first Pointe veggie harvest of the year, a<br />

nice crisp green pepper! Well done, Mary,<br />

NOT SO SCARY DIY<br />

COMMUNITY ROCK SNAKE<br />

Several months ago, <strong>Cambridge</strong> Warren introduced the idea to us, to have their<br />

residents create a “Community Rock Snake”. After a little research, we fell in love<br />

with the idea, especially after seeing their creativity shine. Some neighborhoods<br />

even leave up a sign to let you know to participate. We thought this was the perfect,<br />

community focused, not-so-scary DIY to get you crafting this Halloween!<br />

Start by hunting for a head! Look<br />

for a rock that has a snake-head like<br />

shape to it, and get to painting! Then<br />

you and your neighbors can collect<br />

and paint as many rocks as you’d<br />

like to add to the body of the snake.<br />

Atascadero Lake Park has a Rock<br />

Snake that stretches over 1,200<br />

feet! It started during Covid as a<br />

way to safely bring the community<br />

together. They’re in line for the<br />

Guiness Book of World Record!<br />

It has been reported that a town in<br />

England is also aiming for the record<br />

and was nearing 3,000 rocks in June.<br />

Maybe your neighborhood can give<br />

it a try for the world record! Happy<br />

crafting, and Happy Halloween!<br />

Kenny<br />

RESIDENT FEATURE<br />

If there’s one thing to be said about this amazing gentleman,<br />

it’s that he’s a family man through and through. When<br />

asked about his favorite things, hobbies, and growing up,<br />

we were touched to find similar answers to each question.<br />

Kenny (Kenneth) was born January 25th,<br />

1963, at the Corry Memorial Hospital in Corry, PA.<br />

That’s only a two-minute drive to <strong>Cambridge</strong> Corry,<br />

where Kenny now resides. Kenny is the youngest of<br />

nine children in his incredible blended family. His<br />

siblings (in order of oldest to youngest) are Sandra,<br />

Andrew (Sonny), Phillip, Chris, Barbara, David,<br />

Susan, and Richard.<br />

Being the youngest, by the time Kenny was<br />

born at Corry Memorial Hospital, some of his siblings<br />

were married with children of their own. Even as a<br />

young man Kenny always loved when his sibling’s<br />

families would come to visit. Uncle Kenny would get<br />

to play with his nieces and nephews, who were closer<br />

to his age than his siblings!<br />

A favorite fact we learned from our interview<br />

was that Kenny has one nephew born just two days<br />

after him! Of course, he has many more that are<br />

younger than him as well. Imagine being able to call<br />

your peer, “Uncle!”.<br />

Kenny and his parents, Naomi and Kenneth<br />

Sr, moved quite a bit in his childhood, living near<br />

Corry and Spartansburg, but also all the way down<br />

the coast to various towns in Florida.<br />

“Uncle Kenny” started school at Sparta<br />

Merged and was soon a proud graduate of Corry Area<br />

High School in 1982. To this day Kenny remembers<br />

many of his teachers and classmates and so enjoys<br />

seeing them and catching up when he and his family<br />

are out and about in Corry.<br />

The amazing thing about family is that it<br />

encompasses so many people and communities. I’m<br />

sure if you asked his old classmates and teachers,<br />

they’d tell you that there’s no one like Kenny to make<br />

everyone feel remembered and loved and brought<br />

together into one big family.<br />

When we asked about Kenny’s favorite things,<br />

the Spartansburg Fair came up almost immediately.<br />

But what we found most special is that, while he loves<br />

anything connected to the fair, he especially loves all<br />

of his family and friends who he sees there! On top of<br />

that, Kenny has an eye for crafting and painting and<br />

often enters his designs at the fair with the result of<br />

many ribbons and prizes!<br />

Besides the fair Kenny also enjoys fishing,<br />

bingo, playing cards, corn hole, and has a particular<br />

interest in holiday decorations, especially Christmas.<br />

We were honored to have Kenny move to<br />

<strong>Cambridge</strong> Corry, February 17th, 2017, where he has<br />

been making every day brighter with his infectious<br />

smile. At <strong>Cambridge</strong> Corry, Kenny loves playing<br />

bingo, participating in crafts, painting, and coloring<br />

(much to our delight!). He also enjoys all of the parties<br />

and picnics. Not only for the food, decorations, music<br />

and dancing, but he once again highlighted the joy of<br />

having friends and family come to visit and share in<br />

the fun.<br />

Kenny’s ‘family’ extends to furry friends as<br />

well! As he’s thrilled whenever our pet friends and<br />

their humans come to visit.<br />

He loves calling and talking to family and<br />

friends who have moved away. He cherishes the<br />

cards, letters, and pictures from them. He loves<br />

the little things, like hot fudge sundaes with all the<br />

fixings. And running to hug family members at their<br />

big reunions. Anywhere and everywhere Kenny goes,<br />

you are sure to meet someone who knows him, loves<br />

him, and wants to stop to say hello.<br />

Pumpkin Bread<br />

A cozy fall recipe from our Assistant Marketing Manager, Hanna.<br />

Ingredients: 2.<br />

⅓ cup melted coconut oil (or extravirgin<br />

olive oil)<br />

½ cup honey or maple syrup<br />

2 eggs<br />

1 cup pumpkin puree<br />

¼ cup milk of choice or water<br />

1 ½ tsp pumpkin spice blend<br />

1 tsp baking soda<br />

1 tsp vanilla extract<br />

½ tsp salt<br />

1 ¾ cup white whole wheat flour<br />

(or regular flour)<br />

Optional mix ins like chocolate<br />

chips, walnuts, pecans<br />

Optional: cinnamon to sprinkle<br />

on top<br />

Instructions<br />

1. Preheat oven to 325 degrees Fahrenheit<br />

and grease a 9X5 inch loaf bread pan<br />

2. In a large bowl, beat the oil and honey<br />

together with a whisk.<br />

combined (lumps are okay!)<br />

mix ins, now is the time to gently<br />

fold them into your mixture.<br />

7. Pour the batter into your<br />

greased loaf pan and sprinkle<br />

lightly with cinnamon.<br />

8. Bake for 55-60 minutes or<br />

until a toothpick inserted into the<br />

center comes out clean. (Typically,<br />

with no mix ins 55 minutes is<br />

perfect, with mix-ins 60 minutes<br />

is perfect.)<br />

9. Once removed from the<br />

oven, let the bread cool in the loaf<br />

pan for 10 minutes, then carefully<br />

transfer to a cooling rack for 20<br />

minutes before slicing!<br />

Optional!: Make a cinnamon<br />

sugar butter to spread on top!<br />
